Chill out with this simple gazpacho soup that is the perfect antidote to a hot summer's day.

Ajo blanco

rustic

garlic, crushed

(1 1/2 cups) whole blanched almonds

milliliters (1/3 cup) sherry vinegar (see note)

extra virgin olive oil

(1 cup) seedless green grapes, thinly sliced

(1/3 cup) slivered almonds, roasted

Layered Gazpacho    

(5 ml) gelatin

(15 ml) water

English cucumbers

(375 ml) tomato juice

(250 ml) cubed stale bread crumbs

red bell pepper,

tomato, diced

onion, diced

English cucumber

(30 ml) red wine vinegar

olive oil

garlic,

(1 ml) celery salt

Tabasco sauce,

(75 ml) 35% cream

In a bowl, sprinkle the gelatin over the water and let bloom for 5 minutes. 

Cut 60 ml (1/4 cup) of cucumber into small dice and the remaining cucumber into cubes. Set aside. 

In a blender, purée the cubed cucumber until smooth. Strain. You'll need 250 ml (1 cup) of cucumber juice. 

In a microwave or small saucepan, heat the gelatin with 60 ml (1/4 cup) of cucumber juice until it has completely dissolved. Add the remaining juice and the diced cucumber. Stir to combine. Season with salt and pepper. 

Spoon the jelly into the bottom of six 250 ml (1 cup) glasses. Cover and refrigerate for 6 hours or overnight.  

Cucumber Jelly

In a blender, purée all the ingredients, except for the cream, until smooth. Adjust the seasoning. Refrigerate for at least 1 hour.  

Gazpacho

In a bowl, whip the cream until stiff peaks form. Pour the gazpacho on the cucumber jelly and top with whipped cream. Season with pepper and garnish with fresh herbs of your choice (oregano, basil, chervil, etc..) Serve immediately.

Assembly

Toujours un hit en canicule chez moi. Excellent servi avec un bagel saumon fumé à la tombée de poireaux!!!!

Est-ce que cette recette peut être faite et montée la veille?

Déception pour moi et ma famille cette recette. Le seul point positif a été pour nous le look. Faut croire que les goûts ne sont pas les mêmes pour tous si je me base sur l`ensemble des commentaires.C`est une des rares recettes de Ricardo que je ne referai pas.

Très bonne recette ! Est-ce juste à moi que ça arrive mais ma gélatine ne prend jamais ?! J'ai même essayé en feuilles mais je ne sais pas quelle quantité utiliser.

Simple comme question : le concombre doit-il être pelé?

Cette recette de gaspacho est tout simplement délicieuse et sans arrière-goût comme, malheureusement,  d'autres recettes de cette merveilleuse soupe froide.  Sa présentation est aussi très originale.

Watermelon Gazpacho with Serrano Chiles and Mint is the perfect refreshing way to cool off on a hot summer day!

Watermelon Gazpacho

watermelon

tomatoes

mint (plus sprigs for garnish)

cucumber

red onion

serrano chiles (seeded if desired, minced)

red wine vinegar (or

Salt and black pepper (to taste)

Mint sprigs

Combine the 8 cups 1/2-inch watermelon cubes, the tomatoes and mint in a food processor or blender.  Process until smooth or somewhat smooth.  Transfer to a large bowl.

Add the 4 cups 1/4-inch diced watermelon, cucumber, red onion. chiles, olive oil and red wine vinegar.  Stir to combine.

Season to taste with salt and black pepper along with adjusting acidity with red wine vinegar if desired.

Serve garnished with mint sprigs.

A bit too spicy. Would start with just one pepper. Other than that it's so good!
