Grandma’s old-fashioned sugar cream custard pie topped with a buttery &amp; crispy sugar cinnamon brûlée coating

Vanilla Sugar Cream Pie

/ 529.1 g heavy cream

/ 150.6 g granulated sugar

/ 1.5 g kosher salt

cornstarch

Tablespoons / 56.7 g butter, softened and unsalted

Tablespoon / 13 g Rodelle Fair Trade Vanilla Extract

Preheat the oven to 350 F. To a heavy bottom pot over medium heat, add the heavy cream, sugar, salt, cornstarch, and butter. Whisk to combine and then continue to whisk until the mixture comes together and forms a thick pudding-like consistency. This will take ~15-20 minutes. Do not let it boil as you risk breaking the mixture (it could curdle).

Once the mixture is very thick, turn the heat off and add in the vanilla and mix to combine.

Pour the mixture into the prepared pie shell and pop it in the oven to set the custard for 10 minutes. Remove the pie from the oven and set the oven to broil with a rack 6-8” from the broiler.

Make the Pie

In a small bowl whisk together the sugar, cinnamon, and nutmeg. To the hot pie, pour the melted butter over top of the custard. Next, sprinkle on all of the cinnamon mixture.

Take a few strips of aluminum foil (or pie crust guards) and cover the crust of the pie. You’re doing this so you won’t burn the crust in the next step.

Pop the pie back into the oven under the broiler for 30-60 seconds. You just want to caramelize the sugars and brûlée the top.

Make the Topping &amp; Finish The Pie

Pull the pie from the oven, remove the foil and allow to cool completely at room temperature. Once cooled, wrap the pie in plastic wrap and place in the fridge for a minimum of 4 hours or overnight.

To serve slice and serve as-is or with some cinnamon nutmeg whipped cream.

Preheat your oven to 350°F. Prepare a 9x13-inch baking dish with nonstick cooking spray.

In a large bowl, mix together 2 cups granulated sugar, 2 large eggs, and (1) 20-ounce can of crushed pineapple (including the juice). Stir until well combined.

Add in 2 cups of all-purpose flour, 1 teaspoon baking soda, and ½ teaspoon kosher salt. Stir gently until everything is just mixed—don’t overdo it. Stir in 2 teaspoons pure vanilla extract until combined with the other ingredients.

Pour the batter into your prepared 9x13-inch baking dish and spread it out evenly. Bake for 30–35 minutes or until the top is golden brown and a cake tester or toothpick comes out clean.

Start preparing the topping with about 5 minutes left on the cake&#39;s bake time. In a medium saucepan over medium-low heat, melt ½ cup (1 stick) of unsalted butter until fully liquefied.Stir in 1 cup packed light brown sugar until fully dissolved and smooth. Warm ¾ cup evaporated milk slightly (in the microwave for ~15–20 seconds), then slowly add it to the saucepan, stirring constantly. Continue stirring gently until the mixture is smooth and just starts to bubble. Immediately remove the topping from the heat and stir in 1 teaspoon of pure vanilla extract.

Once the cake is out of the oven, let it sit for 5 minutes. Then poke holes all over the surface using a skewer or fork. After cooling the cake for 10 to 15 minutes, slowly pour the warm topping evenly over the surface. Let it soak in and settle for a few minutes.

Sprinkle 1 cup of chopped pecans or walnuts on top, if using. Let the cake cool at room temperature for 20 minutes before slicing.

Slice into squares and ENJOY!

This simmering process ensures every bite is infused with rich, comforting flavors.

Cook the Pasta

While your sauce is simmering, bring a pot of salted water to a boil. Add 8 oz pasta of your choice and cook according to package instructions until al dente, usually around 8-10 minutes. Before draining, reserve about 1 cup of pasta water. This starchy water can help adjust the sauce's consistency if needed. Drain the pasta but do not rinse—it’s essential for helping the sauce adhere.

Combine Pasta and Sauce

Add the drained pasta directly into the skillet with your sauce, tossing to combine thoroughly. If the sauce seems too thick, add a bit of the reserved pasta water until you reach your desired consistency. Finally, stir in 0.5 cup freshly grated Parmesan cheese, which will melt into the dish, adding creaminess and flavor. Serve hot, topped with extra cheese if desired.
