Homemade Gravy without Drippings

/ 480 milliliters Good Quality Chicken Stock, (preferably low-salt)

/ 480 milliliters Good Quality Beef Stock, (preferably low-salt)

tbsp Unsalted Butter

tbsp Flour

Carrot, (finely diced)

rib of Celery, (finely diced)

small-medium White Onion, (finely diced)

Garlic, (finely diced)

Worcestershire Sauce

tsp Chicken Bouillon ((or half crumbled OXO cube))

tsp Beef Bouillon ((or half crumbled OXO cube))

tsp EACH: Dried Thyme, Dried Rosemary

Salt & Finely Ground Black Pepper, (to taste)

Veg: Melt 3 tbsp butter into a large pot over medium-high heat and add in celery, carrot, onion and garlic. Fry until the veg starts to soften/brown then turn heat down to low-medium.

Roux

Roux: Stir in 3 tbsp flour until a paste forms then slowly start pouring in your stock, whisking as you go to ensure no lumps form.

Season

Season: Add in chicken/beef powder, Worcestershire sauce, rosemary/thyme and salt &amp; pepper to taste. Depending on the saltiness of your stock &amp; chicken/beef powder you may not need salt.

Thicken

Thicken: Simmer for 5-10mins until the gravy thickens, then use a hand blender to blitz until smooth. If you over thicken the gravy just add in a splash more stock. If you want it thicker (it will thicken as it rests/cools), just keep the gravy on a simmer, stirring somewhat frequently until your desired consistency.

Here’s how to make easy and delicious gravy with no drippings. All made from scratch with no packet either.

Easy Recipe for Gravy without Drippings

unsalted butter

onion (chopped)

carrot

rib celery (chopped)

all-purpose flour

oz chicken broth (low sodium)

oz beef broth (low sodium)

bay leaf

thyme

Salt and pepper

In a 10-inch skillet, melt butter over medium-high heat. Add carrot, celery, and onion and stir for about 8-9 minutes to allow the vegetables to soften.

Sprinkle flour over vegetables and continue to stir for about 3-4 more minutes until your vegetables are a tan/caramel color.

Pour in beef broth and chicken broth and stir, removing any stuck bits from the bottom of the skillet. Add bay leaf and dried thyme.

Allow your gravy to simmer for 20-25 minutes, stirring occasionally. Your gravy should be thick enough to coat the back of a spoon. Remove any foam that appears around the side of the skillet with a spoon.

Use a strainer and drain the gravy. Discard the vegetables.

Season with salt and pepper to taste.
