Black Garlic Pappardelle Pasta Recipe

dry Pappardelle pasta ((see notes))

olive oil, (for the pasta and the pan)

Cook the pasta. Cook the pasta in a large pot of boiling, salted water until it&#039;s al dente. (Al dente means &quot;to the tooth.&quot; The pasta should be tender, but with a bite to it.) Drain the pasta, toss with a bit of olive oil, cover and set aside.

Prepare the black garlic. Peel all the black garlic and then roughly chop it, keeping it in relatively large chunks.

Make the sauce. Coat the bottom of a medium to large sauté pan with olive oil, and place it over medium heat. Add the shallots and cook until they are soft and beginning to brown, about 4 minutes. Add the black garlic and toss it with the shallots. Then add the wine, turn the heat to high, and let it reduce by about ⅓. Add the butter and swirl the pan around until it&#039;s melted into the wine. Season generously to taste with salt and pepper. (Here&#039;s how.)

Assemble. Add the cooked pasta to the pan with the sauce and very gently, toss everything together. (If the pan isn&#039;t big enough, pour everything into a large bowl to mix it.)

Adjust the seasonings and garnish. Season to taste again if necessary, sprinkle with the chopped chives (if desired), and serve.

Linguine with saffron, roasted garlic, herb butter and hazelnuts

fresh linguine (or whichever fresh long pasta you can buy)

Heat the oven to 200°C/180°C fan/gas 6. Rub the garlic bulb with oil and wrap in foil, then roast for 40 minutes or until completely soft. Scatter the hazelnuts over a baking tray and toast in the oven for the last 6-8 minutes of the garlic cooking time. Remove both and set aside to cool. When the garlic is cool enough to handle, squeeze out the soft flesh from each clove into a small bowl. It looks like a lot of garlic for two people, but it’s a mellow flavour. Roughly chop the hazelnuts.

Bring a large pan of salted water to the boil. Meanwhile, melt the butter in a frying pan with a glug of oil then, once melted, add the garlic and the saffron in its soaking water. Stir, then cook over a very low heat to allow the flavours to infuse. Turn the heat up to brown the butter ever so slightly, then remove from the heat and squeeze in the juice of half the lemon.

Cook the pasta in the boiling water for 2-3 minutes until al dente (with bite), then use tongs to transfer it to the butter pan – you want to bring a little of the cooking water with the pasta, so don’t drain in a colander. Put the frying pan back over a gentle heat and stir to coat the pasta in the butter. Add the herbs and season generously with salt and pepper, then taste and add the rest of the lemon juice if you want to. Divide between 2 bowls, scatter with the hazelnuts and serve sprinkled with grated pecorino.

Set the oven and prepare the pan. Preheat the oven to 350°F. Lightly coat the bottom and sides of a 12 x 4½ x 2½ inch bread pan with the 1 tablespoon of olive oil.

Make the batter. In a large mixing bowl, combine the flour, baking powder, baking soda, sugar and salt. Mix and then make a well in the center and set aside.In a medium-sized mixing bowl, gently whisk buttermilk, egg and garlic. Pour this mixture in the well in the dry ingredients and add the olive oil and herbs. Mix just until it&#39;s well everything is well blended.

Bake. Pour the batter into the oiled pan, drizzle the remaining 2 tablespoons of olive oil evenly on top, and bake in the preheated 350°F oven until the bread is set and slightly golden on top, about 45 minutes.

Cool. Let the bread cool in the pan for at least 10 minutes. Wait at least 20 minutes before slicing.
