Crispy but tender shredded potatoes top a casserole of juicy ground beef bound together with a creamy cheesy sauce.

Cheesy Ground Beef and Hashbrown Casserole

beef

cheddar cheese (1 8-ounce package, divided)

Idaho all-purpose potatoes ((about 3/4 pound), peeled and grated)

Preheat the oven to 375°F. Lightly oil a shallow 2-quart baking dish or spray with nonstick cooking spray.

Heat a large skillet over medium high heat.  Add the ground beef and cook, stirring frequently, until the beef is completely browned.  Drain in a colander.  Carefully wipe out the skillet, and return it to medium heat.

Heat 1 tablespoon of the the olive oil in the skillet over medium heat. Add the carrots, onions and garlic and sauté for 4 minutes, until tender. Add the scallions and the browned ground beef and stir to combine. Season with salt and pepper and stir in the oregano and chicken broth.  Bring to a simmer then stir in the sour cream, and 1 cup of the shredded cheese. Simmer for 3 minutes,  until the cheese is melted and everything is blended.

Turn the mixture into the prepared baking dish.  Place the shredded potatoes in a clean dishtowel and twist and squeeze over the sink to remove as much water as possible from the potatoes.  Shake the potatoes into a medium sized bowl.   Toss the shredded potatoes with the remaining tablespoon of oil, and season with salt and pepper.

Evenly distribute the potatoes over the ground beef mixture. Bake for 40 to 50 minutes until the potatoes are tender and browned on top. Sprinkle the remaining cup of shredded cheese on top of the potatoes and return the casserole to the oven for 5 minutes, until the cheese has melted. Serve hot.

Hashbrown Hamburger Casserole with Veggies and Cheese

Loaded with Colby Jack cheese and tangy ranch seasoning, this hamburger hash brown casserole is an easy dinner that will please the whole family.

Colby-Jack cheese ((divided))

Preheat oven to 375 degrees.

Add butter, hamburger, and chopped onions, along with salt and pepper to a skillet set over medium heat. Cook until hamburger is browned and onions are tender. Add Worcestershire sauce and minced garlic and cook for an additional 2 minutes.

Remove mixture from skillet and place in a large bowl with hash browns, 1 cup of cheese, and chopped green onions.

In a separate dish combine ranch seasoning with sour cream and milk. Mix to combine then add it into the bowl containing the casserole mixture. Mix everything together.

Pour casserole into a 2-quart baking dish and place in oven for 30 minutes.

After 30 minutes sprinkle the remaining 1 cup of shredded cheese over the top of the casserole and return to the oven for an additional 15 minutes, or until the cheese has melted and is beginning to turn golden brown.

Remove from the oven and let cool slightly before serving.

Preheat the oven to 350 degrees F and spray a 9X13 baking pan with a non stick cooking spray.

Brown the ground beef and drain off any excess grease.

Then in a large mixing bowl, stir together the browned ground beef, chopped onions, milk, cream of mushroom soup, pepper and half of the cheese (1 cup).

Pour this mixture into the baking pan.

Bake for 45 minutes to 1 hour until the hash browns are golden brown and tender.

Top the casserole with the remaining cheese. Bake for 5 more minutes until the cheese is melted.

Let the casserole rest at room temperature for 5 minutes and then the casserole is ready to serve and enjoy!
