<p>Mediterranean Grilled Chicken Wings are so easy to make and fun to eat.  A simple marinade gives the chicken tons of flavor and the tzatziki sauce dip is the perfect accompaniment.  </p>

Mediterranean Grilled Chicken Wings

lemon

red wine vinegar

Homemade Tzatziki Sauce

If you have to cut up the wings into drums, wing, and other weird piece, this is the time to do it.  The easiest way I can say to do this is to bend the pieces at the joint and then cut it next to where the wing bent.  The knife should go through pretty easily and you shouldn&#8217;t have to saw too much.  If you are working hard at it, you&#8217;re not in the right spot.  Cut up the pieces, throw out the weird piece at the end and salt and pepper the wings.  Clean your hands and set aside the cutting board aside.  If you did not need to cut them up, then just take them out of the package, salt and pepper them, and set them aside.

Add all of the marinade ingredients to a large Ziploc bag, saving the olive oil for last.  Squish the marinade around in the bag until the garlic is broken up and the mustard is incorporated into the sauce.  Open the bag again and add the chicken.  Close the bag and shake the chicken around to make sure all the pieces are covered.  The chicken can marinate for 24-48 hours if you are looking to make ahead.  Otherwise it will still be delicious even with just a half hour. 

Heat up the grill.  The wings should take about 15-20 minutes on the grill.  You want to make sure that the wings are crispy and have some charred edges.  In the last few minutes of cooking, add the Naan or Pita bread to the grill to warm up.  Remove everything from the grill to a plate.  Top with parsley, red onion, and/or bits of feta (optional).  Serve with homemade tzatziki sauce.

Braised Chicken Wings

Memphis Hickory & Vinegar BBQ Sauce

Coca Cola

tsp Dried Chili Flakes

tsp Garlic Powder

18.5 oz Gold Peak Sweet Tea

Green Onion, chopped

tbsp Light Soy Sauce

Onion,

tbsp Peanut Oil

tsp Powdered Ginger

tbsp Red Wine Vinegar

Salt

Scallion, chopped

tbsp White Wine

Cast Iron Pan/Skillet

In a large bowl or plastic bag, add the oil, chili flake, ginger, garlic, ½ bottle of Coke and mix thoroughly. Add the chicken wings, and evenly coat them, and place in refrigerator for 2 hours up to 24 hours.

Heat Pit Boss grill to 250. Place wings on the grill and cook for 75 minutes, turning as needed.

In a deep cast iron pan with a lid, mix the remaining ½ bottle of Coke, 1 bottle of the Gold Peak Sweet Tea, wine, vinegar, salt, onion, Carolina Rub, and Memphis BBQ sauce.

Add the wings from the grill to the pan, and coat wings thoroughly in the liquid. Cover the pan and leave on the grill grate.

Increase heat on the Pit Boss grill to 350, and allow the wings to braise for 1 – 1.5 hours covered.

When finished transfer the wings to a serving plate and garnish with your choice of cilantro or green onion, and enjoy.

Grilled Chicken Wings Recipe

Prepare Grill

Preheat grill using two zone method or direct/indirect. Target 400 degrees Fahrenheit as internal cooker temperature. For this method, place the lump charcoal in a pile in the center of the grill.

Season Wings

Place dry wings in a one gallon plastic sealable bag. Then add the dry rub and corn starch. Seal the bag and shake it to season. Remove wings and place on a cookie sheet.

Grill Wings

Place the wings on the grill in a circle surrounding the heat source. Place cover back on grill and grill for 10 minutes.

Flip

After 10 minutes, flip the wings and cover again.

Flip Again

After 10 more minutes flip again, and grill for another 10 minutes. The wings should be crispy on all sides and read at least 170 degrees Fahrenheit. Remove and then place in the sauce.

Combine

In a small sauce pan over medium heat add the KC sauce, butter, and honey. Stir to combine until the butter is melted.

Place in Bowl

Place sauce in a large mixing bowl. Place wings directly from the grill into the sauce and stir to incorporate.

Serve

Serve with your favorite dipping sauce and sides, like carrots and celery.
