Leftover Ham Bone Soup with Potatoes and Cabbage

Instant Pot:

Assuming your electric pressure cooker has a saute option, press the saute button and spray with oil, add the onions, celery, and garlic and saute, 4 to 5 minutes.

Add the chicken broth, carrots, 1 1/2 cups water, potatoes, ham bone and ham and cook high pressure 20 minutes.

Let the steam release naturally. Add the cabbage and cook 5 minutes high pressure. Natural or quick release.

To cook on the stove top:

Follow the same directions as above in a large pot or Dutch oven, cook covered low 1 hour adding the cabbage during the last 10 to 15 minutes. Cook until the cabbage and vegetables are tender.

Crock Pot Ham Bone and Bean Soup

You may use one pound of dry beans or 48 oz. of pre-cooked beans.

If using dry beans, rinse 1 pound of navy or great northern dry beans. Pick through the beans for any stones or pebbles. Cover with water and allow to soak overnight.

Under running water, rinse any coating off a meaty ham bone. Also, scrape off any surface fat that you can. Add to a larger crock pot.

Dice 2 medium carrots, two ribs celery, and one medium onion. Carrot and celery are options but recommended.

Add the beans, carrots, celery, and onion to the crock pot. Add 1/2 teaspoon garlic powder, 1/2 teaspoon pepper, and one bay leaf. Add 6 cups of water.

Cook on low for 8 hours total if precooked beans and 10 hours for dry beans.  Two hours before the end of cooking, remove ham bone to a cutting board. Allow the bone to cool for 10-15 minutes. Then remove all meat from the bone. Discard bone and any fat and waste.

Place meat back into the cooker and finish cooking. This is a good point to taste test for adding salt if needed.

Leftover Ham Bone Soup

extra virgin olive oil

onion (diced)

celery (chopped)

ham (diced)

Heat a large dutch oven over medium high heat, add the olive oil and allow to heat. Place the hambone in the pot and sear in the oil, allow to cook for about 1-2 minutes, then turn to cook the other side.

Add in the diced onion, carrots and celery. Cook until softened. Then add in the garlic and cook an additional 30 seconds.

Pour in the water, add the bayleaf. Bring to a boil. Cover and allow to simmer for at least 30-40 minutes.

After broth has simmered, remove the ham bone from the pot, remove any meat left on the bone, and you can discard at this point.

Add in the chopped ham and potato. Allow to cook until the potato is soft and tender. About 15 minutes.

In a small bowl combine the milk or cream with the cornstarch. Stir together with a fork until completely combined. Add to the soup. Stir until mixed in. Allow to simmer for another 3-4 minutes. The soup will thicken.

Salt and pepper to taste. Serve warm with fresh parsley as a garnish. Enjoy

The Night Before: Place the dried beans in a large bowl and cover with three inches of water. Soak the dried beans overnight (up to 24 hours) to soften. Drain when ready to use.

Place a large 6 quart pot over medium heat. Add the oil, ham bone, onions, and garlic. Sauté for 3-5 minutes to soften the onions.

Then add in the drained beans, thyme, ground cumin, crushed red pepper, 10 cups of water, and any remaining ham scraps. (Do not salt the soup until the end, because ham bones can be very salty.)

Bring the soup to a boil. Lower the heat and simmer for 60-90 minutes, covered, until the beans are very soft. Uncover and stir occasionally, then place the lid back on top.

Use a fork to pull any remaining ham off the bone and stir it into the soup. Discard the bone. Add 1-2 cups additional water if the soup is too thick. Taste, then salt and pepper as needed.

Place the Ham Broth ingredients in the slow cooker. Slow cook for 8 hours on low, or 4 hours on high.

Remove ham bone. Shred meat and discard bone. Return half the ham to the slow cooker (remainder is pan fried).

Discard thyme sprig.

Remove then chop carrot and celery, return to slow cooker.

Ham Broth:

Melt 1 tbsp butter in a skillet over medium high heat. Add half the ham and cook until golden and crispy.

Transfer most to slow cooker - hold back a few for garnish.

Crispy Ham:

In the same skillet, melt remaining butter. Add onion and garlic, cook 1 minute.

Add celery and carrot, cook for 3 minutes until soft.

Add 2 cups milk, stir.

Soup Broth:

Mix cornflour and extra Milk. While stirring, pour into skillet. Mixture will thicken quickly.

Once very thick and paste-like, scrape into slow cooker.

Soup Thickener:

Add Vegeta into slow cooker. Stir to dissolve paste.

Add spinach, push down into liquid.

Slow cook 30 minutes on low or 20 minutes on high until spinach is wilted and broth is heated and slightly thickened.

Serve garnished with crispy ham and a sprinkle of parsley, if desired!

(recommended) Soak beans overnight in 8 cups water. Then drain and discard the liquid. See footnote for unsoaked beans.

Add NAVY BEANS, HAM BONE, ONION, CELERY, GARLIC, THYME, SALT, and BLACK PEPPER to a slow cooker.

Add enough WATER to cover the beans by 1 inch.Note: You can always add more water later if you like ham and beans with extra broth.

Set the slow cooker on LOW heat for 6 hours.*ATTN: Timing may vary. Please see recipe footnote about final cook time.

At around the 5 hour mark, stir in CARROTS and continue cooking another hour (or more as needed) until carrots and beans are soft to your liking.

When beans are done, transfer ham bone out of the pot and strip any edible ham from it. Sift and discard any small bone pieces or gristle from the soup.

If you like a creamier soup, mash some of the beans to thicken the broth. Add shredded ham back to the cooker and serve warm.

Tbsp. extra virgin olive oil

Heat 2 tbsp. of extra virgin olive oil in a large dutch oven and then add the onions. Cook for 15 minutes stirring on a regular basis until the onions begin to caramelize.

Add butter and then cook for another 5 minutes. Stirring regularly.

Add in the carrots, celery and garlic. Cook for 5 minutes until the carrots begin to soften. Stirring regularly.

Deglaze the pan with the white wine and scrap the brown bits. Cook for 4 minutes and continue scraping occasionally.

Add in the chicken broth.

Then add in the ham bone, ham, cannelloni beans and herbs. Add additional chicken broth as needed to cover the ham bone.

Cover the pot with the lid and set the heat to low. Simmer for 1 hour and 30 minutes.

When time is up, remove the lid and add the cabbage. If you&#39;re adding a parmesan rind, add it now. Simmer for 10  minutes.

Remove the ham bone. Add back any ham that easily comes off the bone. Then discard the bone.

Add the kale about three minutes before you&#39;re done so that it wilts a little bit.

Serve with fresh parsley, additional parmesan cheese and salt and pepper to taste. Enjoy!
