No-Bake granola bites with peanut butter and chocolate chips are a quick healthy homemade snack! This recipe has oats, bran &amp; flaxseed&nbsp;for an energy boost.

Granola Bites with Peanut Butter &amp; Chocolate

chocolate chips (mini semi-sweet, plus extra for topping)

In a medium-sized saucepan over medium heat, cook honey and brown sugar for 1 minute until brown sugar is dissolved.

Add vanilla and stir to combine.

Add mixture to a stand mixer fitted with a paddle. Add peanut butter and mix on medium speed until combined, about 1 to 2 minutes.

In a medium-sized bowl, combine oats, crisps, flaxseed and oat bran. Pour into a mixer with peanut butter mixture, and combine on medium-low speed, about 1 to 2 minutes.

Refrigerate the mixture for 10 minutes, or until the mixture has cooled completely to room temperature, to prevent the chocolate chips from melting.

Transfer mixing bowl back to stand mixer and add the chocolate chips. Mix on medium-low speed until combined, about 30 seconds to one minute.

Using a mini cupcake tin, enough to make 24 cups, add a heaping tablespoon of the peanut butter chocolate chip mixture into each cup.

Press the mixture firmly into each cup then top with additional mini chocolate chips, pressing gently into the batter. Each cup should be at least ¾ full with the mixture.

Refrigerate for at least an hour, or until the cups have hardened and are easy to remove with a small knife.

Store the peanut butter chocolate chip granola cups in an airtight container in the refrigerator for up to 1 month.

A crispy dry granola, like this cinnamon flavor from Kind, works best in this recipe.

Place the apricots into a bowl and cover with water. Let sit for at least 10 minutes. Drain.

Place 1 cup of the granola into a blender. Blend until well chopped.

Add the dried fruit and nut butter, and blend, stopping frequently to scrape down the sides of the bowl, or if you have a Vitamix, use the stick to help things move around. Blend until starting to clump together and are finely chopped.

Place the remaining granola into a bowl and portion out 1-tablespoon balls. Roll in your hand, then roll in the granola, pressing the granola into the ball. Place on a plate and repeat to finish the batch.

Serve, or store in the fridge in an airtight container for up to two weeks.

No Bake Chocolate Chip-Almond Granola Bites (+ Variations)

Choice of Toppings: sesame seeds, hemp seeds, chopped sunflower seeds,

Mix almond butter, honey, and vanilla in a medium-sized bowl.

Add remaining ingredients except for toppings, and mix well.

Refrigerate for about 1/2 hour, then shape into balls with a small cookie scoop about a tablespoon in size.

After shaping each ball, roll it in the coating of your choice.*

Store the bites in an airtight container in the refrigerator.

I am a granola lover too and I just made these bites and all I can say is yum yum! They are out of this world. I made them to have 1 with a cup of roobios tea in the afternoon when I get that "I need a little something something " what an excellent recommendation because it is sweet but not desserty sweet but healthier sweet. I want to shed about 8 to 10 lbs so I am following all your ideas on your " real food weight series" . I know my problem is serving size because I eat healthy.
