In Isan (and the rest of Thailand), green papaya salad is called som tum, with “som” meaning “sour” and “tum” referring to the pounding sound of the large pestle used to crush ingredients. It is eaten by itself as a snack, or with marinated grilled beef and chicken.

Green Papaya Salad

salt

fish sauce (nam pla), to taste

green (unripe) papaya (see Note)

Lettuce

In a blender or mortar, blend or pound garlic, salt, peanuts, chilies, sugar and shrimp (if using) into a paste. Transfer to a large bowl and mix in lime juice and fish sauce. Use a spoon (or the mortar) to lightly crush tomatoes and beans (if using), then add to bowl and mix lightly.

Peel and coarsely grate or shred papaya, discarding seeds and inner membrane. There should be 4 to 6 cups.

Add papaya to bowl and lightly but thoroughly toss together. Taste for seasoning. Mound in a bowl (if desired, line bowl with lettuce leaves beforehand). Sprinkle with peanuts and serve.

Achara – also known as atchara or atsara – is a traditional condiment of pickled green papaya, carrots and peppers in Filipino cuisine. Crunchy green papaya, combined with the sweet-sour tang of the gingered pickle juice, makes for an incredibly refreshing accent to so many dishes. Achara is often served with barbecued meats, or with fish. I find it works so well as a relish on sandwiches, burgers and hot dogs, too.

Achara: Filipino Green Papaya Relish

ginger (peeled & julienned)

black pepper (to taste)

green papaya (firm, seeds removed, grated (see notes))

carrots

jicama

red pepper (julienned)

red onion (thinly sliced)

fresno chili (thinly sliced (optional, for heat))

In a non-reactive saucepan, combine vinegar, sugar, 3/4 tablespoon salt, garlic and ginger over high heat, and bring to a boil, stirring to dissolve the sugar and the salt. Reduce heat to medium low and allow to simmer for about 15 minutes. Add the pepper. Cool, cover and refrigerate overnight.

Toss the vegetables with the remaining 2 tablespoons of salt. Cover and refrigerate overnight.

Place papaya mixture in a cheesecloth-lined colander and rinse well under water. Bring up ends of cheesecloth and squeeze excess liquid. Place papaya mixture into a bowl and pour just enough pickling mixture to cover. Keep in an airtight container in the refrigerator for up to six months.

Chicken Halang-halang Recipe

ginger

onion

garlic (minced)

green chilis (chopped)

chicken (thigh, legs, and wings, cut serving pieces)

fish sauce

coconut milk (400 milliliters)

chili labuyo (uncut)

Salt and pepper (as needed)

In a wide pot, heat oil over medium heat. Add ginger, onion, garlic, and green chilis. Saute until limp and aromatic, about 2-3 minutes.

Add the chicken, fish sauce, ground pepper, and lemongrass. Stir to coat the chicken with oil. Cover with lid to let the juices from the chicken out. Cook for several minutes until the sides of chicken are a bit browned.

Pour in water, cover and cook for 15 minutes.

Add the green papaya and mix. Pour in the coconut milk and add the labuyo. Cover again and let it simmer over low heat for 10-15 minutes or until the papaya and chicken are tender. Add water if needed.

Season with salt and pepper if needed. Lastly add the chili leaves and stir. Cook for another 2 minutes then turn off the heat.

Transfer to individual serving bowls and enjoy with rice.

cilantro stems

(about ½) medium green papaya, julienned

(about 2 small) carrots, julienned

mint leaves, torn

cilantro leaves

crispy shallots

⅓ cup chopped, roasted, unsalted peanuts

optional: ½ cup Vietnamese mint (optional)

Make the grilled chicken: In a blender, combine all the ingredients, except for the chicken, and purée until smooth. Season the mixture with salt and white pepper.

Place the chicken and marinade in a bowl, then cover it and chill for at least 2 hours or preferably, overnight.

Make the scallion oil: Prepare an ice bath. Heat the oil in a medium saucepan over medium-high heat. Add the scallions and salt and remove the pan from the heat. Once the oil stops bubbling, pour it into a bowl set over the ice bath and cool. Once it is cool, strain the oil through a fine-mesh strainer and set it aside.

Make the dressing: In a mixing bowl, whisk together the sugar, fish sauce and lime juice until the sugar dissolves. Add the remaining ingredients to the bowl and whisk them well.

Make the papaya salad: Remove the chicken from the marinade, allowing the excess marinade to drip off. Set the chicken on a plate, and let it rest for 30 minutes at room temperature.

While the chicken is resting, in a small saucepan, combine 1 cup canola oil with the taro. Place the saucepan over medium-high heat. Fry the taro until it's crisp and deep, golden brown, for about 2 to 3 minutes. Using a slotted spoon, remove the taro and place it on a paper towel-lined plate; season it with salt and set aside.

Place a grill pan over medium-high heat and add the oil. Working in 2 batches, grill the chicken until it is lightly charred on the bottom, for about 4 to 5 minutes. Flip it and cook it until the other side is charred and the chicken is cooked through, for another 4 to 5 minutes. Remove the chicken from the heat and let it rest for 10 minutes before slicing it thinly.

Assemble the papaya salad: In a large mixing bowl, combine the papaya, carrots, herbs, peanuts and grilled chicken slices. Add ½ cup of the vinaigrette to the bowl, and toss it to coat the salad. Do not overdress the salad. Once the salad is evenly coated, add ½ the taro and toss it. Garnish the salad with the remaining taro and crispy shallots.
