Good Morning Breakfast Cookies (Vegan, Gluten Free)

gluten-free rolled oats

gluten-free oat flour – if using homemade oat flour, make sure it’s very finely ground (not coarse)*

unsweetened shredded coconut, divided

cinnamon

baking powder

baking soda

salt

coconut oil

½ cup natural, unsalted almond butter

maple syrup

coconut sugar

vanilla extract

½ cup almonds, finely chopped

¼ cup cashews, finely chopped

pitted dates, chopped (about 6-8 medjool dates)

Preheat oven to 350°F. Line a cookie sheet with parchment paper or greased foil. Set aside.

In a large bowl, whisk together all of the dry ingredients: oats, flour, ½ cup coconut, cinnamon, baking powder, baking soda and salt.

In a medium bowl, whisk together all of the wet ingredients: flax eggs, coconut oil, almond butter, maple syrup, coconut sugar and vanilla. Whisk until smooth.

Pour the wet mixture over the dry mixture. Use a rubber spatula or wooden spoon to fold the ingredients together until you get a cohesive cookie dough. Fold in almonds, cashews, dates and remaining ¼ cup coconut.

Scoop about 3 tablespoons of cookie dough into your hands. Shape into a ball and place evenly apart on the prepared cookie sheet. Flatten cookies with a fork to keep the texture.

Using a spatula, carefully remove cookies from the baking sheet and place onto a cooling rack. Allow to cool, then enjoy!

Girrrrl, you sure are bold.  And a bit cray cray.  I mean that lovingly, of course.  ;)  Mad props for moving across the country with only 4 .2 suitcases... brave feels like an understatement!  We moved from FL to NC with the biggest moving truck we could find (and then some) and I thought we were roughing it!  hahahaha.  Obviously not, huh?  Seriously though, you are inspiring!  I'm glad you are no longer eating cereal minus the bowl plus some nappy tap water.  Thats no bueno.  But muy bueno are these fabulous cookies!  Yaaahhhs to breakfast cookies!!  Starting my day with a dozen or two of these morning goodness packed babies sounds perfect.. and like the best (and possibly only) way to get me out of bed before 8 am.   Pinned! First, I'd like to congratulate you on your fantastic use of jazz hands. Because it made my day :-) Second, holy ca-freakin'-noli, 4 suitcases!! I'll never again complain about another move (just kidding, I can't even help myself). I'm pretty sure "bold" may be a bit of an understatement. I mean, dang! I'm imagining it and at first I think "almost crazy" and then I think "but completely awesome." Seems like an exhilarating adventure to start a whole new life completely from scratch that way (bowl-less tap water cereal notwithstanding ). Third, these breakfast cookies!! Because Demeter's so amazing she's made that a thing now. Big bonus: I almost always have all of these ingredients on hand and I heart dates. YUM!!

I about cried when I read your story of moving from California to Maine!  lol!  No seriously, my eyes did well up and that's only because I moved from Florida to Maine, brought all my stuff with me and still went through a crazy culture shock that I don't think I've recovered from!  If I moved anywhere, without all of my "things", then I don't think I could stand life.  It's like not having a security blanket.  Kudos to you and Erik for purging everything except this wonderful breakfast cookie recipe.  I love cookies any time of day, but especially for breakfast.  Breakfast cookies are the best!

Breakfast cookies, what a great idea! Especially with all those nuts inside! Though I have to admit, I normally prefer savoury breakfasts, I would love to have them as a second breakfast or breakfast dessert ;)
Funny story about moving. We moved last summer with my boyfriend to a new city, also with just a few things (all fit in a car/mainly plants). Sold everything before, so we can have a fresh start. I felt we are so brave, but hey, we only moved two hours away from the previous city. :D You two moving across the country is a whole new level. But I am pretty sure that it was an awesome decision at the end - except for the sink water cereal!!!!! It's so nasty and unforgivable!!! :D

Demeter, your posts crack me up! You are one courageous woman! I too pulled a bold move about 15 years ago when I moved from Brazil to the US, I was only 19 and had $180 in my pocket hahaha... but somehow, it seems less bold than your move, perhaps because I was super young and worry-free (and I had my airline ticket back to Brazil).  Love your stores and recipes.  My family will undoubtedly love your Good Morning Cookies, and I can't wait to make them!

Wow these were the best vegan cookies I have ever made! The texture was spot on. Crispy on the outside, soft on the inside! I made these desert like by using cacao chips instead of dates and walnuts instead of cashews and the combination of the two with the coconut shreds made these so delicious. Thank you so much for this recipe :)

I am so excited to shake up mornings and try these recipes with my grand kids!  When my kids were small, I used two cookbooks, Taming the Candy Monster and Feed Me, I'm Yours.  The recipes were healthier alternatives to cold cereal and toast.  I loved giving my kids breakfast cookies and bars filled with good stuff! Has anyone tried these without coconut sugar?  It just made it too sweet for me, do I even need a substitute since there is maple syrup in them already?  Could I use honey if so?

I just made them with my girls and these are fantastic cookies!! My 5 yr old earned a prize for reading a certain amount of books and she picked a cookie making party. We used cashew butter/Sunflower seed butter mix in place of almond butter, and used one flax egg and one chia egg just for fun.  We mixed up the base dough together and then each of my girls got a bowl of dough to themselves with little cups of add ins so they could customize their own cookies. They picked chopped dried cranberries, chopped hazelnuts, toasted coconut, and enjoy life mini chocolate chips! We left them in the oven about 13-15 minutes, and they are just perfect! Thank you for creating and sharing this wonderful recipe, it's hard to find gluten-free, dairy-free, and egg-free recipes that actually taste like the "normal cookies" other kids get to eat!  &lt;3

I LOVE these cookies!  They are delicious and healthy.  My whole family adores them.  We add raisins sometimes and substitute the nuts for pumpkin seeds (due to a tree nut allergy).  Thank you for a fantastic recipe!
