The Best Soft Granola Bars

oats

twisted pretzels,

salted peanut halves

peanut butter (more as needed)

honey (more as needed)

vanilla

Toss the oats, crushed pretzels, and salted peanut halves together in a large bowl.

Stir the peanut butter, honey, and vanilla together in a separate bowl until smooth and creamy. Pour the mixture over the dry ingredients in the other bowl. Stir until combined.

Press the bar mixture into a 9&#215;9 inch pan lined with parchment paper (9&#215;13 will work &#8211; it will just yield wider, flatter bars). Freeze for 30 minutes. Pull out of the pan and cut into bars. Store bars individually wrapped in the freezer for quick grab-and-go snacks.

The granola bars look great. 
Word of caution from a food allergy momma, please be very mindful when eating nuts of any kind on an airplane. This is surprisingly dangerous for people with nut allergies - even nut residue (cross-contamination) or nut protein in the air can result in anaphylaxis.

This is exactly what I needed! JUST told my husband I needed to find a good recipe for soft granola bars for our little road trip this weekend...we are on the same page even from CEBU!! 
Praying for you all over there...I would be the biggest wimp in that situation...cant believe those poor little orphanage sweeties have to deal with that all the time!! Hahaha, I just had to comment on your fear of earthquakes. What magnitude was the one in Cebu?

I feel pretty fortunate to live in an area that, yes, has earthquakes, but all the buildings are "prepared" for it. It would take a really large one to cause a lot of damage here. Another bonus - there are no 8-story buildings around here. All the locals are riled up because someone wants to build a 3-story building and it'll block the view of a local mountain from Downtown SLO. Things tend to stay pretty low to the ground around here :)

Best Soft Granola Bars

Healthy homemade granola bars that are gluten-free and paleo friendly! Have fun switching up the nuts and seeds for different variations.

Trail Mix Granola Bars

nuts (almonds, cashews, pecans, walnuts, etc)

coconut

cranberries

pepitas

chia seeds

sea salt

maple syrup

vanilla extract

Preheat

Preheat your oven to 325 degrees fahrenheit and line an 8x8-inch baking pan with parchment paper.

Stir

Add all of the nuts, seeds, dried fruit and salt to a mixing bowl and give it a stir.

In a separate small bowl, stir together the vanilla extract and maple syrup. Pour this on top of the nuts and stir everything together, until it&#039;s well coated.

Pour

Pour the mixture into the baking pan and use the back of a large spoon or spatula to flatten it into one layer.

Bake

Bake for 30-35 minutes, then cool for one hour in the pan.

Cool &amp; Slice

Once the granola bars are fully cooled, slice them into bars. I slice then entire portion in half, then divide each half into six bars, for 12 total granola bars.

These easy, healthy homemade trail mix granola bars will beat store-bought versions any day!

The base recipe for 8 easy homemade granola bar recipes that come together in a snap. Variations include peanut butter chocolate, M&amp;M, Sweet and Salty, and more!

Base Granola Bar Recipe

old fashioned rolled oats

nuts, roughly chopped

honey

unsalted butter

brown sugar

salt

Preheat the oven to 350 degrees. Line a 9-inch square baking dish with parchment or foil and lightly spray with cooking spray.

Place the oats and nuts on a rimmed baking sheet and bake for 8-10 minutes until lightly toasted.

While the oats are toasting, add the honey, butter, and brown sugar to a small saucepan. Cook over medium heat until the butter melts and the sugar dissolves, stirring constantly. Let the mixture bubble, while stirring, for 1 minute and then remove from the heat.

Stir in the vanilla and salt to the butter mixture. Pour this mixture over the oat and nut mixture and stir to combine. Add any extra ingredients (except for chocolate) and stir to combine. Make sure none of the oats are dry.

If you are adding chocolate, wait about 15 minutes for the mixture to cool a bit before adding the chocolate and then stirring to combine.

Place all of the oat mixture in the prepared pan. Use a rubber spatula or the bottom of a greased measuring cup to press the mixture into the pan. Press it in very firmly, this is what makes the bars stick together.

Chill the granola bars for at least 2 hours. Lift the bars from the pan using the edges of the foil or parchment and place them on a cutting board. Cut into desired shape/sizes and serve.

Store in an air-tight container in the fridge for up to 10 days. If you are stacking the granola bars place a piece of parchment between the layers to help prevent sticking.

Homemade Granola Bars

peanut butter or cashew butter

Line an 8x8 baking pan with parchment paper.

In a large bowl, stir together the peanut butter, honey, vanilla, and salt, until smooth.

Add the oats, chocolate chips and the pepitas (or nuts). The mixture might seem dry at first, but keep stirring and it&#x27;ll come together. Stir to combine and press firmly into the pan. Use a second piece of parchment paper and the back of a measuring cup to help flatten the mixture. Chill for at least 1 hour, then slice into bars.

Store bars in the fridge.

Chewy Chocolate Chip Granola Bars

quick cooking oats (not old fashioned rolled oats)

puffed rice

nuts

chocolate chips

flaxseed

almond butter (or other nut/seed butter)

coconut oil

Preheat and prep. Preheat oven to 325°F/165°C. Line an 8x8-inch baking pan with parchment paper, with the paper coming up the sides.

Stir the dry ingredients. In a large bowl, stir together the oats, puffed rice, chopped nuts, chocolate chips, flaxseed, and salt.

Stir the wet ingredients. In a medium bowl, stir together the honey, almond butter, coconut oil, and vanilla, until smooth.

Mix together. Pour the wet ingredients into the dry and stir together until well combined.

Press and Bake

Press the mixture. Scoop the mixture into the pan and press it into an even layer, using another piece of parchment paper to firmly press the mixture flat.	Bake for 20 to 25 minutes, until barely starting to get a little bit of golden color around the edges for chewy granola bars. For crunchier bars bake 25 to 30 minutes. Let cool to room temperature.

Cool

Firm up. Let the granola bars cool to room temperature in the pan. Then place the pan in the fridge for 1 hour to firm up the granola bars completely. Gently lift the parchment paper out of the pan, and slice into granola bars.

HEALTHY GRANOLA BARS | chewy chocolate chip granola bars + gluten-free!

Kickstart your day with a homemade granola bar recipe! These wholesome bars are packed with oats, dried fruit, chocolate, and a myriad of seeds. Enjoy one as an on-the-go breakfast or a healthy snack!

Easy Granola Bar Recipe (Without Baking)

Medjool dates, soaked

crispy rice cereal

pumpkin seeds

sesame seeds

tahini

natural smooth peanut butter

coconut nectar

Pit the dates, then soak them in hot water for at least 1 hour but preferably overnight.

Once they&rsquo;ve softened, drain the water and blend them in a small high-speed blender or food processor until smooth, stopping to scrape down the sides a few times.

Add the rolled oats, crispy rice cereal, dried cranberries, mini chocolate chips, pumpkin seeds, sesame seeds, and salt to a large mixing bowl. Stir thoroughly with a wooden spoon or whisk.

In a separate bowl, combine the date paste, runny tahini, peanut butter, and coconut nectar. Transfer the mixture to the bowl of dry ingredients and mix well.

Line 2 loaf pans with parchment paper. Divide the granola evenly between both pans, pressing the mixture down firmly with a spatula or the back of a spoon.

Set the loaf pans in the freezer for about 1-2 hours (or overnight). Once they&rsquo;re set, cut your homemade granola bars into snack-size portions and store them in an airtight container in the fridge or freezer. Happy eating!
