Heat a dutch oven or large pot over medium heat and add the chopped bacon. Cook until much of the fat has rendered, about 2 to 3 minutes. Add the onion and cook, stirring occasionally, until translucent, about 5 minutes.

Scoot the onions off to the side of the pot and add the ground turkey (or sausage). Brown for 2 minutes, flip, and brown another 1 to 2 minutes. Use a spatula to chop the meat into smaller pieces.

Add the remaining ingredients except the spinach to the pot, cover, and bring to a full boil. Reduce the heat to a gentle boil and continue cooking 20 to 30 minutes, until potatoes are cooked through. Stir in the spinach and cook until wilted, about another 2 to 3 minutes.

Hearty Ground Turkey Soup

A healthier alternative to a heavy beef soup this Italian turkey macaroni soup is still a filling main dish hit with the family.

Italian Turkey Macaroni Soup (Slumgullion)

macaroni noodles

Fry the turkey in a skillet until browned and no pink remains. Drain and place into a crockpot.

Fry the onions until translucent; add the garlic and cook for 2-3 minutes until browned. Add to crockpot.

Combine the rest of the ingredients (excepting the macaroni) in the crockpot.

Cook on low for 6-8 hours.

Around 30-45 minutes before serving, add in the macaroni. Cook in crockpot until tender.

Serve and enjoy.

Ground Turkey Soup

tbsp oil

¾ tsp salt (plus more as needed (see notes))

tsp minced garlic

½ tsp pepper

½ tsp red pepper flakes

chicken broth (or turkey broth)

butternut squash

potato

cream

parsley

In a large pot or Dutch oven, heat the oil over medium-high heat. Add the onions, celery, and 1 tsp salt, and cook until the onions are soft and translucent, about 5-7 minutes. Add the minced garlicand cook for another minute until fragrant.

Add the ground turkey plus another ¾ tsp salt black pepper, and red pepper flakes. Break up the turkey with a wooden spoon or spatula, and cook until browned and no longer pink, about 7-10 minutes.

Add the chopped butternut squash and potatoes. Pour in the chicken broth and bring to a boil, then reduce the heat to low and simmer until the vegetables are tender and cooked through, about 20 minutes.

Add the cream to the pot, and cook for another 2 minutes until the soup is heated through.

Add parsley flakes. Taste and adjust seasoning with additional salt, as needed (see note below). Ladle the soup into bowls and serve hot. Enjoy!

Easy Italian Ground Turkey Soup

15.5 oz cannellini beans

oz marinara sauce (I used Rao's.)

oregano

basil

salt and pepper

Cook

In a large pot or dutch oven over medium-high heat, cook the onion and celery in the olive oil. Cook until tender, about 5 minutes. Add the garlic and cook for an additional minute.

Next, add the raw ground turkey and cook until browned and no longer pink.

Simmer

Stir in the spices, chicken broth, marinara sauce, and zucchini. Bring the mixture to a boil and then reduce the heat to medium-low. Simmer for 25 minutes, or until the zucchini is tender.

Season

Stir in the cannellini beans. Season with salt and pepper, to taste.

Serve

Garnish each serving with Parmesan cheese. Serve with crusty bread.

Store

Store in an airtight container in the refrigerator for up to 3 days.
