Lightly brush olive oil on cut sides of romaine and tomatoes, and on the corn. Sprinkle with salt and pepper. Place romaine and tomatoes on grill grates, cut sides down. The romaine is the most tender and should cook the fastest, but this will also depend on your own grill and heat. I like a good amount of char to the romaine, as it adds so much nice smoky flavor. Check the tomatoes after they have been grilling for almost two minutes. They will take a little longer to achieve a solid char. As the corn chars, roll the ears to grill all sides. Have a large platter or pan ready, to pull items off as they finish cooking. Once the ears of corn have cooled a bit, cut the kernels from the cob.

Specially Selected Premium Italian Extra Virgin Olive Oil

Dijon mustard

teaspoon kosher salt

romaine hearts

cherry tomatoes

Make the dressing

Grate the Parmesan cheese as finely as possible (it’s helpful to use a microplane or the finest holes in a grater). Grate the garlic, or finely mince it. Juice the lemon. Whisk together all the dressing ingredients in a bowl. Store refrigerated (keeps at least 1 week).

Prep the romaine and avocado

Wash and dry the romaine. Cut each romaine heart in half lengthwise. Drizzle each side liberally with olive oil. To the top, drizzle with balsamic vinegar, and add several pinches kosher salt and plenty of fresh ground black pepper.

Slice the avocados in half and remove the pits (see the video for safe pit removal). Season the cut sides of the avocado halves lightly with kosher salt and lightly drizzle with olive oil.

Grill the romaine and avocado

Place the romaine hearts on the grill, and grill for about 3 minutes on each side, until slightly charred. Grill the avocado halves cut sides down for 4 to 6 minutes total, until grill marks form.

To serve, place romaine halves on individual plates or a serving platter. Garnish with Caesar dressing, chopped cherry tomatoes, dollops of avocado, and Parmesan shavings. Serve with steak knives to make it easy to cut!

Grilled romaine Caesar salad is a quick and delicious twist on the classic Caesar salad. Make this unique salad by searing romaine lettuce in a stovetop skillet or on a grill until it&#39;s slightly charred. Drizzle with an amazing homemade Caesar dressing and top it off with plenty of grated Parmesan cheese. Serve this 15-minute salad as a hearty dinner salad with meat, cooked chicken breasts or other protein.

Grilled Romaine Lettuce Caesar Salad

extra virgin olive oil

white wine vinegar (or apple cider vinegar)

mayonnaise

anchovies (finely chopped)

lemon juice

salt

cayenne pepper

¼ teaspoon freshly ground pepper

romaine lettuce hearts

Salt and black pepper

Parmesan cheese

Combine all ingredients for the dressing in a bowl. Whisk together until smooth and combined. Alternatively, place the ingredients in a blender or food processor and blend, or place in a lidded jar and shake well. The dressing can be made up to 5 days ahead. Store refrigerated.

Mix the Caesar dressing

Trim a slim piece off the stem end of each romaine head — be sure to keep the stem intact. Remove any outer leaves that are damaged or discolored.

Cut each romaine heart in half.

Drizzle olive oil over the cut sides of the lettuce, or use a pastry brush. Don&#39;t be shy about the quantity of oil — it adds flavor, color and helps the lettuce to release from the hot pan. Sprinkle some salt and black pepper over the cut sides.

Place a large (12-inch) skillet (non-stick or cast iron) over medium-heat heat. When a drop of water sizzles in the pan, add the romaine hearts, cut-side down. Cook until the lettuce is browned and smells pleasantly nutty, 3-5 minutes.

Using tongs, gently transfer the romaine halves to a serving platter. Drizzle some of the dressing generously over the lettuce and sprinkle with the cheese. Serve the salad with a knife and fork, with the remaining dressing on the side.
