Recipe video above. Hands down, my favourite way to cook fresh prawns! Simple and fabulous, the 3 tips for top notch garlic prawns is to chop rather than use a mincer for the garlic (it splatters and burns on high heat), only marinate for 20 minutes and the splash of wine gives this a flavour edge as well as stopping the garlic from burning. Serves 2 as a main, 4 as a starter.

Garlic Prawns (Shrimp!)

garlic (, finely chopped (don't use crusher/mincer))

tbsp extra virgin olive oil ((separated))

tsp black pepper

tsp salt

olive oil

dry white wine ((Note 3))

lemon juice

tbsp parsley, finely chopped ((garnish))

lemon wedges

Marinade: Place the prawns, garlic, olive oil and pepper in bowl. Gently toss then set aside for 20 minutes.

Salt: Add salt into prawns just before cooking and toss.

Sear in batches: Heat oil and about 1/3 of the butter in a large heavy based fry pan over high heat. When the butter is melted, add half the prawns - don&#039;t crowd the pan.

Cook for 1 minute until light golden then turn with tongs. Cook 1 minute then remove onto a plate. Cook the remaining prawns also for 1 minute each side (you shouldn&#039;t need more oil).

Return first batch of prawns back into pan.

Add wine - it will sizzle and be steamy! Stir, scraping the bottom of the pan, until wine mostly evaporates - around 30 seconds.

Butter &amp; lemon: Scatter remaining butter across pan, add lemon juice. After butter melts, stir for 30 seconds, then remove from stove.

Garnish &amp; serve: Transfer to serving plate, sprinkle with parsley and serve with extra lemon wedges. Bread for mopping is essential - try this simple Crusty Artisan Bread!

Cooking

This 15min pasta can&#039;t get any easier. Healthy and packed full of flavour (that mouthwatering tang from the lemon juice!). Perfect weekday meal. Pair this with a quick crunchy salad and you&#039;re golden.

Easy garlic prawn pasta

300 g raw prawns (peeled, deveined (Note 1))

250 g dried spaghetti (or your favourite pasta)

parsley (roughly chopped)

juice of 1/2 lemon (about 1 tbsp)

salt & pepper

garlic (minced)

Cook pasta according to packet instructions. Ensure to season the water with salt. About 1 tbsp.

Whilst pasta is cooking, mix prawn marinade with prawns and set aside.

Once pasta is cooked to al dente, drain and reserve 1/2 cup of pasta cooking water.

Saute marinated prawns with 2 tbsp of olive oil on a large, non-stick pan on medium/high heat. Cook for 1 minute.

Squeeze in lemon juice, stir for 10 seconds then mix in cooked pasta and reserved pasta cooking water. Stir thoroughly for 1 minute. (Note 2)

By now, the pasta cooking water should have been mostly absorbed.

Turn heat off, mix in parsley and season with salt and pepper to taste. I like to go heavy on the pepper.

Serve immediately, with a wedge of lemon.

EASY GARLIC PRAWN PASTA

Garlic prawn (shrimp) pasta is one of the easiest, quickest kinds of pasta you can make. And it tastes so good! Save time by buying the already peeled, deveined prawns from the frozen section and you'll have dinner ready in 15 minutes!

15-minute Garlic Prawn Pasta

Arroz Negro

lb prawns, head on

squid

olive oil (extra virgin)

white onion, finely chopped

plum tomatoes, chopped

garlic cloves, finely chopped

tsp sweet paprika

saffron

Bomba or Calasparra rice

Wente Morning Fog Chardonnay

fish stock

parsley, chopped for serving

lemon,

To prepare the squid, remove wings from the squid and cut the bodies open down one side.  Cut them into slices about 1/4 inch thick.  Slice any large tentacles into bite size pieces.

Heat olive oil in a paella pan over medium heat and add the squid to the pan and saute for 30 seconds then remove them from the pan and set aside.

Add the onion and let it cook until fragrant and translucent, about 5 minutes.

Stir in the garlic and tomatoes and cook for a few minutes.  Add in the paprika and pinch of saffron and continue cooking on low heat until you have a soft, thick mixture, about 10-12 minutes.

Add the rice to the pan and let it coat in tomato mixture.

Pour the wine into the pan and let it simmer for 5 minutes.

Add the fish stock and give it a quick stir before adding in the squid ink. Season with salt to taste.

Bring the rice to a boil then reduce the heat to a gentle simmer.  Leave the rice to cook for another 20 minutes  Keep an eye on the mixture and stir occasionally to make sure the bottom of the pan is not burnt.  At this stage, you don&#x27;t want to stir frequently or you will disturb the socarrat base that has formed at the bottom of the pan. Add a tablespoon of water if it&#x27;s becoming too dry.  The texture of the rice should just be al dente.

Add the prawns and cook for another 5-7 minutes.  Add back the squid.

Remove the pan from heat and let it rest for 10 minutes.

When ready to serve, divide the rice among 4 serving plates.  Top with parsley and lemon wedge for serving.

Chilli garlic Chinese prawns is a simple yet full flavoured stir fry recipe that takes minutes to put together. Served with rice and sesame seeds and as much fresh chilli as you like, for that extra kick.

Chinese Prawns Recipe

250 g Prawns or shrimp

tbsp flour

tsp ground paprika

sesame oil

tbsp light soy sauce

tbsp honey

tbsp sweet chilli sauce

rice wine vinegar

tbsp garlic granules

red chilli pepper

spring onions

Sprinkle of sesame seeds

(optional)

Start by placing the raw prawns onto kitchen paper or dry, clean tea towel. Pat dry and remove any excess water. Next place the prawns into a small bowl and sprinkle over the flour and ground paprika. Mix well to fully coat the prawns.

Place a pan on a medium heat and add half a tbsp of sesame oil, when hot add the prawns and stir fry for 30 seconds or until just pink. Remove from the heat whilst the sauce is prepared.

In a small bowl mix together the soy sauce, honey, sesame oil, sweet chilli sauce, rice wine vinegar and garlic granules.

Return the pan to the heat and pour the Chinese sauce over the prawns. Bring to a simmer and cook for a further 2 minutes or until the sauce thickens.

Take the pan off the heat and stir in the chopped chilli and spring onions

Serve with rice and sprinkle over sesame seeds (Optional)

In a small bowl, combine soy sauce, cooking wine and brown sugar. Stir and set aside.

Heat oil in a frying pan. Add garlic and sauté over medium heat until it starts to brown.

Add prawns and sauce (from step 1). Stir for 1 minute.

Fry for 3-4 minutes on each side. When you are flipping the prawns halfway, add the water.
