Japanese Hamburg Steak, or Hambāgu(ハンバーグステーキ) as it's known in Japan, is like a single serving meatloaf with a tender, juicy patty that's loaded with flavor and glazed with a sweet and savory sauce. For my version, I finish it off by deglazing the pan with red wine to make an umami-rich sauce that's the perfect compliment to the big beefy round of seasoned hamburger.

onion ((finely diced))

soft tofu

panko ((~1 cup))

oyster sauce

nutmeg

ketchup

chunou sauce ((or a 50:50 mix of Worcestershire:ketchup))

Put the chopped onions and garlic into a microwave-safe bowl and cover with a lid or plastic wrap. Microwave the onions at 800 watts for 4 minutes. They should end up soft and be just starting to brown. Leave the onions covered and allow them to cool down enough to handle.

When the onions have cooled a bit, add the beef, tofu, panko, egg, oyster sauce, nutmeg, and black pepper. Put some food-safe gloves on and knead the mixture together until it is uniform in color and texture.

Make eight oval patties about 1-inch thick, by tossing the meat back and forth between two cupped hands. This removes any air pockets that will cause your Hamburg Steak to fall apart when you cook it.  If you're making the patties ahead of time, or plan to freeze them, be sure to place the patties on a layer of parchment paper. Otherwise, you can form them and put them straight into the pan.

Add the vegetable oil to a large pan with a lid and heat over medium heat until hot. You'll get more flavor in your sauce if you use an uncoated pan, however, it will make it harder to flip without breaking them, chose your pan carefully.&nbsp;

Add the patties to the pan without overcrowding it. I usually do this in 2 batches of 4. Fry them on use side until they've formed a dark brown crust.

When they've browned on one side, use a spatula to flip them over carefully and brown the other side. The patties should be well browned on both sides, but they don't need to be cooked through all the way since we're going to steam them. Transfer them to a plate.

Once you've fried all the patties, drain off any excess oil with a paper towel, being careful to leave the caramelized beef juices on the bottom of the pan. Put all eight patties back into the pan and then add the wine and cover with a lid. Steam these for 2-3 minutes.

Remove the lid and transfer your hambagu back onto a plate. Add the ketchup, oyster sauce, and chunou sauce and stir briskly to emulsify the sauce.

Once the sauce is nice and thick, add the patties back in one at a time, rolling each one around to glaze it with the sauce.

Place a pan over medium heat. Add olive oil, and then add garlic and onion. Sauté for about 4-5 minutes until translucent to develop sweetness. Do not let them burn. Set aside to cool down. We need about 1/2 cup of cooked onions.

In a mixing bowl, add ground beef and pork, cooked onions and all other ingredients to make the patties. Mix thoroughly for 2-3 minutes until the mixture is well combined and sticky.

Divide the meat mixture into 6 or 8 equal parts, and form into patties. Slightly press down to create an indentation in the center, because the center will rise up slightly when we cook them.

Heat a heavy bottom frying pan over medium heat. Add olive oil, and add the patties to the pan. Cook for about 8-12 minutes depending on how big and thick they are, flip once until they are all cooked through. If they are brown but not cooked through, you can cover the pan for 1-2 minutes to cook the inside thoroughly. Transfer them to serving plates.

To the same pan, immediately add sake and stir and deglaze the pan for 10-15 seconds. Then add the remaining ingredients for the sauce. Stir to combine, simmer to desire thickness, a minute or less. Taste and adjust to your liking.

Spoon sauce over the meatballs. Serve hot with rice and steamed/boiled vegetables.

This Japanese hamburger steak is so irresistibly tender and and juicy with scrumptious flavors that will have you craving for more. Paired with homemade demi-glace sauce, this easy hambagu is the perfect dish to add your dinner rotation.

Melt-In-Your-Mouth Japanese Hamburger Steak

tbsp cooking oil (divided)

beef (mixed with pork if desired)

milk

onion

garlic (minced)

tbsp worcestershire sauce

tbsp all purpose flour

mirin

tbsp sugar

Combine panko breadcrumbs and milk in a small bowl. Set aside while preparing the other ingredients.

Heat oil in a pan over medium heat and add onion. Lightly season with salt and sauté for 2-3 minutes or until the edges are golden brown. Set aside to cool completely.

In a large mixing bowl, add ground beef, soaked breadcrumbs, sautéed onions, garlic, egg, ketchup, worcestershire sauce, salt and pepper. Mix with your hands until evenly combined.

Scoop a portion of the meat and toss back and forth between your hands before forming into a tight patty.

Heat oil in a non-stick pan over medium heat. Place the patties on the pan, indent the center, and cook for about 2-3 minutes on each side. Serve with demi-glace sauce and enjoy!

Melt butter in a saucepan. Add flour and stir around to cook until the mixture turns light brown. Add mirin, sugar, soy sauce, ketchup, and water, and mix to combine. Cook for about 2 minutes until the sauce is thickened.
