These gochujang chocolate cookies combine rich cocoa with spicy Korean chili paste for a soft, chewy treat with bold flavor and just the right amount of heat.

Gochujang Chocolate Cookies

unsalted butter (softened)

brown sugar

white sugar

tbsp gochujang paste (start

tsp vanilla extract

all-purpose flour

cocoa powder

tsp baking soda

tsp salt

Cream butter and sugars together until light and fluffy.

Mix in egg, gochujang, and vanilla extract.

In a separate bowl, whisk flour, cocoa powder, baking soda, and salt.

Gradually add dry ingredients to wet ingredients. Fold in chocolate chunks.

Chill dough in fridge for 30–60 minutes.

Preheat oven to 350°F (175°C). Line baking sheet with parchment paper.

Scoop dough into balls and place on baking sheet.

Bake 9–11 minutes until edges are set but centers are soft.

Cool on pan for 5 minutes, then transfer to rack to cool completely.
