This recipe shows you how to make a creamy and frothy cup of Matcha Green Tea Latte. Enjoy this delicious drink at home by mixing bitter sweet matcha green tea with warm milk.

Matcha Green Tea Latte

1½ tsp matcha (green tea powder)

water

milk ((cows, almond, soy, etc))

tsp sugar ((optional))

Gather all the ingredients.

Sift green tea powder into the cup to get rid of the lumps in the powder.

Add hot (not boiling) water and whisk briskly until powder is all dissolved. This prevents the tea having lump in it so do not skip. The green tea paste should be smooth and foamy. I use a frother but you can also use a small regular whisk or chasen (bamboo whisk used for Japanese tea ceremony).

Add milk and sugar in a small saucepan. Heat the milk over medium heat until small bubbles start to appear around the edge of the saucepan. Do not bring the milk to full boil. Turn off the heat. (Or use cold milk for iced latte)

Froth the milk until foamy, about 10 seconds with a frother. If you don't have a frother, you can skip.

Add the hot milk and foam in the cup and dust the green tea powder on the top. (Add ice for an extra cold iced latte).

Enjoy your afternoon tea with these buttery, crispy Green Tea Cookies with Matcha powder. The unique flavor of matcha in the cookies is surprisingly delightful!

Green Tea Cookies

g all-purpose flour (plain flour)

unsalted butter ((¾ cup; softened))

sugar/powder sugar ((roughly 1 cup))

salt

white chocolate chips ((¼ cup))

Combine 240 g (2 cups) all-purpose flour and 15 g (2 ½ Tbsp) matcha green tea powder in a large bowl.

Sift the flour and the matcha powder.

In a stand mixer with the paddle attachment or in a large bowl with a hand mixer, beat 170 g (¾ cup) unsalted butter until smooth and creamy. It’s important to soften the butter ahead of time.

Add a pinch of salt and blend.

Add 130 g (roughly 1 cup) powder sugar and blend until soft and light. Scrape down the bowl as needed.

Add 2 large egg yolks and mix well until combined.

Gradually add the flour and matcha green tea powder mix and blend until the dough is smooth.

Add 50 g (¼ cup) white chocolate chips and blend well.

Cut the dough in half and shape into 2 cylinders, about 1.5 inches (4 cm) diameter, 7" (18 cm) long.

Wrap the logs in plastic wrap and chill in the refrigerator until firm, at least 2 hours (or overnight). Optional: you can place the logs on a bed of rice while chilling. It’ll keep the dough in a nice cylindrical shape, so your cookie slices won’t be flat on one side.

Preheat the oven to 350 ºF (175 ºC). Line the baking sheet with parchment paper or silicone baking liner. Remove the dough from the plastic wrap, and with a sharp knife, slice the dough into ⅓ inches (7 mm)-thick rounds. Place them on the baking sheet, leaving about 1” (2.5 cm) between rounds.

Bake the cookies at 350 ºF (175 ºC) for about 15 minutes, or until the edge of the cookies starts to get slightly golden brown.

Remove from the oven and let cool on the baking sheet for 5 minutes; then carefully transfer to a cooling rack and let cool completely. If you pack the cookies in an airtight container, they will keep for at least 4 days.

You can also freeze the unbaked logs of dough, wrapped in plastic wrap, for up to 2 months. Let sit at room temperature for about 10 minutes before cutting and baking. Do not let the dough fully defrost.

banana

ice cubes

almond milk ((or cow's milk, coconut milk, etc))

tsp matcha (green tea powder)

Put banana and ice cubes in an electric blender/mixer or NutriBullet.

Pour almond milk and add matcha green tea powder on top.

Blend until all the ingredients are combined and smooth. Pour into a glass/glasses.

How to Make Green Tea Smoothie (Recipe) 抹茶スムージーの作り方（レシピ）

Earthy and sweet Matcha Ice Cream is the perfect refreshing treat on a hot day. You only need a few simple ingredients to make this recipe at home. With a deep intensity and rich texture, this green tea ice cream instantly takes me back to Japan. If you want to know what true Japanese matcha ice cream tastes like, this recipe is for you.

Matcha Ice Cream

sugar

⅛ tsp kosher salt (Diamond Crystal; use half for table salt)

Tbsp matcha (green tea powder) ((1 Tbsp matcha is 6 g))

milk mixture (pick one option below)

milk

heavy (whipping) cream (36%

half-and-half

2% reduced-fat milk

light cream

If you&#39;re using an ice cream maker that requires you to pre-freeze the bowl (like this one), make sure to freeze it for at least 24 hours. If it’s not cold enough, you may end up with liquid even after 30 minutes of churning. I use this ice cream maker that does not require pre-freezing the bowl. If you don&#39;t have an ice cream maker, I hope this post helps.

To Freeze the Ice Cream Bowl (at least 24 hours prior)

In a medium saucepan, combine the ingredients for the milk mixture. Here, I use whole milk and heavy whipping cream (option 2). Turn the heat to medium low.

Add the sugar and salt to the milk mixture and whisk together. Heat until the sugar is dissolved, then turn off the heat. Remove the saucepan from the heat if you see small bubbles around the edges of the pan. NEVER let it boil.

Next, make a paste with the matcha. Place the matcha in a medium bowl. Add 3 Tbsp of the heated milk mixture to the matcha bowl. Stir with a silicone spatula until the matcha completely absorbs the liquid. Tip: Matcha is a fine powder that will become lumpy if you add it to a large volume of liquid. Therefore, we have to make a paste with the matcha before adding it to rest of the milk mixture.

Add another 3 Tbsp of the milk mixture to the bowl and stir until the matcha absorbs the liquid.

For the third time, add another 3 Tbsp of the milk mixture to the bowl and stir. The mixture will start to become pasty.

For the fourth time, add another 3 Tbsp of the milk mixture and stir to further loosen up the paste.

Add a final 3 Tbsp of the milk mixture to the bowl and stir. Now, the matcha mixture is a thick liquid.

Transfer the matcha mixture into the milk mixture and stir together.

Change to a whisk and combine this matcha ice cream mixture well. Then, prepare an ice bath and a bowl (I use this 8 cup measuring cup with a spout) that can sit in the ice bath. Set a fine-mesh sieve over the bowl or measuring cup. Next, pour the ice cream mixture through the sieve.

Press and strain any matcha lumps left in the sieve. Let the ice cream mixture cool on the countertop. When the mixture has cooled, cover with plastic wrap and chill in the refrigerator for at least 4 hours. IMPORTANT: If you don&#39;t chill the mixture thoroughly, the ice cream maker will not produce an ice cream consistency.

To Make the Ice Cream Mixture

My ice cream maker doesn&#39;t require pre-freezing, but the machine needs to run for 15 minutes until the interior bowl is -33ºF (-36ºC). When your ice cream maker bowl is ready to use, whisk the matcha ice cream mixture one last time.

Transfer the mixture to the ice cream maker bowl and churn according to the manufacturer&#39;s instructions.

After 25 minutes, when the mixture is thickened and not moving, turn off the ice cream maker.

Transfer the &quot;soft&quot; ice cream into an airtight container. Freeze until the ice cream is firm and the flavor develops, at least 4 hours.

To Churn the Ice Cream

Scoop the ice cream and serve in a small bowl.

To Serve

You can keep it in the freezer for up to 2 weeks, but enjoy it sooner for the best flavor and color and to avoid the formation of ice crystals on the surface.

Option 2: Whole Milk + Heavy Cream (I use this option in the recipe and video)
2 ¼ cups (540 ml) whole milk
¾ cup (180 ml) heavy (whipping) cream
5 Tbsp matcha (green tea powder) (1 Tbsp matcha = 6 g)
¾ cup sugar
⅛ tsp kosher/sea salt (I use Diamond Crystal; use half for table salt)

Option 3: Low-Fat Milk + Heavy Cream
1 cup (240 ml) 2% reduced-fat milk
2 cup (480 ml) heavy (whipping) cream
5 Tbsp matcha (green tea powder) (1 Tbsp matcha = 6 g)
¾ cup sugar
⅛ tsp kosher/sea salt (I use Diamond Crystal; use half for table salt)

Option 4: Whole Milk + Light Cream
1 ½ cup (360 ml) whole milk
1 ½ cup (360 ml) light cream
5 Tbsp matcha (green tea powder) (1 Tbsp matcha = 6 g)
¾ cup sugar
⅛ tsp kosher/sea salt (I use Diamond Crystal; use half for table salt)
