An easy shawarma marinade recipe filled with shawarma seasoning (cumin, paprika, cinnamon, ginger, oregano, turmeric!). The warmth in the middle eastern spices is offset by a little bit of lemon &amp; honey to create absolutely addictive flavor. Use it to make easy grilled shawarma chicken or a hummus bowl!

Shawarma Marinade

meat

olive oil

lemon, juiced

garlic,

honey

½ tsp ground cumin

½ tsp smoked paprika

cinnamon

ginger

oregano

turmeric

cayenne pepper

Kosher salt

black pepper

Mix the shawarma marinade

Add the olive oil, lemon juice, garlic, honey, cumin, paprika, cinnamon, ginger, oregano, turmeric, cayenne, salt &amp; ground black pepper to a bowl. Whisk to combine.

Marinate

Pour the shawarma marinade over your meat or veggies of choice. Marinate for at least 6 hours or for up to 2 days.

Grill

Easy Shawarma Marinade Recipe

This juicy, tender Turkish-inspired grilled chicken is wonderful on its own, in wraps, sliced thin in sandwiches and it's super delicious in salads.

Grilled Chicken Shwarma

chicken thighs

dark brown sugar

coriander

cumin

salt

onion powder

smoked paprika

chili powder

garlic

extra virgin olive oil

Line a sheet pan with foil or plastic wrap for easy cleanup. Lay chicken out on prepared pan.

Combine all rub ingredients in a medium-size bowl. Stir well to make a wet paste.

With your hands, coat the chicken on all sides with the rub, cover the pan with plastic wrap and refrigerate for 1-4 hours.

Prepare a gas or charcoal grill to medium-high heat. Oil grill grates to prevent sticking.

Grill until all sides are golden, charred with nice grill marks. Turn every couple minutes, about 8-10 minutes per side. Internal temperature should be 165˚F.

Enjoy with Turkish Flatbread and/or Turkish Tomato Cucumber Salad!

Tender, juicy, and perfectly spiced grilled chicken wrapped in pita bread or tortilla with delicious homemade yogurt-garlic sauce.  Try this quick and easy grilled Chicken Shawarma and enjoy the explosion of Middle Eastern flavors with every bite!

Chicken Shawarma

chicken thigh fillets

cumin powder

allspice powder

paprika powder

garlic powder

½ cup plain yogurt (or greek)

lemon juice

¼ teaspoon ground pepper

plain yogurt (or greek)

mayonnaise (optional)

garlic (freshly grated)

Salt and pepper (to taste)

Sriracha sauce (for spicy option)

pita bread (-

lettuce

onion

tomatoes (chopped)

In a large bowl, combine all the ingredients for the marinade and mix until well blended.

Add the chicken thigh fillets and mix to coat completely. Cover bowl with plastic wrap and marinate for at least 1 hour or place in the fridge overnight.

Make the yogurt-garlic sauce by simply mixing all the ingredients in a bowl. You can divide the sauce and add some sriracha to one part so you have two options. Cover and refrigerate until ready to use. You can also transfer sauce in a squeeze bottle for ease of use.

Grill the chicken thighs using a griddle pan or over charcoal. Grill the first side for 4 to 5 minutes until nicely charred, then turn and grill for another for 3 to 4 minutes or until charring is even.

For oven grilling: Preheat the oven to 425°F. Arrange the marinated chicken on a baking sheet pan lined with parchment paper. Roast for 30 minutes at 220°C/425°F. Move the pan to the top rack and broil very briefly until a little charred. Remove from the oven.

Transfer grilled chicken into a deep serving dish with a cover or use a plate. Let it rest for 5 minutes before slicing. Slice the chicken into strips and place them back into the dish.

Serve alongside the pita bread or tortilla wrap, sliced lettuce, tomatoes, onions and yogurt-garlic dip.

To make a wrap, lay a pita bread or tortilla on a plate lined with parchment paper or foil. Top it with chicken, lettuce, tomatoes, and onions. Drizzle some yogurt-garlic sauce on top then fold to and wrap.

Grilled Chicken Shawarma

plain Greek yogurt divided

tsps Organic Shawarma divided

tsp sicilian sea salt

chicken breast

cucumber

lettuce leaves

pita pockets halved

Mix 1 cup yogurt and 1 teaspoon Shawarma Seasoning in small bowl. Cover and refrigerate until ready to serve.

Mix oil, lemon juice, remaining 1/4 cup yogurt, remaining 4 teaspoons Seasoning and salt in small bowl. Reserve 2 tablespoons of the mixture; set aside. Place chicken in large resealable plastic bag or glass dish. Add marinade; turn to coat well.  Refrigerate 1 hour or longer for extra flavor.

Remove chicken from marinade. Discard any remaining marinade. Grill over medium heat 6 to 8 minutes per side or until cooked through (internal temperature reaches 165°F), brushing with reserved marinade.

Slice chicken into thin strips. Serve in pitas with cucumber, lettuce and yogurt dressing.

A simple delicious recipe for chicken shawarma that can be grilled or baked - full of Middle Eastern flavor. Serve with homemade pita bread and tzatziki or over Israeli Salad.

Chicken Shawarma Recipe

Place all marinade ingredients in a bowl and mix, or pulse in a food processor to make a paste.

Rub chicken on all sides with the marinade and let sit at minimum 20 minutes (or up to 24-48 hours for the best flavor, refrigerated). You can also cut the chicken into 1-inch cubes and marinate for skewers.

Grill chicken on a pre-heated grill, on medium-high heat, closing the lid to the BBQ, until all sides have nice grill marks, about 8 minutes each side.

Move to a cooler part of the grill or finish cooking chicken in a 350 F oven until cooked all the way through ( 170F) , about 10 minutes. 

* Alternatively, you can bake the chicken thighs in a 375 F oven for 30-40 minutes or use a grill pan on the stovetop. 

Enjoy the chicken shawarma over Israeli salad, tabouli, Lebanese Slaw, or with Middle Eastern rice and veggies, or as a sandwich with tahini yogurt,  tzatziki,  pita bread,  tomatoes, cucumber, and red onion.

My white sauce did not work at all - came out as an oily liquid instead.  Any advice?

Fantastic flavors! I skewered 1+ inch pieces of chicken together to grill, which made for an appealing  presentation. I served the skewers with both tzatziki and green tahini dressing, both of which were great with it.

Shawarma, where have you been all my life? I had some cauliflower to use up and also so much pheasant in our freezer (to sub for chicken) and came across your recipes for this chicken shawarma as well as the cauliflower shawarma. I served these with zhoug (amazing), tahini sauce, Middle Eastern Rice, Israeli Salad, and pita bread. There were lots of options for everyone to build their bowls, wraps, or pockets. What an amazing combination of flavors! Everyone raved and I know we will make this again and again.

I made this exactly as written and then cooked it on a plancha. It came out perfect - really moist and super tasty. Plates were licked clean and the guests went home with the recipe!  Thank you!
