Creamy Greek Tztaziki Sauce. A versitle Greek yogurt and cucumber sauce to serve along with veggies and pita, spread on sandwiches, or add it next to grilled fish, meat or poultry!

Tzatziki Sauce Recipe

English cucumber, partially peeled (striped) and sliced

tsp kosher salt, divided

garlic cloves, peeled, finely grated or minced (you can use less if you prefer)

tsp white vinegar

tbsp Early Harvest Greek Extra Virgin Olive Oil

yogurt

tsp white pepper

pita bread

vegetables

Prep the cucumber. In a food processor, grate the cucumbers. Toss with 1/2 tsp kosher salt. Transfer to a fine mesh strainer over a deep bowl to drain. Spoon the grated cucumber into a cheese cloth or a double thickness napkin and squeeze dry. Set aside briefly.

In one large mixing bowl, place the garlic with remaining 1/2 tsp salt, white vinegar, and extra virgin olive oil. Mix to combine.

Add the grated cucumber to the large bowl with the garlic mixture. Stir in the yogurt and white pepper. Combine thoroughly. Cover tightly and refrigerate for a couple of hours.

When ready to serve, stir the tzatziki sauce to refresh and transfer to serving bowl, drizzle with more extra virgin olive oil, if you like. Add a side of warm pita bread and your favorite vegetables. (also see notes for more ideas) Enjoy!

Wowza! Tzatziki sauces that I've made in the past have been very mild. Casually licking the spoon on this one lit up my mouth in an awesome sort of way. I had this on her chicken schwarma which was also good, but the sauce was the star.

This was incredible.  I made it along with the Easy Greek Chicken and Potato Dinner and Easy Traditional Greek Salad and served with pita bread.  Everyone LOVED this.  I didn't have a food processor and just chopped the cucumber very finely before draining.  I used Fage Total 5% Greek yogurt and found that the dip was perfect.  I think we all ended up putting it on the pita, the chicken, the potatoes, straight spoonfuls... great recipe!

Very good! I love how fresh it tastes. You just can not get this type of flavor out of a can. I made it a few times and shared...I am now asked to make it for 100 people at a local event :-)
