chicken thighs

olive oil

cumin

garlic powder (optional)

8 cups of your favorite tortilla chips,

Monterey Jack cheese

black beans

tomatoes (sliced thinly, I used colorful cherry tomatoes)

fresh bell peppers (sliced thinly)

pickled Jalapeños (roughly chopped)

corn (I used drained and rinsed canned corn)

avocado

fresh cilantro leaves (as garnish)

radishes (sliced thinly (optional))

Mexican cheese

lime

Pre-heat the oven to 350 degrees.

Line a baking sheet with parchment paper and set aside.

Pat dry chicken thighs using paper towels.

Rub both sides of the thighs with olive oil.

Sprinkle them with cumin, garlic powder, salt and pepper.

Transfer onto the parchment-lined baking sheet and roast for 25-30 minutes or until thighs reach 165 degrees when a thermometer is inserted in the middle of a thigh.

Cover with a sheet of aluminum foil and set aside to cool for 5 minutes. Do not turn the oven off.

For the chicken:

Line another baking sheet with parchment paper.

Spread half of the chips onto the sheet.

Sprinkle half of the Monterey Jack cheese and half of the beans over the chips.

Place in the oven and bake until cheese melt, 8-10 minutes.

Meanwhile, shred the chicken.

Take the first layer of chips, cheese, and black beans out of the oven and top them off with the rest of the chips, black beans, half of the shredded chicken, half of the tomatoes, half of the bell peppers and half of the jalapeno peppers. Place it back in the oven for another 7-8 minutes.

For the chips:

Top it off with the rest of the chicken, tomatoes, and peppers.

Garnish it with cubed avocado, cilantro, and if using, sliced radishes and crumbled

queso fresco

Serve immediately with wedges of lime on the side.

Grilled Chicken Nachos

chicken breasts

oz package Old El Paso Chicken Taco Seasoning Mix (divided)

unsalted butter

all-purpose flour

milk

oz medium cheddar cheese (shredded)

mozzarella cheese (shredded)

oz monterey jack cheese (shredded)

16- oz can Old El Paso Traditional Refried Beans

11-12 oz bag tortilla chips

If your chicken breasts are thick or larger, cut them in half lengthwise, forming thinner chicken breasts. (This helps them to cook more evenly.) Reserve 1 tablespoon of the Old El Paso Chicken Taco Seasoning Mix and set aside. Sprinkle the rest of the seasoning evenly on both sides of the chicken.

Heat a grill to medium heat (about 350ºF). Oil the grill, and grill the chicken until the internal temperature registers 160ºF, about 8-10 minutes on each side. Transfer to a plate and cover with foil and let sit for 5 minutes.

Meanwhile, make the cheese sauce. In a medium saucepan, melt the butter. Whisk in the flour and allow it to cook for a minute. Slowly whisk in the milk. Cook, stirring, until the mixture is thick enough to coat a spoon. Once the mixture is thick, turn off the heat and stir in the cheddar cheese, mozzarella cheese, monterey jack cheese and the reserved 1 tablespoon of Chicken Taco Seasoning Mix. Keep the cheese sauce warm.

In another saucepan, heat the refried beans with about a tablespoon of water, just until warmed through.

Dice the chicken into bite-sized pieces.

Place half of the tortilla chips on a baking sheet. Top with half of the warmed refried beans, and half of the diced chicken. Spread the remaining tortilla chips over the top, then the remaining refried beans and remaining chicken. Pour the warm cheese sauce over the top, then top with your desired toppings.

Serve immediately.
