These Healthy Grilled Sweet Potato Nachos are veggie-loaded and smothered with a lighter homemade cheese sauce and tons of fresh toppings.

Healthy Grilled Sweet Potato Nachos

multigrain tortilla chips (enough

Sweet potatoes

Turn the grill on to medium high heat. Wash the sweet potatoes and pierce with a fork. Wrap the sweet potatoes in a paper towel and microwave on high for 4 minutes. When cool enough to handle, cut sweet potatoes into wedges and toss with the olive oil, chili powder, and cumin (+ salt to taste). Transfer sweet potatoes to the hot grill and grill for a few minutes on each side until roasty and delicious.

Nacho assembly

Meanwhile, heat the refried beans on the stove or in the microwave until warmed through and roast the corn in a dry nonstick skillet until golden brown (see notes). On a large platter, arrange the chips in a single layer. Top with the sweet potato wedges, black beans, and corn.

Cheese sauce

melt the butter in a small saucepan. Add the garlic and saute for 1-2 minutes. Add 3/4 cup milk and heat until simmering. Whisk the remaining 3/4 cup milk with the flour; add to the saucepan and stir until smooth and thick. Remove from heat and whisk in the salt and the cheese until melted. Drizzle the cheese sauce over the nachos and top with cilantro and Cotija cheese.

How to Make Nachos Supreme
Preheat your Blackstone to medium heat. Apply a thin layer of your favorite cooking oil (recommend olive oil) to the griddle surface and let it get good and hot. When the griddle is hot and nearly smoking, add ground beef to the griddle. Cook the ground beef, breaking it up as you go, until it is no longer pink inside. Make sure to separate as much of the burger grease from the cooked burger as possible before adding the taco seasoning. Push the excess grease into the grease trap. Toss in a couple tablespoons of taco seasoning on top of the cooked burger. Add a squirt of water to help combine the ground beef and taco seasoning, if needed. Once the taco meat is cooked, place tortilla chips on a prepared baking sheet pan or serving dish. Do this by laying a piece of parchment paper or aluminum foil onto the baking sheet and spreading a single layer of tortilla chips across the full sheet pan. Top the tortilla chips with the hot ground beef mixture, and the shredded Mexican cheese blend. If desired place the whole sheet pan with the chips, burger and cheese onto the the hot Blackstone Griddle and cover with a dome lid for about 2 - 3 minutes to melt the cheese. By doing this you are creating an oven affect and making baked nachos.

What is the Best Way to Layer Nachos?
Layering nachos supreme is completely customizable. Sprinkle the toppings like diced bell peppers, chopped tomatoes, and of course, a dollop of sour cream. Crunchy shredded lettuce adds a nice touch to these towering nachos. Serve hot and make sure to have a variety of side that your guests will like.

packet Old El Paso Taco Seasoning

can Old El Paso Green Chiles, drained

14.5 ounce can diced tomatoes, fully drained

black beans,

onion

Mexican blend cheese

cilantro (finely chopped)

sour cream

Heat grill to medium high heat (or heat oven to 350F)

In a large skillet, brown beef over medium high heat. Stir in the taco seasoning and stir to coat. When almost browned, toss in the tomatoes and green chiles (both fully drained) and stir to combine. Remove from heat and set aside.

Fold two large 12x24 inch sheets of foil in half and fold up the edges to create the bottom of each packet. If you prefer smaller packets you can use 12x12 inch pieces and divide ingredients into fourths instead of halves.

Place half the chips at the bottom of each foil packet.

Sprinkle each with half the beef mixture, half the black beans, half the onion, and top with half the cheese. Lastly sprinkle with chopped cilantro.

Fold the other half of each foil packet and pinch shut. Cut a hole in the top of each packet as shown so steam can vent (and avoid chips getting too soggy).

Bake or grill for 12-15 minutes or until cheese is fully melted. Top with sour cream, jalapenos, or your fave nacho toppings.
