Hatch chile relleno casserole with two different cheese and plenty of Hatch Green Chile. This Baked Chile Rellenos recipe is super easy.   We use canned chiles which makes it easy  for the perfect side dish or a meatless main dish.

Hatch Chile Relleno Casserole

green chiles

cheddar cheese (grated)

Monterrey Jack cheese (grated)

eggs (separated)

milk

Tablespoon Flour

Preheat your oven to 350° F and grate both cheeses if not already grated and set aside.  Spray a 9 x 13 baking dish with non stick cooking spray. 

Seed the hatch green chiles, split them open and lay ½ of them in the bottom of the baking dish.

Add the grated cheddar cheese on top of the green chiles.  It may seem like too much but trust me, it’s perfect. 

Layer remaining Hatch green chiles on top of the cheddar adjusting so that there are not empty spots. 

Top the hatch green chiles with the pound of grated Jack cheese and even it out in the casserole dish.

Separate egg whites from the yolks with an egg separator and set the egg yolks aside. 

Beat the egg whites with a mixer in a separate bowl until stiff and then set aside.

Add the flour and milk to the egg yolks and mix well.   Gently fold the whipped egg whites into the egg yolk, flour, milk mixture.  

Gently pour the mixture over top of the Hatch chile relleno casserole and spread it out evenly. 

Cover your casserole dish with aluminum foil and place in preheated oven.   Bake the casserole for one hour, covered, uncover and bake 5-10 minutes longer to brown. 

Remove from oven and allow it to rest for at least 10 minutes before serving.

I just took this out of the oven and had 2 bites….SO yummy!  I can’t wait for dinner!

I’m not sure where you get your poblanos but the ones I grow in my garden on sometimes so hot you couldn’t even eat them like that.

That was so good!  Now this is the only way we will make Chile Rellenos.

Green Chile Chicken Casserole Recipe

c milk or green chile sauce

oz cream cheese, diced

sour cream

Tabasco (a dash really brings out the flavors)

c cheddar cheese cheese

t cumin

garlic powder

t coarse salt

t smoked paprika

t oregano

3 c shredded cooked chicken

green chilies (canned

c cooked rice (spanish

Tortilla Chips (Any Flavor)

Garnishes: chopped cilantro, minced green onions, diced tomatoes, sliced avocados, sour cream, salsa

In a 10" cast iron skillet melt butter. Add onions and cook about 5 minutes on medium heat until they are translucent and soft. (They do not need to brown.)

Add milk or sauce, and bring to a simmer. Stir in the cream cheese, sour cream, Tabasco, 1/2 c of the shredded cheese. Whisk together over low heat until melted and smooth and creamy.

Add in the seasonings and taste. If you think this needs more salt, do not be afraid to add it.

Stir in the chicken and chilies and taste again. Add the cooked rice. I admit to using a bag of cooked Spanish rice from Trader Joes. It adds extra flavor, but plain rice is good, too. And even no rice is OK!

Top with tortilla chips and sprinkle with cheese. Cover with a piece of aluminum foil that has been sprayed with cooking spray.

Bake at 350 for 30 minutes and then uncover and bake 15 more minutes until bubbly. Serve with your favorite garnishes!

Hobo Casserole Recipe

all-purpose flour

russet potatoes, peeled and thinly sliced (about 1/4 inch thick)

Prepare Baking Dish

Preheat the oven to 350°F (175°C). Lightly grease a 9&#215;13-inch or 3-quart baking dish and set aside for layering the casserole.

Make the Sauce Base

In a medium saucepan over medium heat, melt 1/4 cup salted butter. Add the finely diced onion and sauté until softened and lightly browned, about 5 minutes, stirring occasionally to avoid burning.

Thicken the Sauce

Stir in 1/4 cup all-purpose flour to the cooked onions and cook for 2–3 minutes while stirring continuously until the mixture turns smooth and golden. Gradually whisk in 1 cup chicken broth, 1 cup heavy cream, and 1 cup sour cream until fully combined and smooth.

Season the Sauce

Lower the heat to a simmer and cook the sauce for 2–3 minutes, stirring occasionally. Add 4 ounces diced green chiles, 1 tablespoon garlic powder, 1 teaspoon hot sauce, 1 teaspoon black pepper, and 1 teaspoon salt. Stir well to combine and then remove from heat to keep warm.

Cook the Ground Beef

In a large skillet over medium-high heat, brown 2 pounds of ground beef for 7–8 minutes, breaking it up into small pieces as it cooks. Season the beef with 1 teaspoon salt and 1 teaspoon black pepper. Continue cooking until no pink remains, then drain any excess grease.

Prepare Potatoes

Wash, peel, and thinly slice the russet potatoes into approximately 1/4 inch slices. Arrange the slices evenly on the bottom of the greased baking dish to form a uniform layer.

Assemble the Casserole

Spread the cooked ground beef evenly over the potato layer. Pour the prepared creamy sauce over the beef layer, ensuring an even coverage. Sprinkle 2 cups of shredded cheddar cheese evenly on top.

Bake

Cover the baking dish loosely with aluminum foil and bake in the preheated oven for 50 minutes. After 50 minutes, remove the foil and bake an additional 10 minutes uncovered to allow the top to become golden brown and bubbly.

Serve

Make sure the potatoes are tender by testing with a fork. Serve the casserole hot as a comforting main meal.
