This Turmeric Rice is the perfect feel-good side dish! With fluffy jasmine rice, fresh ginger, ground turmeric and creamy coconut milk, it&#039;s so easy to make and naturally vegan.

Golden Turmeric Rice

olive oil

ginger

turmeric

cinnamon

jasmine rice (rinsed)

water

½ cup full fat, unsweetened coconut milk

bay leaf

sea salt

black pepper and chopped cilantro (for serving)

Heat the olive oil in a medium saucepan to which you have a lid. When shimmering, add the ginger, turmeric, and cinnamon stick. Toast over medium-low heat until fragrant, about 1 minute.

Add the rice, water, coconut milk, bay leaf, and salt. Bring to a boil then reduce the heat to low and cover. Cook for 12 minutes then turn off the heat and let it sit, covered, for 10 more minutes.

Fluff the rice with a fork and remove the bay leaf and cinnamon stick. Serve warm with a few grinds of black pepper and some chopped cilantro.

Fluffy Yellow Rice Recipe (Arroz Amarillo)

rice

butter

onion

garlic (minced)

chicken base (or bouillon or vegetable base)

adobo seasoning

Set a 4-quart saucepot over medium heat. Add the butter, onions, and garlic. Sauté for 3-5 minutes to soften. Then stir in the rice. Make sure the rice is well coated in butter.

Add the chicken base, turmeric, adobo seasoning, and water. Stir well.

Cover the pot and bring to a boil. Once boiling, lower the heat a little and stir. Then cover and cook for 15-18 minutes, until the rice looks fluffy and there are vent holes in the top of the rice.

Remove from heat and toss the rice. Then cover and let the rice steam another 5 minutes. Stir in the cilantro and serve warm.

Fluffy Yellow Rice

This golden garlic rice is fluffy, tender, vibrant, and packed with aromatic garlic flavor—a delicious, versatile vegan side dish. Stovetop, Instant Pot, and Rice Cooker methods included!

Garlic Rice

neutral oil (your choice)

achiote powder

garlic

white rice

vegetable broth

Salt (to taste)

orange ((optional))

In a large, heavy-bottomed stock pot, combine oil, achiote powder and chopped garlic. Saute over medium heat for about one minute, until garlic has softened (but is not browning).

Add uncooked rice to the pot. Stir until rice is evenly coated with oil.

Add vegetable broth and orange zest (if using) to the pot. Stir well. Bring to a boil, reduce heat to low, cover with lid and simmer for 20-25 minutes, until rice is tender and has absorbed all the broth.

Remove the pot from heat. Leaving the lid in place, allow rice to steam in the pot for 5 minutes. Remove the lid and fluff with a fork.

Made this today. It's very good, just the broth is too much. Didn't peak. left the lid on after cooking and still there was quite some liquid left. Next time I'm using 3 cups of broth, that should be enough.

This rice is so colorful and delicious! Love pairing it with tofu or chickpeas. Yum!
