Divide ground beef into 4 (½-pound) or 6 (1/3-pound) portions. When handling the meat, gently form into patties of equal size (1-inch thickness) without overworking the meat. Gently create a divot with thumb in the center of each burger. Arrange on a plate in a single layer, cover and chill for at least 1 hour and up to 6 hours.

Heat the grill to high (gas or charcoal); 375-400 degrees F. Brush and oil the grill. Lightly brush one side of the burgers with olive oil, place them on the grill (olive oil side down); brush the top side with olive oil. Cover, cook for 2-3 minutes to sear the bottom (you should see grill marks).

Flip and cook an additional 2-3 minutes for rare, 4-5 for medium-rare or 6-7 for medium doneness as measured with an Instant Read thermometer. If adding sliced cheese, add 2 minutes before burger is finished grilling. NOTE: time will be less if cooking 1/3-pound burgers.

Remove and allow to rest 5 minutes.

Assemble the burger with a slice of lettuce between the bottom bun and the burger (helps keep the bun intact) and condiments or toppings on top. Salt and pepper if desired.

Place all ingredients in a large bowl. Use a fork (or your fingers) to gently, evenly distribute the seasonings. Be careful that you don’t overwork the meat, which can result in a dry, dense burger.

Divide the mixture into 6 equal portions. Use cupped hands to gently toss one portion of meat into the shape of a loose ball. Flatten into a 1-inch patty, pressing a small dimple in the middle. This small indentation will prevent the burgers from “puffing up” during cooking. Repeat with remaining beef to shape 5 more patties.

Place the patties on a tray that has been lined with wax paper or parchment paper. Cover loosely with plastic wrap and refrigerate for at least 1 hour.

Heat a gas grill or grill pan on high (about 450-500°F). Oil the cooking grate and cook until burgers are lightly charred on each side (about 3-4 minutes per side). The total cooking time will depend on the temperature of your grill and the thickness of your patties.

Preheat grill to medium high heat, approximately 375-400 degrees F.

Form ground bison meat into four 1/4 lb. patties.

Season with salt and pepper on both sides.

Clean grill grates and spray with cooking spray or rub with olive oil soaked rag.

Place burgers on the grill. Grill the first side for 4 minutes, with closed grill. Flip burger and grill the other side for 3 minutes with closed grill.

Then, place a slice of cheese on each burger and close the grill. Let the burgers cook and cheese melt for 1 minute and remove from grill.

The Cheeseburgers (Bison Burger)

To a plate add a wedge of lettuce, then bison cheeseburger, top with cooked bacon (I slice mine in half and criss cross them), a slice of tomato, red onion, pickles and a condiment of your choosing.
