Outdoor grilling: To grill the tacos, heat an outdoor grill for direct, medium-high heat. Oil the grill grates with a paper dipped in vegetable oil. Add the onion rings in a single layer and grill uncovered until charred in spots and tender, flipping halfway through, about 5 minutes total. Transfer to a clean cutting board. Oil the grates again. Add the steak and grill uncovered until browned, charred in spots, and the center registers 128ºF for medium rare or 135ºF for medium, flipping halfway through, 9 to 10 minutes total. Transfer to the cutting board.Storage: Leftover steak and onions can be refrigerated in an airtight container for up to 4 days.

Step 1

Prepare the following ingredients, adding each to the same 2-quart baking dish or large ziptop bag as it is completed: Using a vegetable peeler, remove the peel from 1 large orange and 2 medium limes. Juice the orange until you have 1/2 cup (juice the second orange if needed). Juice the limes until you have 1/4 cup. Finely grate 4 garlic cloves. Coarsely chop the stems from 1 bunch cilantro until you have 1/2 cup. Add 1/2 cup chipotle salsa and stir to combine.

Step 2

Slice 1 small red onion into thin rounds and add to the marinade. Add 1 1/2 pounds flank steak and turn to coat. If marinating in the baking dish, pile some of the marinade and onions on the top of the steak; cover the baking dish with plastic. If marinating in the bag, press out the excess air and seal the bag. Refrigerate for at least 1 and up to 4 hours, flipping the steak halfway through.

Step 3

Heat a cast iron grill pan or 12-inch skillet over medium-high heat for at least 5 minutes. Meanwhile, transfer the onion rings from the marinade to one side of a plate or baking sheet. Transfer the steak to the other half of the plate; discard the remaining marinade. Brush off any aromatics that are stuck on the steak and onions. Season both sides of the steak with 2 teaspoons kosher salt and 1 teaspoon black pepper. 

Step 4

Drizzle 2 tablespoons of the canola oil into the pan. Add the onions and cook, stirring occasionally, until charred and tender, about 5 minutes. Push the onions to one side of the pan and place the steak on the other. Cook undisturbed until the bottom of the steak is dark golden brown and charred in spots, about 4 minutes. Transfer to a clean cutting board browned-side down.

Step 5

Add the remaining 2 tablespoons canola oil to the pan. Return the steak to the pan browned-side up and sear undisturbed until desired doneness, an internal temperature of 128ºF for medium-rare, 4 to 5 minutes, or 135ºF for medium. Return to the cutting board and let rest about 10 minutes. Meanwhile, prepare the remaining ingredients.

Step 6

Pick fresh cilantro leaves until you have 1/4 cup. Warm 8 tortillas one at a time by holding them directly over a medium flame on a gas stove, or in a skillet over medium heat on an electric stove, flipping occasionally, until charred in spots and pliable. (Alternatively, wrap the stack of tortillas in a damp paper towel and microwave until warm, 20 to 25 seconds.) Stack together and wrap in a clean kitchen towel or aluminum foil to keep warm. 

Step 7

Cut the steak across the grain into 1/2-inch thick slices. Cut any long slices of steak crosswise to fit into the tortillas.

Step 8

To assemble a taco, spread 1 tablespoon crema or sour cream on a tortilla. Top with a few slices of steak, a few pieces of onion, 1 tablespoon pico de gallo or salsa fresca, 1 generous sprinkle of Cotija cheese, and some cilantro leaves.

Grilled Elote Steak Tacos

Preheat your grill to medium-high heat.

Preheat and Prep:

Place the husked corn on the grill. Cook, turning occasionally, until the corn is charred and cooked through, about 10-12 minutes. Remove from the grill and let cool slightly. Once cool enough to handle, cut the kernels off the cob and place them in a large bowl.

Grill the Corn:

In the large bowl with the corn kernels, add the mayonnaise, sour cream, chopped cilantro, cotija cheese, lime juice, and lime zest (if using). Mix well to combine.

Prepare the Elote Mixture:

Season the ribeyes with salt and pepper. Place the steak on the grill and cook for about 4-5 minutes per side, or until it reaches your desired level of doneness. Remove from the grill and let it rest for a few minutes before slicing thinly against the grain.

Grill the Steak:

Place the tortillas on the grill for about 1 minute per side, or until they are warmed and slightly charred.

Toast the Tortillas:

To assemble the tacos, place a few slices of grilled steak onto each tortilla. Top with a generous spoonful of the elote mixture.

Assemble the Tacos:

If desired, you can add some thinly sliced jalapeños on top of the elote mixture for an extra kick.

Optional Jalapeño Crème:

Serve the Grilled Steak Elote Tacos immediately with extra lime wedges on the side.

These Grilled Steak Tacos with Avocado Salsa are smoky, juicy, just the right amount of spicy and absolutely bursting with flavour.

Grilled Steak Tacos with Avocado Salsa

avocado oil

tomatillos (husks peeled and rinsed well)

onion

garlic (skins peeled)

jalapeño (sliced in half, seeds removed for mild heat)

water

dry oregano

kosher salt (plus more to taste)

avocado

orange (around ¼ cup)

lime (around 2 tablespoons)

paprika

onion powder

freshly-cracked black pepper

½ teaspoon smoked paprika

cumin

green onions

corn tortillas

white onion (for serving)

Preheat a frying pan over medium heat. Add the avocado oil and heat until shimmering. Add the tomatillos, onion, garlic and jalapeño and cook, stirring occasionally, until the vegetables are lightly charred. Add the water and cook, using a wooden spoon to lift any brown bits off the bottom of the pan, until the liquid has reduced by ¼ in volume and the tomatillos are fork-tender, around 3 minutes.

Add everything to a blender along with the cilantro, lime juice, oregano, salt, and avocado and pulse until as smooth or chunky as you prefer. Taste the salsa for seasoning and adjust with salt and lime juice as desired. Transfer the salsa to a bowl, cover and refrigerate until ready to serve. The salsa will last up to 3 days in the fridge.

For the Salsa Verde:

In a bowl, combine the steak, orange juice, lime juice, ¼ cup chopped cilantro, paprika, salt, onion powder, black pepper, smoked paprika, ground cumin and oregano. Toss everything to coat, cover and refrigerate 1 to 6 hours.

When ready to cook, preheat your Traeger Grill to 500F (475F if using a ModiFire Grill Grate) or a heavy-bottomed skillet or griddle over medium-high heat. If using a Traeger, add the avocado oil to the steak and toss to coat. If using a skillet or griddle, add the avocado oil to the pan and heat until shimmering. Transfer the steaks and green onions onto the grill or skillet/griddle and cook, undisturbed, until grill marks form or deeply seared, around 4 minutes for the steak and 2 minutes for the onion. Flip and cook the other side until grill marks form or deeply seared and the thickest part of the steak registers 125F for a medium-rare centre, around 4 more minutes for the steak and 1 minute for the onion. Transfer the steak and green onions to a cutting board and let them rest at least 6 minutes before slicing the steak into small cubes, leaving the onions whole.

While the steaks rest, warm the tortillas on the grill or skillet/griddle for 10-15 seconds per side. Alternatively, place a heat-safe wire rack over a gas stovetop and warm the tortillas directly over the open flame, 10-15 seconds per side.

In a small bowl, combine the remaining ¼ cup chopped cilantro and diced white onion and toss to incorporate.

To assemble the tacos, spread a layer of diced steak on to each tortilla, top with some of the avocado salsa and garnish with the fresh cilantro and onion mixture. Serve with the charred green onions, extra avocado salsa on the side and lime wedges for squeezing.

Steak Tacos with Cucumber and Corn Salsa are the perfect summer dinner. &nbsp;Spicy skirt steak topped with the freshest cucumber and grilled corn salsa. &nbsp;(gluten free)

Mix together all spices in a small bowl and rub all over the skirt steak. Preheat grill to medium high.

Cook skirt steak for 3-5&nbsp;&nbsp;minutes on each side. &nbsp;Let rest under foil for ten minutes.

While steak is cooking put one ear of corn on the grill. &nbsp;Rotate frequently until you get some char on each side.

Make salsa by tossing together all cucumber, corn, jalepeno&nbsp;and red onion. &nbsp;Squeeze the juice of one lime on the salsa and add salt to taste.

Slice steak thinly against the grain and serve tacos. &nbsp;Add cilantro, avocados and queso fresco for toppings. &nbsp;

As much as I love grilling during the summer, I actually prefer grilling in the fall because the weather is so nice you can just grill and then eat outside comfortably without sweating profusely!  ;)  Needless to say, these tacos are going on our dinner rotation for the next few months! (1.25 ounce) packet Ortega® Taco Seasoning Mix

lime juice

olive oil

Ortega® Whole Wheat Tortillas (as necessary)

salt (if desired)

sugar (if desired)

Ortega® Mild Taco Sauce

Marinate

To a large zip top plastic bag, add the steak, taco seasoning, lime juice, olive oil, seal bag, squish contents around, and marinate in the fridge for at least 30 minutes, up to 8 hours.

Cook

Preheat outdoor grill to medium high (alternatively, use an indoor grill pan or cast iron skillet to cook the steak), add the steak, and cook for about 3 to 4 minutes per side, or until as done as desired.

Rest

Allow meat to rest for 5 to 10 minutes before slicing into thin strips.

Divide

Marinade and Tacos:

Blend

To the canister of a blender, add the cilantro, jalapeños, olive oil, enough lime juice to get the blender going, and process on high speed until smooth.

Season

Taste the salsa and if desired, add a pinch of salt and/or sugar until desired flavor balance is achieved.

Serve

Add as much blender salsa, Ortega prepared salsa(s), pico de gallo, and optional serving items to the tacos as desired and serve immediately.

Salsa:

These were absolutely fabulous and I really love the marinade for the meat! It had a ton of great  flavor. We got the deck finished but didn't get the grill put back together before the rain hit so I ended up cooking the steak in my cast iron skillet.  Crazy weather!
