Creamy orzo loaded with roasted garlic, soft &amp; juicy sausage and plenty of parmesan!

Garlic & Parmesan Sausage Orzo

Ground Sausage Meat ((see notes))

/ 875 milliliters Chicken Stock, (plus more if needed (make 5

/ 250 milliliters Heavy/Double Cream, (at room temp)

/ 120 milliliters Dry White Wine

2-3 tbsp finely diced Fresh Parsley

Olive Oil, (as needed)

Salt & Pepper, (as needed)

Slice the tip off the garlic bulb to expose the cloves and drizzle with oil. Wrap in foil then place in the oven at 180C/356F for 50-60mins, or until super soft, golden brown and caramelized. Leave to cool for a few mins, then squeeze out as much as you can, making sure the outer peel doesn&#39;t mix in. Sprinkle over a pinch of salt then mash with a fork to smooth out any lumpy parts.

Meanwhile, add a drizzle of oil to a large deep pan or pot over medium-high heat. Tear small chunks from the sausage meat and add to the pan (size of mini meatballs). Fry until deep golden with a nice crust (important to develop flavour). Pour in the wine and lower heat slightly to medium. Simmer until it mostly evaporates, using your wooden spoon to scrape off any flavour from the base of the pan.

Stir in orzo, then pour in stock and cream. Give it a good stir then bring it to a simmer. Turn the heat down slightly and simmer until the orzo is al dente and the sauce has thickened to a risotto-style consistency, stirring occasionally. Stir in parmesan, parsley and roasted garlic, then check for seasoning and adjust if desired. Stir in a splash of stock or water if you over-reduce the sauce.

Serve up with more parsley and/or parmesan if desired then tuck in and enjoy!

One Skillet Salmon with Lemon Orzo

salmon fillets

salt (divided)

tsp black pepper (divided)

tsp sweet paprika

garlic powder

olive oil

unsalted butter

yellow onion (finely chopped)

garlic

dry orzo pasta

thyme

chicken broth

baby spinach

juice from ½ lemon

Parmesan

black pepper (for servng)

chili flakes (for serving)

Get your prep done before you start cooking: Grate the Parmesan cheese, finely chop the onion and mince the garlic cloves. Pat the salmon fillets dry with a paper towel. Season both sides with garlic powder, sweet paprika and ½ teaspoon salt and pepper.

searing

Heat oil and butter over medium high in a large nonstick pan or skillet. Add salmon fillets and sear, 3-4 minutes per side. Remove from skillet and set aside.Reduce heat to medium, add garlic and onion. Cook until soft and fragrant for about 2 minutes. Stir in thyme and the remaining salt and pepper. Add orzo and toast for 1 minute.

Pour in broth and bring to a boil. To maintain a simmer, reduce the heat to medium-low. Cook uncovered while stirring occasionally to prevent the orzo from sticking, until almost al dente and most of the liquid is absorbed, about 8 minutes.

Add spinach, stir and simmer until wilted for about 2 minutes. Stir in lemon juice and Parmesan. Add more broth, if needed. Taste and adjust salt.

Return salmon to the skillet and simmer for 2-3 minutes, or until the salmon is heated through.

serving

Top with freshly ground black pepper and chili flakes. Enjoy!
