Greek Meatball Bowls

Shred the cucumber using a food processor or a box grater. Either method works perfectly. Add the shredded cucumber to a piece of cheesecloth and wrap it up and press it over a sink multiple times until little to no water is being pressed out. In a medium bowl add the greek yogurt, sour cream, dill, garlic powder, lemon juice, olive oil, and kosher salt. Stir together well. Salt and Pepper to taste!This will taste best if it&#39;s able to be refrigerated for at least one hour before serving.

Tzatziki Sauce

*If you&#39;re making the vegetables and meatballs at the same time be sure to adjust one of the oven racks to the top and one in the middle before preheating. Preheat oven to 425 degrees. Spray an extra large sheet pan with cooking spray (or line with aluminum foil for easy clean up and spray with cooking spray). *If you don&#39;t have an extra large sheet pan then use two smaller sheet pans. It&#39;s important to not overcrowd the vegetables or they will steam instead of get delicious and lightly &quot;crisp&quot; edges. Place the cut up vegetables onto the sheet pan and drizzle with oil and shake seasoning all over. My secret to the best roasted vegetables is to get in there and massage the spices and oil into the vegetables super well so it&#39;s better distributed for cooking.Place the sheet pan into the oven and roasted for about 20-25 minutes. Give&#39;m a good mix about have way through if you can and if you are like me and want them a little extra brown and crispy on the edge you can broil them for a few extra minutes, but be sure to watch&#39;m because they can burn real quick. Salt and pepper to taste!

Greek Roasted Vegetables

Adjust oven rack to the top position in oven and preheat to 425 degrees. In a bowl add raw beef, turkey, panko, paprika, oregano, garlic, and salt. Mix meat together well for only about 45-50 seconds. You don&#39;t want to over mix the meat because the meatballs will become tough. Spray a little cooking spray on hands and form and roll into about 34 (1 oz) meatballs. Lightly spray a sheet pan with cooking spray and add meatballs. Cook the meatballs until golden brown for about 10-12 minutes or until internal temp is 165. Let meatballs rest for a few minutes before cutting into them. To make the Greek Meatballs and the Vegetables at the same time add the pan of vegetables in first and cook for about 12 minutes total. Give the vegetables a good stir and place back in the oven. Add the pan of meatballs to the top oven rack and cook all together for a total of about 10 minutes.

Greek Meatballs

In a medium sauce pan, add 1 tsp garlic powder, 1 tsp of oil and 3 cups of water bring to a boil. Add 2 cups dry couscous and cook for about 8-10 minutes until done. Salt and Pepper to taste and if you’ve got it - squeeze half of a lemon over it and lightly stir in for a nice fresh pop of flavor.

Build the bowls!

Add 1/2 cup couscous to bowl followed by 1 cup of roasted vegetables and 3-4 meatballs then drizzle with 1-2 tablespoons of tzatziki sauce. Enjoy!

I made this recipe this week and it was a huge hit!  I grilled the veggies and made lots of tzatziki sauce!  My daughter said this meal knocked it out of the park with flavor.  I used quinoa instead of couscous.  Will be a regular meal for us. Thank you for the deliciousness.

These meatballs are delicious and so easy to make. I bought tzatziki and used frozen veggies but this was such a fun tasty combo!

This recipe is so so good! I don't eat beef so I used 2 pounds of ground turkey and it worked great! My husband loved it and said dinner was amazing. There's a lot of components but it all comes together easily and quickly. Can't wait to make it again!

I wasn't looking forward to making it because of all the components but it wasn’t bad. I made my own Greek seasoning for the veggies and used 2 lbs of ground beef instead of turkey but other than that I kept it the same. I now love couscous too! Made this for dinner tonight, me and my fiancé both agree, this is way better than Greek takeout!! This was DELICIOUS and just so full of flavour. I thought it might be complicated with all the different components but it was actually really easy to follow the steps and from start to finish (including washing/prepping veggies) I was sitting down to eat in 45ish minutes! Will definitely make again regularly!!

This is SO good! Omg I didn’t change a single thing. I was so worried that there weren’t eggs in the meatballs but I should learn to trust Star bc they were perfect. I did store bought tzatziki to save time but did everything else just like she said. Start to finish it took me 40 minutes and I had dinner tonight and at LEAST three meals for lunch this week. I’ll be making this again!

Heads-up: A bunch of ingredients overlap but have been written out twice to be more clear!  Greek Meatball Bowls are a flavor-packed feast! Juicy spiced meatballs, refreshing cucumber-tomato salad, fluffy couscous, and zesty lemon-herb sauce come together for a meal full of texture and taste. Perfect for meal prep, family dinners, or impressing guests!

Cooking spray

all-purpose flour

onion

ground beef (80/20; turkey

parsley

mint

cumin

beef bouillon powder

garlic (finely minced)

Salt and pepper

parsley (leaves and tender stems, roughly chopped)

cilantro (or mint; leaves and tender stems, roughly chopped)

garlic (thinly sliced)

lemon lemon

water

cherry tomatoes

couscous (plus 1 cup water)

Greek yogurt (whole-milk, plain)

Feta cheese (optional)

Pita (charred/toasted, optional, see note 2)

Prepare

Preheat oven to 400°F. Generously grease a dark-colored rimmed sheet pan with cooking spray and set aside. Add flour to a small bowl and set aside.

Make Meat Mixture

Peel the onion and cut in half, saving one half for later. Grate the other half on the large holes of a grater until you have a completely filled 1/2 cup measure of grated onion. Add onion to a large bowl. Add remaining meatball ingredients (except for the flour). Season with 1/4 tsp pepper and 3/4 tsp salt. Gently knead the ingredients until they are integrated.

Form Meatballs

Use a tablespoon measuring spoon to scoop a heaping spoonful of the meat mixture and roll it into an evenly-sized ball. Repeat with the remaining meat mixture to make around 25 meatballs. Working with 1 meatball at a time, roll to lightly coat in the flour, shaking off the excess. Arrange the meatballs, spaced apart, on the sheet pan.

Bake

Generously spray the meatballs with cooking spray and bake for 15 minutes. Then use a metal spatula and your fingers (careful, they’re hot!) to gently flip the meatballs over. Bake for another 5–8 minutes, or until nicely golden brown and baked through. (If using turkey, bake for 18 minutes, flip, and bake for 5–8 more minutes.)

Make Lemon-Herb Sauce

Lemon-Herb Sauce: Meanwhile, place parsley, cilantro, jalapeños, garlic, 1-1/2 tbsp lemon juice, water, cumin, plus salt (to taste, I add 1/2 tsp) in a mini blender or food processor. Pulse until mixture is evenly chopped, scraping the sides as necessary. Stir in the oil and pulse just until emulsified (don’t over-blend!). Taste and add more salt or lemon juice as desired.

Prepare Couscous

Couscous: Meanwhile, pour 1 cup water into a small pot. Add 1 teaspoon olive oil and bring to a boil. Once boiling, remove the pot from heat. Stir in the uncooked couscous and cover the pot with a lid. After about 2–4 minutes the liquid should be absorbed; fluff couscous with a fork. Stir in 1/4 cup of the lemon-herb sauce, 1 tablespoon lemon juice, and about 1/4 teaspoon each of salt and pepper (again to personal preference).

Prepare Veggies

Very thinly slice the reserved half of the red onion. Add to a bowl with the cucumber and tomato. Season with salt and pepper (just a pinch) and toss to combine. Optional: If you have some leftover herbs, chop ’em up and stir them in here too.

Serve

Set out 4 plates. Use the back of a spoon to spread 1/4 of the Greek yogurt across the bottom of each plate. Sprinkle with salt to taste. Divide couscous evenly among the four plates. Top with cucumber-tomato salad and meatballs. Optionally drizzle a touch of olive oil over everything. Spoon the remaining lemon-herb sauce evenly on top and enjoy immediately. Charred/toasted pita for dipping is also so good!

This was absolutely delicious!  I decided to use turkey (85/15) just to see how the meatballs would turn out when prepared that way, and they were so scrumptious that we didn't miss the beef at all!  We couldn't get enough of them.  I almost left out the Greek yogurt base, but the creaminess it added was well worth it.  I also added the optional feta to the salad because cheese makes everything better.  My only issue is that, try as we might, my husband and I just don't like cilantro.  Without it the sauce just tasted like parsley, which wasn't too exciting.  (Maybe I should have added the optional mint.)  I ended up adding some fresh basil, lemon zest, and  just a sprinkle of dried oregano, and it turned out ok.  I'm thinking of trying the Tzatziki sauce next time instead, but if I do that what would I add to the couscous?  I would also like to mention that this meal was a lot of work.  I suggest preparing some of it ahead of time or cooking with a partner.  My kitchen was a mess when I was finished!!  BUT, the meal was so good that it's definitely worth the effort.  Fresh and delicious, this is a winner.
