Greens and Beans&nbsp;is a classic Italian recipe that's as delicious and healthy as it is comforting. You'll want to make this regional specialty again and again!

Boil the escarole for 5 minutes to par cook. You may need to do it in batches so as not to overload the pot. Drain and set aside. Note: you can also just add the greens raw in later steps but I learned to par cook them first.

While the escarole is boiling, heat the oil over medium high heat.&nbsp;

Add 3 cloves of whole garlic and crushed red pepper flakes to taste (the more you add the spicier it will be- I encourage you to at least add a little). Stir and turn the garlic often until it is golden brown (keep an eye on it, if it burns you'll have to clean the pan and start over again).

Once the garlic cloves have been removed, add the beans, broth and using a garlic press, add the remaining garlic cloves into the pan. Cook for a couple minutes stirring frequently.

Add the escarole and reduce the heat to medium low. Cook for 15-20 minutes uncovered, stirring periodically.

Sprinkle with Romano cheese to taste (this replaces salt) and serve immediately.&nbsp;

Greens and Beans with Garlicky Toast

Place your Dutch oven, braiser, or skillet over medium high heat. Brush both sides of your bread slices with the garlic oil. Toast in the hot pan for about 1 1/2 minutes on each side, or until golden brown with some charred bits. Remove to a plate.

To Prepare the Garlic Toast

Return the pan to medium high heat and add in the cut up bacon strips. Fry, stirring frequently, until the bacon is beginning to crisp and has rendered at least 1 1/2 tablespoons of fat, about 4 minutes.

Stir in the onions (and chopped greens stems, if using). Fry for about 4 more minutes, or until the onions are translucent, tender, and starting to turn golden.

Add in the sliced garlic, smoked paprika, crushed red pepper flakes, kosher salt, black pepper, and dried thyme. Stir for 1 minute, or until fragrant.

Add about 1/3 of the greens and use tongs or two wooden spoons to toss with the hot onion and bacon mixture until the greens wilt, turn bright, and shrink a bit. (If you're starting with dry greens, see Cook's Notes). Repeat this until all of the greens are incorporated into the pan.

Add the chicken stock and vinegar, stir, and bring to a simmer. Simmer until the greens and stems reach your desired level of tenderness; for us, that's about 5 minutes.

Finally, add the drained and rinsed beans to the mixture and toss. Continue cooking just until the beans are heated through.

To Prepare the Beans and Greens

Place one piece of garlic toast in a bowl, top with a generous scoop of beans, greens, and broth. If desired, top each serving with a fried egg and a dusting of smoked paprika.

Escarole and White Bean Soup often referred to as Italian greens and beans, is the ultimate comfort food recipe. Healthy, delicious and so easy to make.

Escarole and White Bean Soup

olive oil (extra virgin)

onion (medium, diced)

garlic (minced)

celery (sliced)

red pepper flakes (optional)

vegetable stock

beans

escarole

salt and pepper

parsley (minced)

lemon juice (freshly squeezed, optional)

Pecorino Romano

Drizzle 3 tablespoons of olive oil in a large pot set over medium-high heat.

Lower the heat to medium, add 1 medium diced onion and saute for about 5-7 minutes until soft. 

Add the minced garlic (3-4 cloves) and diced celery (2-3 stalks) and saute for a couple of minutes.

Season with salt and pepper and if desired, a pinch or two of red pepper flakes.

Add approximately 3 cups of vegetable stock and allow to simmer and reduce until vegetables are soft. This can take about 15-20 minutes.

Add the cooked (or canned) white beans and simmer for another 10 minutes or so.

Taste and adjust seasonings.

Add the coarsely chopped head of raw escarole and simmer until the greens are tender. 

Serve with a slice of whole wheat bread and garnish with freshly grated cheese, chopped parsley, a drizzle of olive oil and if desired a squirt of lemon juice.

Place all ingredients except finishing ingredients into the inner liner of your pressure cooker. You want to set those aside so you can get a fresh zing of flavor after the beans and greens have pressure cooked.

Cook at high pressure for 10 minutes. Allow it to release pressure naturally for 10 minutes and then release all remaining pressure slowly. If it foams, let it sit for a few more minutes. 

(Skip this step for vegan version) Remove ham hocks and using two forks, remove the skin and fat. Shred the meat and put it into the beans and stir well.

Add apple cider vinegar, liquid smoke and hot sauce and taste. Season to adjust.

Greens and Beans is a humble, but indisputable, quintessential Italian American side dish that is beloved by many. This hearty yet healthy classic features humble ingredients that make a big impact. It traditionally pairs lightly bitter escarole greens with creamy cannellini beans to yield a dish that’s both nutritious and filling, while also being super flavorful and versatile.

Prep all ingredients according to specifications above, including cooking the beans.

Make the beans: Rinse the cannellini beans, then place them in a large bowl covered with four times the amount of water and let them soak for several hours or overnight. After soaking, drain the beans, then boil them in unsalted water until soft. DO NOT THROW AWAY THE BEAN COOKING LIQUID as it is an important part of this recipe. (See NOTE about beans below.)

Combine the olive oil, garlic and crushed red pepper in a large skillet and heat on medium-low. Sauté for 2-3 minutes or until the garlic starts to brown, then increase the heat to medium-high and add the escarole.

Cover the pan and let the greens cook until tender (about 5-7 minutes).

Once the greens are tender, add the beans and approximately 1 ½ cups bean cooking liquid, stock or broth. (See NOTE about beans below.)

Season with salt and pepper and simmer for about five minutes to let all of the flavors combine and allow the liquid to reduce a bit.

Fold in the pecorino cheese, drizzle the extra-virgin olive oil and serve the greens and beans warm in a shallow pool of their sauce with some crusty, rustic bread. Buon Appetito!

In a Dutch oven or a large rimmed skillet with a lid, heat the oil over medium heat. Once hot, add the shallot and sauté for 1-2 minutes, until fragrant and translucent. Turn the heat down to medium low and add the garlic and red pepper flakes. Sauté for 1 more minute.

Return the heat to medium and add the chopped chard (or greens of choice). Toss to coat the greens in the oil and distribute the shallot and garlic. Once the greens are just beginning to wilt, add the white beans and salt and stir to combine.

Add the water and lemon juice then cover and simmer for 15-25 minutes, until the greens are tender, the beans have softened, and the mixture is a bit saucy but most of the water has evaporated. Add more water and cover as needed to achieve the desired consistency of your greens and beans.

Serve immediately! Delicious on its own as a quick meal, or served with toast, grains, tofu, salmon, or eggs. Keeps for 3-4 days in the refrigerator or up to 1 month in the freezer.
