Stacked Tomato Salad

tomatoes

goat cheese, (room temperature)

herbs ((thyme, chive, rosemary…))

Good balsamic vinegar (for drizzling)

Salt

Mix the fresh herbs into the goat cheese.

Slice the tomatoes into 4 thick rounds. Sprinkle each tomato round with salt. Gently slather the layers of each tomato with the goat cheese mixture.

Stack the rounds to reassemble the tomato. Drizzle with balsamic vinegar!

This leafy green salad is topped with sweet grapes, creamy goat cheese, and homemade candied pecans for a simple, delicious side dish!

Green Salad with Grapes

green leaf lettuce or spring mix

black grapes,

goat cheese

pecans

olive oil

balsamic vinegar

dijon mustard

mayonnaise (optional)

salt

black pepper

In a large bowl, combine the lettuce, grapes, goat cheese, and pecans. For the best results, I recommend tossing the greens with half of the toppings, then add the remaining half on top. This helps distribute the toppings evenly so they don&#8217;t all fall to the bottom of the serving bowl.

In a small bowl, whisk together the oil, vinegar, mustard, mayonnaise, salt, and pepper.

Drizzle the dressing on top of the salad and toss to coat.

Strawberry Goat Cheese Salad

150 g arugula (4-5 handfuls)

strawberries

onion,

½ large cucumber, diced

avocado, diced

soft goat cheese, crumbled

basil (chopped, optional)

pecans (raw

extra virgin olive oil

tbsp balsamic vinegar

maple syrup

tsp dijon mustard (optional)

¼ tsp fine sea salt

¼ tsp black pepper

¼ tsp chili flakes (or more to taste)

Add all salad ingredients into a large bowl or layer on a large serving plate.

Salad:

To make the dressing, add everything to a bowl or a mason jar and whisk or shake until well mixed. Taste and season with more salt and pepper if desired. Pour the dressing over the salad, toss, and enjoy!

A delicious and hearty spring salad with sautéed asparagus, red pepper, spinach and pearl barley

Barley Salad with Asparagus, Red Pepper and Spinach

vinegar

garlic (minced)

olive oil (divided)

salt and pepper

red bell pepper

asparagus spears

shallot (sliced thin)

baby spinach

¼ cup sliced almonds (toasted)

Combine 1 tablespoon vinegar and garlic together in a medium bowl.  Set aside.

In a large nonstick skillet, heat 2 tablespoons of olive oil over medium high heat.  Add red pepper and cook until lightly browned and beginning to soften, about 2 minutes. Add asparagus and cook until nearly tender, about 2 minutes.  Add shallot and cook until softened, about 1 more minute. Remove from heat and add remaining teaspoon of sherry vinegar. Stir in cooled barley. Set aside to cool while you make the vinaigrette.

Whisk remaining 4 tablespoons of olive oil into garlic and sherry vinegar mixture.  Season to taste with salt and pepper.

Toss spinach with 2 tablespoons of vinaigrette in a large bowl.  Season to taste with salt and pepper.

Add asparagus and barley mixture to the medium bowl with the remaining vinaigrette.  Toss to combine. Season to taste with salt and pepper.

To serve, create a bed of spinach on the bottom of each plate or on a serving platter.  Arrange the asparagus and barley mixture over the top. Sprinkle with toasted almonds and crumbled goat cheese.
