Grilled Garlic and Herb Chicken and Veggies

lbs boneless (skinless thin sliced chicken cutlets)

Delallo garlic and herb veggie marinade

kosher salt

lb asparagus (1 bunch, tough ends removed)

zucchini (sliced 1/4-inch thick)

yellow squash (sliced 1/4-inch thick)

red bell pepper

olive oil cooking spray

Shake marinade well. Season chicken with 1/2 teaspoon salt and 2 tablespoons of the veggie herb marinade at least 1 hour, or as long as overnight.

Marinate the veggies with the remaining marinade.

Heat a grill over medium-high, be sure grates are clean and well oiled to prevent sticking.

Put veggies on 1 large grill tray or 2 smaller trays (or cook in batches), season with 3/4 teaspoon salt and black pepper and cook, turning constantly until the edges are browned, about 8 minutes. Set aside on a platter.

Cook the chicken about 4 to 5 minutes on each side, until grill marks appear and the chicken is cooked though, transfer to a platter with the veggies and serve.

My favorite herbs are garlic, ginger, parsley and basil. I love using herbs on salmon or chicken. This recipe looks so good and easy. I want to try it today!

This recipe was soooo good!. They don't sell the marinade in my area, but I substituted a lemon and garlic marinade from my local grocer and it was fantastic! Thank you for providing a low calorie delicious meal!

Garlic Herb Chicken with Creamy Mash &#038; Roasted Carrots

boneless, skinless chicken breasts

olive oil

garlic,

thyme

rosemary

oregano

Salt and pepper

chicken broth

heavy cream

potatoes,

unsalted butter

milk

carrots,

honey

Fresh parsley, chopped (for garnish)

Preheat the oven to 400&deg;F (200&deg;C).

Season the chicken breasts with salt, pepper, and half of the minced garlic.

Heat 1 tablespoon olive oil in a large oven-safe skillet over medium-high heat. Add the chicken breasts and cook for 4-5 minutes on each side, until golden brown.

In a small bowl, mix the dried thyme, rosemary, and oregano.

Sprinkle the herb mixture over the chicken, and add the remaining garlic to the pan.

Pour in the chicken broth, then place the skillet in the oven. Roast for 15-20 minutes until the chicken is cooked through.

Meanwhile, boil the potatoes in a large pot of salted water until tender, about 15-20 minutes.

Drain the potatoes and return them to the pot. Add butter and milk; mash until creamy. Season with salt and pepper.

For the carrots, toss them in a mixture of olive oil, honey, salt, and pepper in a separate baking dish. Roast in the oven for 20-25 minutes until tender and caramelized.

Once the chicken is done, remove the skillet from the oven and transfer the chicken to a plate to rest.

Place the skillet over medium heat, stir in the heavy cream and simmer for 2 minutes, scraping any bits from the bottom of the pan for a sauce.

To serve, divide the creamy mashed potatoes and roasted carrots among four plates. Top with the garlic herb chicken, spooning the sauce over the top. Garnish with fresh parsley.
