This small batch home made Fish Masala spice blend is pure, fragrant and contains no additives or fillers and is enough for 750 grams of fish.

Home made Fish Masala spice blend

coriander seeds (approximately 1 level tablespoon)

ml fennel seeds (approximately 1 level teaspoon)

ml cumin seeds (approximately 1 level teaspoon)

ml black peppercorns (approximately 1 level teaspoon)

cloves

ml red chili powder (approximately 1 level tablespoon)

garlic powder (approximately 1/2 level teaspoon)

ginger powder (approximately 1/2 level teaspoon)

cinnamon powder (approximately 1/2 level teaspoon)

turmeric powder (approximately 1/2 level teaspoon)

Add the coriander, fennel, cumin, black peppercorns and cloves to a small pan dry clean pan and dry roast on medium heat&nbsp;until it smells fragrant.

Remove from the heat when you see the first wisps of smoke at about 2-3 minutes and continue to stir it off the heat in the pan to continue frying the spices.

Let the roasted whole spices cool before grinding.

Dry roasting whole spices

If using a pestle and mortar, grind the spices until it is a fine powder, or as fine as you can.

If using an electric spice grinder, pulse the spices until it is a fine powder. Try not to let the motor run for so long that the spices start to heat up, as it ruins the flavor.

Add the chili powder, garlic powder, ginger powder, cinnamon powder and turmeric powder to a bowl and mix&nbsp;in the freshly ground spices.

Use immediately or decant into a container with an airtight lid and store&nbsp;until required.

Spice mix

A sweet and&nbsp;savory tart with the subtle warmth of caramelised onions, the fragrance of figs, orange and sage and the crunch of walnuts.

Caramelised onion, fig and brie tart appetizer

figs (stalks removed)

orange

ml honey

all butter puff pastry

250 ml caramelised onions

ripe brie

sage leaves

ml walnuts

egg (beaten)

Preheat the oven to 200 degrees celcius, or 180 degrees with a fan assisted oven.

Cut the figs in half lengthways.

Mix the juice of half an orange with the honey in a small bowl and toss in the figs to coat.

Arrange the figs in an oven tray cut side up and pour over the juice and honey mixture. I lined my tray with foil to catch the juices and prevent any burnt syrup on the tray.

Bake for 10 minutes and remove from the oven to cool while you prepare the pastry sheet.

Roll the pastry into a rectangle and place on a parchment lined baking sheet. If you are making appetisers then cut the pastry in twelve 7cm x 7cm&nbsp;squares and place in a shallow 12 hole bun pan.

Prick the pastry base/s with a fork and place into the freezer to firm up until the figs are cool enough to use.

Spread&nbsp;caramelised onions&nbsp;onto the pastry making sure to leave at least a 1 cm border on a large tart. For appetisers place 1 heaped teaspoon of caramelized onions into each depression.

Brush egg on the exposed border to help it color.

Scatter the figs cut side up over the caramelised&nbsp;onions, then add the chunks of brie, chopped walnuts and broken pieces of sage.&nbsp;

Bake in the hot oven for 25 minutes until the pastry is cooked.
