NOTE: use coconut milk instead of almond milk

Mix together base ingredients of choice in a large bowl. Note that Greek yogurt and seeds are optional - you really only need to mix together milk of choice and oats, then add your flavored add-ins.

Once you have mixed up your base, add your add-ins. Most flavors only require 1-3 ingredients. For instance, if wanting to make the carrot cake overnight oats, mix the carrots, coconut and cinnamon into your overnight oats base.

Divide mixture among 4 mason jars then let sit in the fridge for at least 2 hours, or overnight. Jars will last in the fridge up to 5 days so they are perfect for meal prep!

Overnight Oats 9 Ways

An easy breakfast you&#039;ll crave daily. These homemade protein McGriddle muffins are sweet, savory, and packed with 11 grams of protein each.

Protein McGriddle Muffins

sausage

maple syrup

¼ cups Kodiak Buttermilk Power Cakes mix (spooned and levelled)

eggs

cheddar cheese

milk

Position oven rack to the middle and pre-heat to 350 F. Prepare muffin pan with liners and set aside.

Heat a pan to medium heat. Add sausage. Brown and crumble with a spatula until no pink remains and sausage is slightly browned and caramelized. Turn off the heat and stir in maple syrup.

Transfer sausage to a large mixing bowl. Let it cool to room temperature, at least 5 minutes.

Once sausage has reached room temperature, add pancake mix, eggs, cheese, and milk. Stir to combine.

Spoon batter into prepared muffin pan. I like to use a 3-Tbsp cookie scoop for this step, but it&#39;s not necessary.

Bake for 20-25 minutes or until the tops are set and lightly golden. Let muffins rest in the pan for 5-minutes before transferring to a wire rack. Cool for at least 10-minutes before serving and enjoy!

Easy to whip up just could taste the maple. Dipping them in a little syrup or using maple flavored sausage would be the fix I think. 

I love meal prepping these at the start of the week, and enjoying them for a quick breakfast or snack!
