Easy Ham Fried Rice made with leftover rice and thrown together in less than 20 minutes! 

Ham Fried Rice

cooked, cold leftover rice

eggs

Tablespoons sesame oil ((or peanut oil))

peas

carrot (, peeled and diced)

Tablespoons low-sodium chicken broth

Tablespoons low-sodium soy sauce (,

green onions (chopped)

Leftover cooked and cooled rice works best, and could be made earlier in the day and refrigerated until cold. Use wet fingers to separate the rice grains. 

Heat 1 Tablespoon of oil in a wok or frying pan. Beat the eggs in a small bowl and add to the pan when the oil is hot. 

Stir gently with a wooden spoon just until cooked. Transfer to a bowl and set aside.

Add another tablespoon of oil to the pan. Add peas, carrots and ham and saute for several minutes. Remove to the bowl with the eggs.

Add another tablespoon of oil to the pan over medium high heat. When the oil is hot, add the rice and toss every 30 seconds until it's lightly browned, about 5 minutes.&nbsp;

Add the chicken stock, soy sauce and green onion and toss to combine. Return eggs and veggies to the pan.

Add more soy sauce, to taste, if desired. Serve immediately.&nbsp;

Very quick, easy and tasty. Didn't have sesame oil, so toasted sesame seeds in wok first, then removed and added back in at end. The ingredients list indicates 4T sesame oil but the instructions only uses 3. Is 4th used as"drizzle" when complete? Definitely adding to the rotation-with sesame oil next time am sure it will be awesome!

Fried rice has been a go-to for me for years; a great way to get vegetables into a meal, and a great way to use up leftovers too! I use LOTS of veggies, and everyone in my family loves this. Passing along your recipe to my kids!

We LOVE this recipe.  We found it a few months ago and now we make it often. We make it as written, except we don't care for green onions so we saute a small yellow onion with the ham and other vegetables.  It even fits well on my WW plan!

Wow, easy and delicious! I love being able to use whatever left over veggies you have on hand too. I added onion, garlic and cabbage. Next time I'll experiment with more veggies, even some cauliflower rice to lighten it a bit. Thank you!

You took the fear out of making fried rice.  This recipe is easy and the outcome was very yummy.
I appreciate the oil option and tip for making same day rice, both were applicable to me.
In the absence of chicken stock, I used my ham stock (I always save meat juices/drippings.

Easy Ham Fried Rice

eggs,

sesame oil

coconut aminos or low-sodium soy sauce

sea salt,

vegetable oil

carrots, finely diced (about 1 cup)

yellow onion, finely chopped (about 1 cup)

garlic,

ham, (about 1½ cups)

white rice,

peas,

green onions, white and green parts, chopped

soy sauce

Whisk the eggs

In a small bowl, whisk together the eggs, ½ teaspoon of the sesame oil, ½ teaspoon of the coconut aminos, and the salt.

Cook the vegetables

Heat 1 tablespoon of the vegetable oil and 1 teaspoon of the sesame oil in a large skillet or wok over medium-high heat. Once the oil is glistening, add the carrots and cook, stirring, until slightly softened, about 3 minutes. Stir in the onions and cook, stirring, until tender, about another 3 minutes. Stir in the garlic and cook until fragrant, about 1 minute more. Transfer the vegetables to a plate. 

Cook the ham

Add ½ teaspoon of the sesame oil and ½ tablespoon of the vegetable oil to the skillet. Once the oil is glistening, add the ham and cook, stirring occasionally, until lightly browned, about 3 minutes. Transfer to the plate with the vegetables. 

Cook the eggs

Add ½ tablespoon of vegetable oil to the same skillet. Once the oil is glistening, add the egg mixture and cook, scrambling, until just set, about 2 minutes. Transfer the eggs to the plate with the vegetables.

Cook the rice

Add the remaining 1 tablespoon vegetable oil and remaining ½ teaspoon sesame oil to the skillet. Once the oil is glistening, add the rice and toss to coat. Spread the rice evenly on the bottom of the pan. Cook, undisturbed, until the rice begins to crisp on the bottom, 2 to 3 minutes. Stir the rice once, then continue to cook, undisturbed, until slightly crispy, another 2 to 3 minutes. Repeat two more times.

Toss all ingredients

Reduce the heat to medium. Add the ham, vegetable, and egg mixture to the skillet. Add the peas, green onions, remaining coconut aminos, and soy sauce and cook, stirring, until combined and warmed through, about 3 minutes. Taste and season with salt.

This was very delicious. I had a ham steak I used but can't wait to make this again with my leftover Easter Ham. I'll probably freeze some of it too because in my experience freezing fried rice has worked well for me.
