Cook pasta:

Cook pasta: Cook the pasta al dente according to package instructions. Reserve 1 cup of the pasta cooking water.

Make sauce: Heat the butter in a skillet over medium-high heat. Add the garlic and sauté for 30 seconds to 1 minute, just until the garlic becomes aromatic. Add the goat cheese, half and half and stir. Whisk until smooth.

Add beet, goat cheese, 2 tablespoons parmesan, garlic, egg and a pinch of salt and pepper to a food processor. Pulse until smooth. Transfer mixture to refrigerator to chill while rolling out the pasta dough.

Roll out two sections of dough into thin sheets using a pasta machine. Test the thickness of the sheets by placing your hand behind it (if you can make out the shadow of your hand behind the pasta it is ready to be filled).

Place rounded teaspoons of the chilled filling onto one pasta sheet about 3 inches apart. Cover with the second sheet of pasta, pressing lightly on the filling to remove any air bubbles.&nbsp;

Cut ravioli using a ravioli cutter and press around the edges to seal.

Add ravioli&nbsp;to salted boiling water and boil gently for 2-3 minutes until pasta is cooked. The ravioli&nbsp;will begin to float to the surface when the pasta is done cooking. Remove with a slotted spoon and transfer to serving plates.

Add 1/2 cup of the pasta cooking liquid to a small saucepan and bring to a simmer over medium heat. Add herbs and cook for about 2 minutes. Gradually add butter 1 cube at a time, allowing each cube to melt before adding the next.

Spoon butter sauce over ravioli and season with salt and pepper to taste. Top with grated parmesan, pine nuts and additional fresh herbs.

Preheat

Preheat oven to 400 F. In an 8 X 10 inch pan, add the sliced mushrooms, diced onions, and sliced sausage. Toss to mix.

Spice

Pour in 1 ½ Tbsp olive oil and sprinkle the sea salt, garlic powder, oregano, and paprika over top and toss to distribute.

Bake

Make a little hole in the center of the dish for the goat cheese log. Place the goat cheese in the center and pour the remaining ½ Tbsp of olive oil over the goat cheese. Bake the pan in the preheated oven for 20 minutes until the onions and mushrooms are soft and cooked.

Pasta

While the goat cheese is baking, cook the pasta according to the package directions. Try to cook it al dente so the noodles are a little firmer which makes it easier to toss in the sauce. Reserve ½ cup of the pasta water before draining.

When the goat cheese pan is done in the oven, use the back of a spoon or a spatula to mix up the softened cheese with the sausage, mushrooms, and onions. Mix well so the goat cheese is well distributed and no clumps remain. It should be easy to mix since it’s warm.

Toss

Then add the cooked pasta to the pan along with the extra pasta water. Toss well in the cheese mixture to coat.

Garnish

Sprinkle scallions and parsley leaves over top and serve.
