Heat 1 tablespoon of oil in a large pan over high heat. Add the steak, season with salt and pepper, and cook until browned, 5-6 minutes. Remove from the pan.

Heat the remaining tablespoon of oil in the same pan, then add the red onion and cook for about 5 minutes, until softened and browned. Add the tomato, garlic, and aji amarillo paste, and cook for another 5-7 minutes, until the tomatoes have released some of their juices, but are still intact.

Add the soy sauce and vinegar and stir to combine, let cook for 1 minute.

Add the steak, fries, and cilantro. Toss gently to coat the fries in the sauce.

In a small bowl, mix together the Parmesan cheese, Korean red pepper, sugar, and ramen seasoning.

Cut the potatoes into ribboned curls using the ribbon blade on a spiralizer. If you don’t have a spiralizer, insert a skewer into each potato and, working in a spiral motion, cut in the opposite direction you are turning the skewered potato, making a thin, even spiral all the way down the potato. A spiralizer is recommended.

Gather the potato curls together, then wrap each curl around a wooden skewer, spacing out the potato evenly. Set aside to dry for 5 minutes.

Heat the canola oil in a deep pot until it reaches 350ºF (180ºC).

Fry the potatoes until golden brown, 3-5 minutes, then drain on a paper towel-lined baking sheet.

While the tornado potatoes are still hot, season with salt and sprinkle with the cheese mixture.

Heat the oil in a large pan over medium-high heat, then add the red onion and cook for 5 minutes, until browned.

Add the tomato, serrano, and garlic. Stir well, cover, and cook for 5 minutes, until the tomatoes have softened.

Add the garam masala, turmeric, and cumin. Stir, reduce the heat to medium, and cook for another 10 minutes, or until the sauce clings to the potatoes and they soften slightly.

Stir in the lemon juice and cilantro, then add the fries and salt. Toss well to coat. Serve immediately.

Delicious German fried potatoes are always a hit. Soft on the inside and perfectly crispy on the outside, these golden brown potatoes go great as a flavorful side dish to a main meal. They serve with a few fried onions and/or classic sauces like ketchup!

German Fried Potatoes

potatoes (waxy (e.g. yellow potatoes))

(If you're uisng pre-boiled potatoes start with Step 2). Boil your potatoes in a pot on the stove with the skin on until the potatoes are tender. Then take the potatoes out of the pot and rinse them under cold water long enough so that they cool slightly and you can touch them without burning your hands.

Peel the potatoes and slice them. The slices should be thin, but no so thin that they break.

Heat 1 tablespoon of oil in a large pan and fry the chopped onion on medium heat until translucent and slightly browned. Take the onions back out of the pan and set them aside.

In the same pan, heat more oil (approx. 2 tablespoons) and add enough potato slices so that the bottom of the pan is covered. The slices should not overlap to allow them to become crispy! You'll most likely not be able to fit all of the potatoes in the pan so you'll have to fry them in several batches. You can also use more than one pan if you want to be done faster.

Fry the potato slices on medium heat for around 3-5 minutes until golden brown on the bottom. Then flip the slices and fry them on the other side until that side is golden brown as well. Take them out of the pan once both sides are golden brown. Add salt and pepper to taste.

Repeat the steps - and add more oil as needed - until you have used up all the potatoes. In the last batch, re-add the onions and fry them for a few seconds (they should not get too dark!). Then add your fried onions onto your fried potatoes and add more salt and/or pepper as needed.

Optional: Garnish with chopped chives before serving.

Authentic German style pan fried potatoes with smoked bacon and onions. For best results parboil the potatoes before frying. Garnish with fresh, finely chopped herbs.

While the potatoes are boiling cut the bacon in thin strips (or dice it) and thinly slice the onions. In a skillet over medium heat cook the bacon until crispy. Remove and drain over paper towel. In the rendered fat also over medium heat cook the onions until they begin to get crispy, then remove from the skillet and set aside.

While the bacon & onions are cooking check on the boiling potatoes.** When you can pierce them with a fork but they still have a bit of firmness to them pour out the hot water and run cold water over them.

As soon as the potatoes have cooled off...

As soon as the potatoes have cooled off enough to be comfortable to touch peel the skins (optional) and cut them into circles, semi-circles or dice them - your choice.

Pan fry the cut potatoes in two batches...

Pan fry the cut potatoes in two batches in the same skillet where you cooked the bacon and onions. Add a tablespoon of cooking oil per batch.*** Do not overcrowd the skillet so the potatoes can brown nicely. Once crispy on one side, flip them to brown them on the other until you are satisfied. 

Add the bacon, onions and your choice of...

Add the bacon, onions and your choice of finely chopped fresh herb to the crispy potatoes and mix them together. Season with salt and pepper and serve!
