This Spicy Moroccan Chickpea Stew is made using store cupboard staples, so you might not even need to go shopping to make it!

Spicy Moroccan Chickpea Stew

Olive oil

400 g Chickpeas (drained)

Onion (thinly sliced)

tsp Cumin

0.5 tsp Ground cinnamon

Paprika

Ras-el-hanout

g Fresh coriander (cilantro)

Sea salt and black pepper

tomatoes (canned)

tbsp Tomato puree

500 ml boiling water

vegetable stock cube

g Dried red lentils (rinsed)

tbsp Harissa

Heat 1 tbsp Olive oil in a large pan, add 1 Onion and gently cook for 2 minutes.

Add 1 tsp Cumin, 0.5 tsp Paprika, 1.5 tsp Ras-el-hanout0.5 tsp Ground cinnamon and 1 pinch Sea salt and black pepper and stir well and cook for a further minute.

Add 400 g Chopped tomatoes, 1 tbsp Tomato puree, 2 tbsp Harissa, 500 ml boiling water and 1 vegetable stock cube and stir well.

Add 40 g Dried red lentils, stir and simmer for 10 minutes. Then add 400 g Chickpeas and simmer for a further 10 minutes. Add a little more water if needed.

Add 10 g Fresh coriander (cilantro), stir and simmer for 5 more minutes.

yellow onion, chopped

carrots,

celery stalks, chopped

garlic cloves,

chicken broth (I use Better than Bouillon)

white beans

rainbow chard, ribs removed

Heat the olive oil in a Dutch oven...

Heat the olive oil in a Dutch oven or large, heavy bottomed pot. Add the onion, carrots, and celery and cook until beginning to soften, about 4-5 minutes. Sprinkle with salt and pepper.

Add the Italian sausage, breaking it up into smaller pieces. Cook, stirring occasionally, until browned. Stir in the garlic cloves and saute until fragrant, about 1 minute. If there's a lot of fat in the pan, drain or use paper towels to sop up all but about 1 Tablespoon of fat.

Pour in the chicken broth and beans and...

Pour in the chicken broth and beans and bring the mixture to a boil. Reduce heat to low, and add the rainbow chard, stirring until wilted, about 3 minutes. Taste and season as needed.

Serve with Parmesan flakes and crusty bread.
