Make the dressing

Grate the Parmesan cheese as finely as possible (it’s helpful to use a microplane or the finest holes in a grater). Grate the garlic, or finely mince it. Juice the lemon. Whisk together all the dressing ingredients in a bowl. Store refrigerated (keeps at least 1 week).

Prep the romaine and avocado

Wash and dry the romaine. Cut each romaine heart in half lengthwise. Drizzle each side liberally with olive oil. To the top, drizzle with balsamic vinegar, and add several pinches kosher salt and plenty of fresh ground black pepper.

Slice the avocados in half and remove the pits (see the video for safe pit removal). Season the cut sides of the avocado halves lightly with kosher salt and lightly drizzle with olive oil.

Grill the romaine and avocado

Place the romaine hearts on the grill, and grill for about 3 minutes on each side, until slightly charred. Grill the avocado halves cut sides down for 4 to 6 minutes total, until grill marks form.

To serve, place romaine halves on individual plates or a serving platter. Garnish with Caesar dressing, chopped cherry tomatoes, dollops of avocado, and Parmesan shavings. Serve with steak knives to make it easy to cut!

Grilled Romaine Caesar Salad Recipe

hearts of romaine, (sliced in half lengthwise)

lemons, (cut in half)

extra virgin olive oil

anchovies

garlic

salt

parmesan cheese

lemon juice ((approx 1 large lemon))

Prepare Grill

Preheat grill for indirect cooking using two-zone grilling method. Target 400 degrees F in the cooking chamber.

Oil Bread

Drizzle bread with olive oil (a light coating).

Grill

Place the romaine hearts, lemons, and baguette slices on the grill on direct heat and cook approximately 2 minutes per side, flipping often. Stay close, these will all cook at slightly different times. Remove when the bread has a nice toast, the lemons have darkened and have a nice char (see pictures), and the romaine has a nice char (but not burnt).

Serve

Remove from grill. Serve with the Grilled Lemon Caesar Dressing, parmesan cheese, and optional proteins (we vote for crispy bacon or grilled chicken).

Blend

Place the anchovies, garlic, salt, pepper, and parmesan cheese in the food processor and grind until they turn into a paste. Then add the wet ingredients (the grilled lemon juice, egg yolks, Dijon mustard, and olive oil). Blend on low until it emulsifies. This will take at least a minute, on low.

I love a grilled caesar salad, and this grilled little gem caesar salad is everything! This recipe adds a smoky flavor to the classic caesar.

Grilled Little Gem Caesar Salad

egg yolk (sub with mayo if preferred)

oil anchovy

lemon juice

dijon mustard

olive oil

neutral oil

worcestershire sauce (optional)

Kosher salt and black pepper

Preheat your grill to medium-high heat.

In your bowl, add your egg yolk. Add minced garlic, chopped anchovies, dijon mustard, lemon juice and fork/mash the mixture until a paste forms. Season with salt and pepper. Whisk well until all combined and creamy.

Slowly start drizzling in your neutral oil as you're whisking. Then add your olive oil and keep whisking until everything is all emulsified.

Finish with a dash of Worcestershire and shredded parmesan. Mix well. Adjust and season with salt, pepper and lemon juice as needed!

How can I make caesar dressing using a hand blender? You can also make your dressing in a mason jar with a hand blender, just add your ingredients (garlic and anchovies can be whole) to a mason jar (or a deeper cup) and then starting from the blade at the bottom of the cup, pulse and blend until combined, then slowly bring it up to blend the rest.

Make your dressing

Halve the little gem lettuce heads lengthwise, leaving the core intact to hold the leaves together. Brush or drizzle each cut side of the lettuce halves with olive oil and season with salt and pepper.

Place the lettuce halves, cut side down, on the preheated grill. Cook for about 2-3 minutes or until grill marks appear and the lettuce begins to wilt slightly. Flip the lettuce halves and grill for an additional 2-3 minutes on the other side. The lettuce should be lightly charred but still crisp. You don't want the lettuce soggy, so just keep an eye on it to ensure it doesn't wilt too badly or burn.

At the same time, add on your slices of bread (optional to brush olive oil, salt, and pepper here as well), and your lemon, halved, until charred. Remove your lemon and grilled bread; cut your bread into cubes for the croutons.

Grill your lettuce, bread and lemon

Option 1. Remove the grilled lettuce halves from the grill and place them on a serving platter. Drizzle the caesar dressing generously over the grilled lettuce halves. Finish with your croutons and shaved Parmesan cheese over the top. Finish with a sprinkle of freshly ground black pepper and a squeeze of your charred lemon juice.

Option 2. Slice off the core of the gems and separate the leaves. Toss the leaves in a large bowl with your croutons, parmesan cheese, charred lemon juice and dressing. Toss to coat, and serve with more shredded parmesan and black pepper.
