Easy homemade Spaetzle made with flour, eggs and milk and seasoned with nutmeg. The perfect accompaniment to other German meat and side dishes!

In a medium to large bowl mix together flour, salt and nutmeg.

In a separate bowl, whisk the room temperature eggs, one at a time until they are well beaten together. Add the milk to the eggs and blend together.  Make a well in the middle of the flour mixture and pour egg mixture into it.

Mix until a soft dough forms. The dough should be just thicker than batter; spoon-able but not runny/pourable. Cover bowl with a hand towel and allow dough to rest for about 10 min.

Bring 2-3 quarts of lightly salted water to a boil. Scoop about half of the batter into a Spatezle tool, or use the large holes of a grater, colander or steamer basket and use a spatula to push the batter through the holes, into the boiling water.

Give the dumplings a gentle stir. Cook for 2-3 minutes, until they float to the surface.  Use a slotted spoon to transfer dumplings into a colander to drain and then transfer them to a bowl. Repeat process with remainder of dough. This recipe will cook in two batches.

Toss with butter and serve warm, OR for a final authentic step, sauté the cooked little dumplings on the stove top in a hot large fry pan with melted butter, flipping just once, until crisp on both sides.

Cooked Spaetzle reheat very well and will keep for several days, stored in a container in the refrigerator.

These homemade German Spaetzle are authentic and very easy to make. Made from a simple flour-egg batter, these classic little dumplings make the perfect side to saucy dinner ideas like goulash and go well with meat dishes like Rouladen!

Add the flour to a medium-sized mixing bowl and make a little well (or a mini volcano) in the middle.

Add the eggs and the salt to the flour and give everything a stir with a wooden spoon or your electric mixer. Now slowly pour in the water while mixing vigorously until the dough has a lump-free, elastic consistency. When you roll the wooden spoon in the batter, you should be able to create air bubbles as a result of the sticky yet smooth consistency. Another way to tell that the batter has the right consistency is when it drips off the spoon very slowly.

Bring a large pot of salted water to a boil. Once boiling, reduce the heat so that the water is simmering.

Now, spoon portions of the Spaetzle batter onto your spaetzle grater/maker and scrape the batter through into the boiling water. The spaetzle will float to the top when they are done. This takes around 2-3 minutes.

Remove the little dumplings with a large straining spoon and place them into a different bowl. Repeat the steps until you have used up all the batter. Enjoy!

Spaetzle Recipe (Vegan, Gluten-Free)

chickpea flour

First, combine the chickpea flour, tapioca flour, salt, and turmeric powder in a medium bowl and stir.

Then, gradually pour in the plant-based milk (or water), whisking until the batter is smooth and slightly viscous. It shouldn’t be runny enough to pour, and is more like a very thick batter that drops off the spoon in clumps. Refer to the recipe video for a visual guide.

Next, bring a large pot of salted water to a rolling boil. Working in batches, spread some of the dough onto a small wooden cutting board in a thin layer and dip it in the hot water for just a second.

Using a large knife (or a bench scraper - wet it first), scrape off long, thin strips of the dough into the boiling water.Alternatively, use a spaetzle maker (or potato ricer). This method works better when the dough is thicker.

Allow the spaetzle to cook for about 3 minutes, then use a slotted spoon to remove them from the pot (or pour them into a strainer) and rinse them with cold water OR transfer them to an ice bath for 20 seconds.

Serve the spaetzle with sautéed mushrooms and onions and mushroom gravy or vegan Geschnetzeltes. Or pan-fry them briefly with a little vegan butter and salt. Garnish with fresh herbs and enjoy!

German Spaetzle Recipe (Vegan, Gluten-Free)

Make German Spaetzle from scratch and you&#39;ll be rewarded with a tasty, traditional side dish for your next German meal.

German Spaetzle

Add flour, egg, water, and salt to the bowl of a stand mixer or a regular large bowl. Mix with the whisk attachment if using a stand mixer or with the dough attachment if using a hand mixer. Start on low, then increase speed to high and beat for at least 5 minutes or until the dough is super smooth and starts forming air bubbles.

Set aside, and bring a large pot filled with water to a rolling boil. Salt the water and reduce the heat to maintain a low rolling boil.

Put your Spaetzle maker on top of the pot and add about 1/2 a cup of dough at a time to it and scrape it through the holes so it can fall into the water. Let the Spaetzle cook for about 30 seconds. They are ready when they start floating to the top.

Use a slotted spoon to remove from the water and either serve right on a plate or place in a bowl filled with cold water and ice cubes to avoid from sticking to each other if you want to finish making the full batch of Spaetzle in one go.

Strain the Spaetzle and brown in a little butter ina pan to reaheat and serve in a bowl, or add to a baking dish, cover with aluminum foil, and place in a 250F-preheated oven to reheat.
