The only changes I make is to add some uncooked oatmeal to the chicken mix to make it less gooey and easier to roll.  I also bake the meatballs to cut down on the fat.

My son doesn't really like zucchini, but is a pasta fiend! So I saw this recipe and wanted to try zoodles and went out and bought an inexpensive spiralizer ($16.99 at Ollie's) I made this, told my son that they were zucchini noodles, and he tried it. He liked it so well, he even went back for seconds! WINNER WINNER!! Thanks :)

I tried this last night and it was a hit!!  I am a mother of eight with three grandchildren and this is a keeper.

DELISH!!! Family loved it, it was guick and easy to make! Meatballs were perfect! I will be making this again! The only setback is the recipe says it makes 4 servings, but for the 3 of us is was just barely enough for 1 serving each, so i will double.up the next time I make it.

We love this recipe! Meatballs are so easy to make and you can always buy ready made zucchini noodles. Delicious!

You NEED Garlic Butter Meatballs In Your Life

Plain spaghetti is smothered in a decadent butter garlic sauce, then topped with freshly grated parmesan and parsley. Simple and perfect garlic butter pasta.

Garlic Butter Pasta

oz (225 grams) pasta

butter (divided)

garlic (sliced)

salt

parmesan

parsley

Cook the pasta

In a medium-sized saucepot, boil water and salt it. Add your pasta, and cook according to the package instructions. When the pasta is cooked, reserve 1 cup of the pasta water and drain the pasta.

Sauté the garlic

In a skillet, melt butter on medium heat and saute the sliced garlic very lightly.

Toss in sauce

Add the hot pasta along with a part of the pasta water, and toss it using kitchen tongs until a sort of thick sauce is coating the pasta. Keep on tossing and add more pasta water if needed.

Add parmesan and herbs

Remove from heat, and add freshly grated parmesan cheese and chopped parsley leaves. Toss continuously and season with salt if needed. Serve warm with extra grated parmesan cheese and enjoy!

Garlic Butter Pasta with Crispy Prosciutto

prosciutto

Bucatini or spaghetti noodles

water (8 cups)

kosher salt (plus 1/4 teaspoon)

red pepper flakes (or to taste)

oregano

Parmesan cheese (finely grated)

Preheat oven to  400°F (200°C) and line a large baking sheet with parchment paper.

Lay the prosciutto strips onto the baking sheet with some space between each one. Bake for 8-12 minutes, or until the edges are brown.

Remove from the oven and cool completely, then break into pieces.

Crispy Prosciutto

While the prosciutto is cooking, Bring 8 cups of water to a boil in a large pan. Add the pasta and salt and stir well. Cook according to package directions for al dente pasta, stirring occasionally.

When pasta has reached al dente, tip the pan and scoop out 1 1/2 cups of the pasta water, then drain the rest of the water from the pasta. Do not rinse the pasta.

Melt butter in a large skillet or Dutch oven over medium heat. Add the garlic and crushed red pepper flakes and cook for 60 seconds.

Add the oregano and cook until the garlic browns. Be careful not to burn the garlic, or it will become bitter.

Add 1 cup of pasta water to the garlic butter. It will bubble. Stir and let it cook together for about a minute.

Add half of the pasta to the pan and toss to coat with the sauce. Then add the remaining pasta and toss together. If it seems dry, add the remaining reserved pasta water.

Sprinkle the Parmesan over the pasta and toss to distribute the Parmesan throughout the pasta.

Just before serving, toss the crispy prosciutto into the pasta. Alternatively, you can add the prosciutto on top of the pasta once it has been plated. Garnish with chopped parsley and additional Parmesan cheese, if desired.

Casarecce Pasta With Butter, Garlic and Lemon

casarecce pasta (or fusilli, penne,

vegan butter

kale, thick stems removed, chopped

salt and pepper

Boil

Cook the pasta in generously salted water according to package directions. Drain in a colander and set aside.

Saute

Return the pot to the stove over low to medium-low heat. Add the butter, 1 Tbsp olive oil, and garlic. Stirring frequently, cook the garlic for 3 to 4 minutes. Reduce heat if necessary so it doesn&#39;t brown.

Combine

Add red pepper flakes and kale, and increase heat to medium. Cook until the kale is dark green and wilted, about 2 minutes.

Season

Zest half of the lemon into the pot and add the pasta. Stir to combine. Slice and juice the lemon. Tasting as you go, add as much lemon juice, salt, pepper, and olive oil as you like. Serve hot. Garnish with vegan parmesan, if desired.

Garlic Butter Pasta with Chicken Bacon and Asparagus

chicken breast

tbsp Minerva Sea Salt Butter

fresh garlic (or more if they are small)

crispy crumbled bacon (about 4-6 slices)

Heat oil over medium high heat in a large skillet. Season the chicken breast on both sides with garlic powder, salt, and pepper.

Place the chicken flat in the skillet once hot, and cook on each side for about 2 minutes until lightly browned. Then reduce the heat to low and cover until the chicken is cooked through, about 4-6 minutes depending thickness. (165˚F internal temperature)

Remove from heat and chop into small bite sized pieces.

For the chicken

Press the garlic through a garlic press.

In the same skillet over low heat, add the Minerva Sea Salt Butter and garlic and stir occasionally, cooking for about 3-5 minutes. As you stir, scrape the bottom of the pan to release any bits cooked on from the chicken.

The butter should be melted and starting to bubble, and the garlic will soften and take on a dark brown color as the flavors from cooking the chicken release from the bottom of the pan.

Once the butter starts to bubble, add the crumbled bacon in and continue to cook for another 2-3 minutes, then remove from the heat.

To prepare the sauce

Prepare the asparagus by removing the woody stems, then cutting the remaining asparagus into 1 inch pieces.

Cook penne pasta per package directions. During the last 2-3 minutes of cooking, add the asparagus pieces to the boiling water. Then drain once done.

Add the pasta, asparagus, salt and parmesan cheese to the garlic butter sauce and toss to coat. Then stir in the chicken. Serve warm, topping with extra parmesan if desired!
