Halloumi wraps with roasted chickpeas and a minty yoghurt sauce. These spicy wraps are super tasty, filling and great for lunch or dinner.

Halloumi Wraps

chickpeas

olive oil

tsp smoked paprika

tsp cumin

tsp sea salt

plain natural yoghurt (100 grams)

mint leaves (chopped)

lemon (zest half the lemon)

garlic (minced)

tsp black pepper

lime (the zest of)

tsp dried cilantro/coriander leaf

tsp dried red chilli flakes

soft wraps

baby spinach (80 grams)

cherry tomatoes (sliced)

scallions/spring onions (the white part sliced thinly)

of a medium English cucumber (sliced)

mint leaves and parsley

Lime wedges for serving.

Preheat the oven to 200C/392F.Drain, rinse and dry the chickpeas. Pour the chickpeas onto an oven tray. Drizzle 1 tablespoon of olive oil over the chickpeas then mix well. Sprinkle 1/2 teaspoon of smoked paprika, 1/2 tsp of ground cumin and 1/4 teaspoon of sea salt over the chickpeas. Give the tray a good shake making sure all the chickpeas are covered in the spices. Roast for 30 minutes or until the chickpeas are crispy, turn the chickpeas halfway through cooking.

Roast the chickpeas

Add all the ingredients for the sauce to a small bowl then mix well.Leave the sauce in the fridge until you are ready to serve it.

Make the minty yoghurt sauce

Slice the halloumi into thin slices, I got eight slices out of my block.In a shallow dish mix together 1 teaspoon of ground cumin, 1/4 teaspoon of smoked paprika, 1/2 teaspoon of dried coriander/cilantro leaf, the zest of 1 small lime and 1/4 teaspoon of dried red chilli flakes.Heat a griddle pan or pan to medium heat.Brush each slice of the halloumi on each side with olive oil.Dip both sides of the halloumi into the spice mix.Place the halloumi on the griddle pan and cook each side until golden brown, about 3 or 4 minutes each side. You will need to do this in two batches.

Fry the halloumi

Place a wrap on a clean chopping board.Add a small handful of baby spinach down the middle of the wrap. Add some cucumber and tomato slices to the spinach.Top that with two slices of halloumi. Add a dollop of the minty yoghurt sauce. Add some sliced spring onions/scallions, a couple of mint leaves, a couple of parsley leaves then squeeze a little lime juice over it all. Add a tablespoon or two of the roasted chickpeas.Fold the bottom of the wrap up over the filling, then fold over each side.Serve immediately.

Halloumi gyros with herby chips

halloumi, sliced

tsp runny honey

garlic powder

½ tsp chilli flakes

oregano sprigs, leaves picked

Grated zest and juice ½ lemon

fluffy flatbread (we used a Turkish flatbread)

tzatziki

¼ red onion, thinly sliced

4-5 cherry tomatoes, halved,

¼ cucumber, cut into half moons

For the herby chips

Heat the oven to 180ºC fan/gas 6. To cook the chips, grease the baking tray with the olive oil and put in the oven to heat up.

Rinse the chipped potatoes in cold water to remove any excess starch, then pat dry with a clean tea towel. Spread the chips over the hot baking tray and toss with the dried oregano and a good sprinkle of salt. Bake for 30-40 minutes until crisp and golden, turning after 15 minutes.

When the chips are nearly cooked, toss the sliced halloumi, honey, garlic powder, chilli flakes, most of the fresh oregano and the lemon zest and juice in a bowl. Heat the griddle pan over a high heat and cook the halloumi for 2-3 minutes on each side until charred evenly.

To assemble, warm the flatbread on the still-hot griddle pan or in the oven for 2 minutes. Spread the bread with a good helping of tzatziki, then pile on some herby chips, the halloumi, red onion, tomatoes and sliced cucumber. Sprinkle with the remaining fresh oregano and an extra dollop of tzatziki, then wrap the flatbread around the filling and enjoy with the rest of the chips on the side, preferably in the sunshine with a cold drink.
