These easy Greek lamb gyros are made with lamb sirloin and a simple Greek marinade.  Add your favorite Greek toppings like tzatziki sauce, feta cheese, tomatoes, and lettuce for an easy and healthy griddle dinner!

Easy Greek Lamb Gyros on the Griddle

lamb sirloin

tzatziki sauce - We use the store-bought Hannah brand

bread

olive oil

Greek seasoning

garlic powder

red onion

garlic

balsamic vinegar

Worcestershire sauce

Dijon mustard

balsamic glaze (or you can substitute 1 tablespoon honey)

lemon

fresh rosemary, chopped

salt and pepper

Add all marinade ingredients to a gallon size...

Add all marinade ingredients to a gallon size zip top bag.  Stir to combine.

Add lamb to the bag in the marinade....

Add lamb to the bag in the marinade.  Zip the top of the bag closed while trying to push out any extra air from the bag.  Refrigerate for about 4 hours.

When lamb is done marinating, preheat griddle or skillet.  Place the marinated lamb sirloin on the heated griddle and allow to cook on the first side.

While lamb is cooking, spread a thin layer of olive oil on one side of each pita.  Sprinkle Greek seasoning and garlic powder on top.  Heat the pitas on the griddle, oiled side down until warm.

Greek lamb gyros with pita

Greek yogurt

tbsp tahini

parsley

salt

300 g (2 ½ cups) bread flour (plus more to dust)

130 g (scant 1 cup) Greek yogurt

120 ml (½ cup) water

tbsp sugar

dry active yeast

kg lamb

oregano

tbsp onion granules

tbsp sweet paprika

tsp black pepper

tbsp white wine vinegar

tomatoes (sliced thinly)

red onion sliced very thinly

Mix yogurt, tahini, lemon juice, minced garlic, salt and chopped parsley together in a bowl. Cover and keep in the fridge until needed.

Make the tahini yoghurt sauce

Put the flour, sugar, yeast and salt in a bowl (or your stand mixer fitted with the dough hook).

Add the water, yogurt and olive oil. Mix together with a spoon and once the dough comes together use your hands to lightly knead in the bowl until well combined. Cover the bowl and leave the dough to rise for an hour – it won’t rise significantly.

Tip the dough onto a well-floured tabletop. Briefly knead and form into a log. Cut into six equal portions. Keep any dough you are not using covered with a damp cloth.

Roll each portion out, adding more flour if the dough is sticky. Keep the pitas separated by greaseproof paper and covered with a damp cloth once rolled out.

Heat a large non-stick frying pan and wipe with a little olive oil. Cook the pita over high heat, for a couple of minutes per side until nicely coloured. Keep warm or pan fry/grill to reheat before serving.

Make the homemade pita

Mix oregano, sweet paprika, garlic granules, salt and pepper together in a bowl. Rub this seasoning all over your shoulder of lamb. Add olive oil and vinegar and coat the lamb. Cover and marinate for at least an hour.

Preheat the oven to 170C / 325 F. Set a shelf on the lower third of the oven.

Cook the lamb for an hour covered with foil. Remove the foil and cook for a further 20 minutes. Cover loosely with foil and leave to rest for 30 minutes. The lamb is cooked when the internal temperature is 70°C (158°F) for medium-well done.

Slice the lamb thinly, removing any fatty bits. Add a few tablespoons of the pan juices to the sliced lamb. Keep warm.

Preparing and cooking the lamb

Finely slice one red onion and mix with generous amount of chopped parsley. Finely slice two large tomatoes, discarding the seeds.

Spread your warm pita with the yogurt sauce. Add a generous amount of lamb and then top with the tomatoes and onions. Wrap the pita around the fillings and eat immediately!

This Lamb Gyro recipe with Authentic Greek Tzatziki Sauce is a delicious combination of flavors from red onion, garlic, marjoram, rosemary, oregano, salt and pepper that you can easily make at home.

Lamb Gyros Recipe with Authentic Greek Tzatziki Sauce

lb. ground lamb (lower the fat content the better)

½ large red onion (chopped)

Tbsp Minced Garlic

tsp Marjoram

tsp Rosemary

tsp Oregano

Salt

tsp Black Pepper

Pita Breads

Lettuce leaves

Tomato

Onion

Place red onion in a food processor and process until finely chopped.

Remove the onion from the food processor and place in a tea towel, squeezing to remove all the juices.

Return the onion back to the food processor with the remaining ingredients and pulse for approximately 1 minute until you get a paste like consistency. TIP: The gyro lamb mixture will form together in the food processor, similar to a ball of dough.

Place mixture in a glass baking dish. Flatten and smooth the meat into a nice meatloaf.

Place in a water bath and cook at 325°F for 60-75 minutes or you have an internal temp of 165°F-170°F.

Once removed from the oven, drain the fat.

Allow to cool for 5-10 minutes and place on a wire rack (I also put a pan under the rack to catch any drippings) and place a heavy object on top to compress the gyros meat. I used a cast iron skillet with 3 cans inside the skillet for additional weight.

Remove the weight and let rest for 30 minutes.

Slice the meat into desired sized slices.

Place meat slices on a baking sheet and broil for 3-5 minutes until crispy!

Serve in pita bread with lettuce, sliced onion, sliced tomato and this Authentic Greek Tzatziki Sauce.
