Matcha Cookies are soft and chewy sugar cookies with a beautiful bright matcha green tea flavor. These light, fluffy cookies are a delightful sweet that are made with real matcha powder and take 10 minutes to bake. Freeze a batch for future enjoyment!

Matcha Cookies (Soft and Chewy Green Tea Cookies)

all purpose flour

matcha powder

baking soda

baking powder

salt

unsalted butter (room temperature)

sugar

brown sugar

vanilla extract

egg (room temperature)

Heat oven - Preheat the oven to 350°F. Line baking sheets with parchment paper or silicone baking mats.

Sift dry ingredients - In a large mixing bowl, whisk together flour, sifted matcha powder, baking soda, baking powder, and kosher salt and set aside.

Mix wet ingredients - In a separate large mixing bowl, use a handheld electric mixer or stand mixer and cream together butter, granulated sugar, and brown sugar until smooth and fluffy, about 1 to 2 minutes. Add the vanilla and egg and mix until combined. Use a silicone baking spatula and scrape the sides of the mixing bowl walls to bring the butter mixture to the center of the bowl.

Combine dry and wet ingredients - Gradually add in the dry ingredients and mix until the ingredients are just combined. Do not over-mix the dough.

Prepare cookie dough balls - Place the coarse sugar in a shallow bowl. Use a small ice cream scooper, cookie dough scooper, or tablespoon to scoop the dough and form 1.7 tablespoon (26 ml) cookie dough balls. Use your hands to roll the dough into balls and gently roll each ball in the sugar bowl until covered. Place the dough balls onto the prepared cookie sheets. Leave 1½-2 inches between each cookie to allow the dough to spread.

Bake the cookies - Bake for 8 to 10 minutes. The cookie will look soft in the middle and the edges will turn slightly golden. Let the cookies rest for 5 minutes on the cookie sheet then transfer to a wire cooling rack.

Matcha Sugar Cookies

unsalted butter ((113 g) softened)

sugar ((150 g))

matcha powder* ((5 g))

all-purpose flour ((180 g))

¼ teaspoon cream of tartar

sugar (as needed for rolling)

In the bowl of a stand mixer fitted with a paddle attachment, cream together softened butter, sugar, and matcha until smooth, about 3 minutes. Add egg and mix until incorporated. Scrape down bowl as needed to ensure thorough mixing.&nbsp;

In a medium bowl, whisk together flour, baking soda, cream of tartar, and salt. Add dry mixture to mixing bowl. Mix on low speed until dough forms. Scrape down bowl as needed. Do not overmix.&nbsp;

Cover and refrigerate dough for at least 1 hour, overnight is best.&nbsp;

Preheat oven to 350°F. Line baking sheets with parchment paper or silicone baking mat. Set aside. 

Use a 1 ½ Tablespoon scoop (#40 scoop) to portion out dough. Roll into ball and coat with granulated sugar.  Place cookie balls 2-inches apart of prepared baking sheet. Bake 13-15 minutes, until the edges of the cookies are set. Allow to rest in baking sheet for 3-5 minutes before transferring to wire rack to cool.

I love most things matcha and these cookies did turn out to be soft and chewy. They were super simple to make. The only thing I did differently was adding some white chocolate chips to the dough and to the cookie tops when I took them out of the oven only because I like the flavor combination. i'm almost certain the recipe is wrong. i've tried this so many times as written and it's never close to as flat as shown. i believe it will be similar if you reduce the flour by 3-4 tablespoons. i've made other cookies with similar flatness and it's wayyy less flour than this recipe.

I added 1/4 tspn of vanilla to this recipe and it turned out amazing!

Prep: Preheat oven to 350°F and line a baking sheet with parchment paper. Set aside.

Mix dry ingredients: In a small bowl, stir together the flour, matcha powder, milk powder, baking powder, baking soda, and salt. Set aside.

Cream butter and sugar: In a large mixing bowl, use an electric hand mixer to beat softened butter until very creamy. Add sugar and cream together with the mixer until very creamy and fluffy, about 3-4 minutes.

Add eggs: Add in the eggs and vanilla extract and mix again until combined.

Add dry ingredients to wet ingredients: Add the flour mixture into the butter mixture and briefly mix with the hand mixer until almost combined with some flour patches left.

Fold in chocolate: Add the chopped chocolate and finish folding the dough together with a silicone spatula until just combined. Don&#39;t overmix.

Scoop cookie dough: Using a 4-tablespoon ice cream scooper, scoop out balls of cookie dough and place them on your baking sheet, leaving about 2&quot; between each cookie for spreading.

Bake: Bake cookies for 12-14 minutes or until the edges are set but the middle is still very soft. In the last 2 minutes of baking, press a few extra white chocolate chunks on top of each cookie (optional).

Cool: Let the cookies cool on the baking sheet for 10 minutes before carefully transferring them to a wire rack to cool completely.
