Steak Fajita Bowls with Garlic Lime Rice

FOR THE GARLIC LIME RICE: Rince the rice...

FOR THE GARLIC LIME RICE: Rince the rice in a fine mesh strainer under cold running water for 2 minutes, using your fingers to rub the rice to remove any starch, set aside. Heat the butter in a large sauté pan over medium heat. Add the rinsed rice and allow to toast for 2-3 minutes, stirring frequently so the rice doesn’t stick or burn. Add the garlic, continue to cook for 30 seconds or until the garlic is fragrant. Add the chicken broth, salt, and lime juice and allow to come to a boil, stir just once to break up lumps. Cover, reduce heat to low and allow the rice to cook for 12-15 minutes or until the water dries up. Let stand for 5 minutes before adding cilantro and fluffing with a fork.

Perfect Grilled Peppers

multi-colored bell peppers

Preheat

Preheat a grill to medium-high heat (375 to 450 degrees). If using the grill basket, place it on the grill while preheating. Or, fold a large piece of aluminum foil in half and prick several holes in it with a fork, then fold up a 1-inch rim around the edge to make a makeshift tray.

Grill basket or foil method

You can use onion in this method! Cut 3 peppers into 1 1/2-inch wide strips. Cut the onion into wide strips and separate the layers with your fingers. Place them in a bowl and mix with the olive oil and kosher salt. Grill in the grill basket or on the foil tray for 15 to 20 minutes until tender, turning the vegetables a few times to ensure even cooking.

Grates method

Cut 4 bell peppers into quarters, then place in a bowl and mix with olive oil and kosher salt. Place them directly on the grill grates, spaced as far apart as possible. Grill until tender, about 6 to 8 minutes, turning once.

Knowing how to roast bell peppers on the grill, in the oven, or on the stovetop is gonna up your everyday cooking game. It'll also put you in touch with your inner nonna. Here's how to make yourself some roasted bell peppers.

How to Roast Bell Peppers

Bell peppers* (any color)

Olive oil (optional)

Preheat a grill or a gas stovetop burner on high.

Cook

If using a grill, toss the bell peppers on the grill rack, directly over the heat, and cook, turning frequently with tongs, until blistered and blackened on all sides. If using a gas stovetop burner, roast a single bell pepper at a time by grasping it with tongs and holding it over the flames of a gas burner turned on high, turning occasionally, until blistered and blackened on all sides. If using a broiler, adjust the oven rack so the bell peppers are a few inches from the heating element and cook, turning frequently with tongs, until blistered and blackened on all sides.

Steam

Toss the charred bell peppers in a brown paper grocery bag and tightly close the bag by rolling the top over several times or dump the charred bell peppers in a bowl and cover tightly with plastic wrap. Let the bell peppers steam for about 10 minutes.

Peel

Grab a paring knife and halve each bell pepper lengthwise. Cut out the stem, seeds, and ribs and dump them in the compost. Place the bell pepper, interior side down, on a cutting board and flatten the bell pepper with the palm of your hand. Pull the charred peel off with your fingers, using a sharp knife to scrape or to cut off patches that don’t readily come off. You want to leave some bits of black on for flavor.

Refrigerate

Use the peppers immediately or store them in a plastic container, refrigerated, for up to 1 week. If desired, you can pack the roasted bell peppers in olive oil to cover.
