aubergine,

½ tsp salt ((for the quinoa))

oz halloumi cheese ((5 ounces = 150 grams))

Cook

Cook the quinoa according to packet instructions with a little salt. We find it best to use double the amount of water to quinoa, and cook until water has evaporated. Take off heat and cover with a tea towel for five minutes.

Quinoa:

In the meantime, drain and rinse the chickpeas. Give the arugula/rocket a quick wash and shake. Put them into a large bowl.

Mix the juice and zest of the lime with the olive oil. Add the sweet paprika.

Dressing and salad:

Chop

Chop the halloumi into bite-size pieces and fry for 2-3 minutes each side.

Combine and serve

When the quinoa is ready, combine it with the chickpeas and arugula/rocket. Stir through the lime-oil mix. Serve in bowls with the halloumi on top. Enjoy!

Bring a large saucepan of salted water to a boil. Add the quinoa and cook following pack instructions (about 10-15 mins). Drain and set aside.

Meanwhile, cut the courgettes into irregular 4cm pieces. Break the halloumi down its natural split, then cut into chunky pieces about the same size as the courgettes.

Heat a large frying pan over a medium-high heat. Add the halloumi and cook on all sides until golden – no need for oil. Remove from the pan.

Add the olive oil to the pan, then fry the courgettes on both sides until charred. Remove and season with salt and black pepper.

For the dressing, add the basil, tahini, juice of the lemons, ½ the jalapeños and all the water to a blender and blitz until smooth. Season with salt and black pepper, then taste and adjust if needed.

Mix the quinoa with the courgettes and season with salt and black pepper. Thinly slice the remaining jalapeño.

Box or plate up the courgette quinoa and top with the halloumi and sliced jalapeño. If eating later, store the dressing separately in an airtight container. If eating now, drizzle the dressing over the top. Everything will keep well in the fridge for 3 days.

Just shred halloumi with a box grater and pan fry until golden - it&#39;s like pangrattato, but better because it&#39;s cheese. 🙂I use it to shower a salad made with rice, finely chopped kale, pine nuts and red onion in a garlic vinaigrette for a salad designed to be eaten with a spoon, so you get a bit of everything in every mouthful.Great warm or at room temperature. Crispy Shredded Halloumi Salad (with kale)

pine nuts ((or slivered almonds))

kale leaves

red onion

dill ((or parsley))

rice rice

tbsp apple cider vinegar

extra virgin oil olive oil

tsp honey

Dijon mustard

garlic

tsp black pepper

egg (, halved (Note 3))

Dressing - Put the ingredients in a jar and shake well until combined. Set aside to let the garlic flavour meld.

Toast pine nuts - Heat a large-non stick fry pan over medium heat, no oil. Add the pine nuts and stir regularly for 3 minutes or until they have light brown spots. Remove into a bowl. (Note 4 for oven method)

Crispy shredded halloumi - Return the pan to the stove and heat the olive oil on high. Cook the shredded halloumi for 5 minutes until most of is golden or deep golden, not brown, lowering the heat to medium high if patches brown too quickly. Transfer into a bowl while you dress the kale. They will crisp up even more as they cool.

Scrunch and dress kale - Place the kale and red onion in a bowl. Pour over about 2 tablespoons of the Dressing then use your hands to massage it into the kale leaves. Scrunch boldy - kale can take it!

Toss - Add the rice, dill, most of the pine nuts and remaining Dressing. Toss well.

Plate up - Spread the salad in a wide shallow serving bowl (for maximum sprinkling surface area!). Cover the surface wtih the crispy halloumi and remaining pine nuts. You could also do this in individual bowls. Serve!
