These crispy Greek fries are the ultimate side dish! They're showered with Mediterranean-style toppings: feta cheese, onion and herbs.

Greek Fries

potatoes

olive oil

Greek Seasoning

lemon dill sauce (our favorite),

Preheat the oven to 425 degrees Fahrenheit. Evenly space the oven racks to ensure even cooking.

Meanwhile, cut the potatoes into fries

(Watch this video or use a fry cutter.) Wash the potatoes, leaving the skins on. Slice off the ends of each potato, then slice off part of the side to make a base. Place the potato half cut side down and cut off a 3/8-inch slice, then lay the slice on its side and cut it into several long strips. Repeat until all potatoes have been cut into fries. The pieces can be uneven, but aim for as uniform of thickness as possible. See the video for full instructions!

Soak in cold water (10 minutes)

Place the cut fries into a medium bowl and rinse with cold water until water is clear. Then fill the bowl with cold water and allow to rest for 10 minutes (while the oven preheats). Then drain the potatoes and dry them thoroughly with a clean dish towel.

Season the fries

Add the fries to a dry bowl and toss them with the olive oil, Greek seasoning and kosher salt. Line two baking sheets with parchment paper. Spread the fries in straight lines on the paper, placing them as far apart as possible.

Bake

Bake the fries for 20 minutes. Take them out of the oven and carefully flip each fry. Return to oven (reversing the pans on top and bottom racks). Bake additional 8 to 10 minutes until they are crisp and golden brown, watching carefully as the bake time depends on the fry thickness and your oven. (If the majority of the fries seem soft, continue to bake a few more minutes.)

Season

Taste and add a few more pinches salt if desired. 

Garnish

Transfer fries to a platter and top with the feta cheese crumbles, breaking larger chunks into small pieces with your fingers. Add the finely chopped parsley and red onion. Serve with lemon wedges and tzatziki or lemon dill sauce.

Greek Oven Fries

Salt and black pepper

Extra virgin olive oil

garlic

thyme leaves

dry oregano

cayenne pepper (optional)

feta cheese (to your liking)

parsley (a handful to your liking)

Tzatziki sauce (Use Homemade Tzatziki Sauce Recipe)

Heat the oven to 400 degrees F.

Place the potato wedges in a large bowl and cover with hot water for 10 minutes. Drain and spread the wedges on a large, clean towel and pat very dry.  Dry the large bowl to use again.

Return the potato wedges back to the dry bowl. Season generously with Kosher salt and black pepper. Drizzle about 3 tablespoons of extra virgin olive oil. Toss to combine, making sure all the potatoes are well-coated.

Arrange the potatoes in a single layer on a large, lightly oiled sheet pan (non-stick if possible). If you don&#039;t have a sheet pan that is large enough, use two pans.

Bake for 35 to 45 minutes, turning the potato wedges over after the first 20 minutes of baking. When the potatoes are crisp on the outside and tender on the inside, they are ready. Remove from the oven and carefully arrange the potatoes on a serving dish.

If using tzatziki sauce for dipping, prepare it according to this recipe, while the potatoes are baking.

In a small bowl, combine 3 tbsp extra virgin olive oil, minced garlic, thyme, oregano, and cayenne. Spoon the sauce over the hot potatoes. Add fresh parsley and crumbled feta to your liking. Serve with a side of tzatziki sauce. Enjoy!

Oven baked crispy Greek fries tossed with dried herbs, and topped with fresh herbs, red onion and feta cheese are a great new take on fries.

Crispy Greek fries

potatoes (I use 6 yukon gold potatoes

dill

oregano

garlic powder

onion powder

¼ tsp pepper

lemon (zest only)

parsley

feta cheese

Preheat the oven to 450 and line a large baking sheet with parchment paper.

Slice the end off the top and bottom ends of the washed potatoes. Then slice the uneven side lengthwise of the potato. Cut the potatoes into planks and then each plank into strips that look like a French fry (see images in post). Put the fries into a bowl of cold water and empty and refill once or twice until the water isn’t cloudy anymore. Then leave the fries to soak in the water for 10 minutes.

Remove the fries from the water and dry well with towels.

In a separate bowl toss the dry fries with the olive oil, dried oregano, dill, garlic powder, onion powder, zest, salt and pepper. Place the potatoes in a single layer with space between each fry.

Bake in the oven for 25 minutes. Remove from the oven and toss with the fresh garlic and spread back out to a single layer on the baking sheet and continue to bake for 10 more minutes.

Remove the fries from the oven and immediately toss with the fresh parsley, fresh dill, red onion and feta. Place the remaining fresh herbs, red onion and feta on top of the fries and enjoy while still warm!

Heat the oven to 400 degrees F. Lightly spray a large baking sheet. If you don’t have a large one, then you can use 2 smaller ones.

Place the potatoes in a large bowl and cover with hot water. Let sit for 10-30 minutes. Drain the potatoes and then place them on a clean towel and dry them off completely.

Place the potatoes into a large bowl (I dry off the bowl I soaked them in and use that same bowl) and then drizzle with the olive oil and sprinkle on the oregano, thyme, garlic and onion powder plus the salt and pepper. Toss to combine so the the fries are evenly coated.

Place the potatoes in a single layer on your prepared baking sheet. They can be close together, but you DO NOT want them touching or else they will not crisp up properly.

Bake the potatoes for 30-45 minutes (this depends largely on the size- wedges will need more time) flipping after the first 20 minutes.

Remove from the oven and sprinkle on the lemon zest, parsley, and dill. Serve with a sprinkle of crumbled feta and a squeeze of lemon juice as desired and ENJOY!
