NO-BAKE GRASSHOPPER PIE

Oreo cookies

unsalted butter, (melted)

marshmallow fluff (small tub)

mint extract

green food coloring

Cool Whip whipped topping, (thawed)

chocolate chips

Spray a 9-inch pie pan with cooking spray and set aside.

Using a food processor, crush the oreo cookies until fine. Add the butter and pulse a few times to combine.

Pour the crumb mixture into the bottom of the pie pan and press along the bottom and sides. Place into the fridge to cool and harden.

In a medium saucepan, melt the marshmallow fluff over medium-low heat, stirring constantly until completely melted.&nbsp;

Remove from heat and pour into a large bowl. Stir in mint extract and food coloring. Allow to cool.

Once the fluff mixture has cooled, stir in the whipped topping until combined and add more food coloring if needed to reach desired color tone.

Pour the mixture into prepared crust and top with mini chocolate chips.

Refrigerate (or freeze) until firm for at least 4 hours or overnight (don&#039;t skip this step!)

It's the luckiest happy hour dessert you'll ever make. With a crunchy chocolate cookie crust and a minty mousse filling, this is a treat any mint-chocolate lover will want to eat. Inspired by the classic after-dinner drink, this Grasshopper Pie recipe features the crème de menthe and creme de cacao of a Grasshopper Cocktail, because it wouldn’t be a recipe for Grasshopper Pie without the color to match. Top this crème de menthe pie with chocolate shavings and be prepared for oohs and ahhs!

Grasshopper Pie

chocolate

butter, melted

milk

marshmallows (from 10-oz bag)

green or white crème de menthe

white crème de cacao

whipping cream

green food color,

reserved crumbs

Grated semisweet baking chocolate, if desired

Heat oven to 350°F. In medium bowl, stir crust ingredients until well mixed. Reserve 2 tablespoons crumbs for garnish. Press remaining crumb mixture firmly and evenly against bottom and side of 9-inch glass pie plate. Bake 10 minutes. Cool on cooling rack 15 minutes. 

Meanwhile, in 3-quart saucepan, heat milk and marshmallows over low heat, stirring constantly, just until marshmallows are melted. Refrigerate about 20 minutes, stirring occasionally, until mixture mounds slightly when dropped from a spoon. (If mixture becomes too thick, place saucepan in bowl of warm water and stir mixture until proper consistency.) Gradually stir in crème de menthe and crème de cacao.

In chilled large bowl, beat whipping cream with electric mixer on low speed until mixture begins to thicken. Gradually increase speed to high and beat until stiff peaks form. Fold marshmallow mixture into whipped cream. Fold in food color. 

Spread filling in cooled baked crust. Sprinkle with reserved crumbs and grated chocolate. Refrigerate about 4 hours or until set. Store covered in refrigerator.

No Bake Mint Chocolate Pie

Mint

tbsp Unsalted Butter (melted)

oz Marshmallow Creme (or 24 large marshmallows) (softened)

Heavy Whipping Cream (whipped)

Crème de Menthe

Using a food processor, process the Oreos into fine crumbs. Add the melted unsalted butter and pulse until fully combined. You can mix these two ingredients in a separate bowl if needed. The mixture will be soft, a bit mushy, and thick. You should be able to easily mold it into a 9-inch pie plate.

Press the mixture into the bottom and sides of a 9-inch pie plate using a spatula or the bottom of a measuring cup, then smooth and level. Place the pie plate in the freezer for 30 minutes to 1 hour to firm up.

Soften your marshmallow fluff in a large microwaveable bowl, heating it up at full power for no more than 45 seconds. Set to the side. If you use larger marshmallows, I recommend melting them down in a saucepan, frequently stirring, over medium heat. Then let the marshmallow mixture cool completely.

In a medium-sizing mixing bowl, beat the heavy whipping cream using your hand mixer or stand mixer fitted with the whisk attachment until it forms whipped cream. This will take about 4 minutes. Set to the side.

To the large mixing bowl with softened marshmallow creme, add in the crème de menthe, mixing until it&#39;s well blended.

Fold in the whipped cream until it&#39;s thoroughly combined.

Pour the mint pie filling mixture into the chilled Oreo pie crust, top with additional Oreo crumbs, then chill in the freezer for 5-6 hours or overnight. Allow the pie to sit at room temperature for 10-15 minutes before cutting it. Store any additional pie in the freezer or refrigerator for up to a week.

Oreo cookies*

Tablespoons butter (, melted)

Tablespoons Creme de Menthe Liqueur ((more to taste))

Tablespoons Creme de Cacao Liqueur

vanilla extract

Crushed Oreos or chocolate curls (, for garnish)

Whipped Cream (, optional)

Oreo Crust: Add the whole Oreo cookies to a food processor and pulse into fine crumbs. Pour the crumbs into a bowl and stir in melted butter. Press mixture evenly and firmly into the bottom and up the sides of a 9in pie dish. Bake at 350 degrees F for 10-12 minutes. Set aside to cool.

Grasshopper Pie Filling: In a large saucepan, add marshmallows, 1/3 cup milk and 1/3 cup heavy cream, over medium low heat. Stir constantly until marshmallows are melted. Remove from heat. Stir in creme de Menth, creme de cacao, vanilla and a drop or two of green food coloring. Allow to cool completely.

Fold in Whipped Cream: Add remaining 1 cup heavy cream to a mixing bowl and mix with electric whisk beaters until stiff peaks. Spoon whipped cream over to one side of the bowl, and add cooled marshmallow mixture to the open side. Fold gently together, and pour into cooled pie crust.

Refrigerate pie for several hours (once the top is set, cover with a piece of parchment). 

Serve with Oreo crumbs sprinkled on top, and extra piped whipped cream, if desired.

Made with a rich mint oreo cookie crust and creamy mint filling, this frozen grasshopper pie is sure to impress!

No Bake Grasshopper Pie

Mint Oreo cookies (plus extra for topping)

Tablespoons unsalted butter (melted)

heavy cream

cream cheese (softened)

confectioners sugar

salt

green gel food coloring

Cool Whip (optional topping)

Crush 26 Mint Oreo cookies into fine crumbs using a food processor.

Mix the crumbs with 5 Tablespoons unsalted butter and press into a 9 inch pie plate to form the crust. Freeze while preparing the filling.

Using a stand mixer fitted with the whisk attachment, or a hand mixer and a large mixing bowl, beat 1 ½ cups heavy cream for several minutes until stiff peaks form. Set aside.

In another bowl, beat 8 ounces cream cheese until smooth. Add 1 ½ cups confectioners sugar, ½ teaspoon mint extract, pinch salt, and green gel food coloring*. Mix until well combined.

Gently fold in the whipped cream.

Pour the mixture into the chilled crust and smooth the top. Freeze for at least 6 hours or overnight.

Before serving, pipe Cool Whip around the edges and garnish with chopped and/or crushed Oreos, if desired.

Add the cookie crumbs to a large bowl, reserving a few tablespoons for garnish. Pour in the melted butter and mix until evenly moistened. Press the mixture firmly into a 9-inch pie plate, covering the bottom and sides. Freeze the crust while preparing the filling.

In a medium-large saucepan, warm the milk over medium heat. When it just starts to simmer, add the marshmallows (or marshmallow fluff) and stir until melted. Remove the pot from the heat and set aside to cool to room temperature.

Add the creme de menthe and creme de cacao and mix until smooth. If desired, add a couple of drops of green food coloring to enhance the color. Set aside.

In a separate bowl, whip the heavy cream until stiff peaks form. Then, gently stir the whipped cream into the marshmallow mixture until well combined and fluffy.

Pour the filling into the chilled crust, smoothing the top until it’s flat. Freeze for at least 3 hours (or until firm), then set on the counter for 10 minutes before serving. Sprinkle with chocolate shavings or extra cookie crumbs, and enjoy!

Will definitely will make this for the holidays. Used to make this grasshopper drink years ago. Can hardly wait to make the pie!

Made this pie for dinner Christmas day. Didn't turn out well at all, the cream and liquor broke down, separated, and made the crust slimy. Won't be using this recipe again.
