Crockpot Healthy Buffalo Chicken Dip with Cauliflower

Cups chicken broth

Cup Buffalo sauce

Salt

Oz` Challenge Dairy Cream Cheese **

In the bottom of a 7 quart slow cooker, pour in the chicken broth. Place the chicken breast in, followed by the cauliflower florets. Cover and cook on high until the chicken is no longer pink inside, about 2-2.5 hours.

Once cooked, remove the chicken to a plate to cool. &nbsp;Using a slotted spoon, transfer the cauliflower into a high-powered blender, trying to leave as much broth in the slow cooker as you can.&nbsp;

Into the blender, add the buffalo sauce, salt and pepper and blend until smooth and creamy, stopping to scrape down the sides as necessary.

Drain the chicken broth from the slow cooker and add the cauliflower/buffalo mixture in, along with the cream cheese.

Using two forks, shred the chicken and then add into the slow cooker. Cover and cook on high until the cream cheese is soft, about 20-30 minutes.

Once the cream cheese is soft, stir everything together right in the slow cooker, until well mixed.

Either serve with chips straight out of the slow cooker, keeping it on warm, or transfer to a bowl to DEVOUR.

Crockpot healthy Buffalo chicken dip

BBQ Cauliflower Wings

cauliflower

flour ((all-purpose gluten free flour

cornstarch

vegan milk (any kind works)

sea salt

black pepper

garlic powder

panko breadcrumbs

bbq sauce

Preheat oven to 450°F/230° C.

Prepare a baking sheet by lining it with a silicone baking sheet or greased foil.

Using a knife, remove florets from the cauliflower (aka cut off the leaves and don&#039;t use the most of the stems. You can leave a little piece on at the ends to hold on to). Chop the cauliflower into smaller pieces to resemble the size of the wings.

In a separate bowl, whisk the flour, cornstarch, vegan milk, sea salt, ground black pepper and garlic powder in a bowl to make the batter. If the batter is too thick, feel free to thin it out with some more milk and vice versa. In a separate bowl, place the breadcrumbs. Line it up beside the batter bowl.

Toss the cauliflower in the batter mixture (you can add them all at once), using a spatula or spoon to coat them all. Transfer them to the breadcrumbs (you can do this in two or three batches) to coat completely, then place onto the baking sheet, giving each wing enough space. Repeat until all of the wings are coated.

Bake for 22 minutes. Please ensure your oven is completely preheated and hot.

While baking, prepare the ingredients for the sauce by heating &amp; whisking together. If you’re using store-bought bbq sauce, you may want to sightly thin it out with some water. Heat it up in a pot on the stove, or a large bowl in your microwave until warm.

Remove from oven. Toss the wings in the sauce (I like to use a spatula to move them around to get properly coated) then using tongs or a spoon, remove and place back on the baking sheet OR brush the bbq sauce onto each wings. Bake for another 5 minutes for the sauce to soak into the wings.

Remove from oven and, and garnish with scallions! Eat immediately - enjoy!

Olive oil (for cooking)

Bring 2 cups of water to a boil.

Add rice, reduce heat to low, cover and steam until rice has absorbed all of the water, about 15 minutes. Leave to cool to room temperature.

In a bowl, beat 4 eggs with the mint, black pepper and salt.

Add the rice and mix until thoroughly combined and rice is well coated with the egg.

Heat a molded pan and brush each cavity with a little olive oil.

Using an ice cream scoop, fill each cavity with the rice.

Cover and cook on low heat 5-10 minutes on each side until golden and crispy.

Serve with ajvar or your favorite Balkan vegetable spread.

sweet onions (sliced (recommend Vidalia, Maui, or another sweet onion))

plain Greek yogurt

gluten free all-purpose flour flour

gluten free cornmeal

½ tsp smoked paprika

onion powder

¼ tsp ground black pepper

Stir the milk and Greek yogurt together in a large bowl. Add the onion slices and let them soak in the refrigerator for 30 minutes to 1 hour.

Add gluten free flour to one shallow dish. Lightly beat the eggs in another shallow dish. Whisk together the breadcrumbs, cornmeal, parmesan cheese, salt, paprika, onion powder, garlic powder, and pepper in a third shallow dish.

Remove one onion ring from the milk mixture and let any excess drip off, then coat in flour. Dip in the egg, and then in the breadcrumb mixture. Place on a baking sheet.

Repeat with the remaining onion rings, spreading them out in a single layer separated so they don’t stick together. Spray the tops of the onion rings thoroughly with oil or cooking spray. Flip and spray them again.

Preheat the air fryer to 370°F. Once it is preheated, coat the basket with cooking spray. Place onion rings in a single layer in the air fryer basket, and cook in batches at 375°F for 5 minutes. Flip and spray again with oil, then cook until golden brown and crispy on both sides, for another 3-5 minutes. Cooking time can vary based on the size of your onion rings and the model of your air fryer. This recipe was tested using a Cosori XL 5.8 quart air fryer. Cover to keep warm while cooking the remaining onion rings.
