We tested every variable imaginable to come up with this foolproof hard-boiled egg technique, designed to give you the perfect doneness and increase your chances that the shell comes off easily.

Perfect Hard-Boiled Eggs Recipe

If serving eggs cold, add 1 tray of ice cubes to a large bowl and fill with water. 

Bring 3 quarts (2.8L) water to a boil in a large pot. Carefully lower eggs into pot and continue to boil for 30 seconds. Cover tightly, reduce heat to low (water should maintain a bare simmer), and continue cooking for 11 minutes. Serve immediately if serving hot. If serving cold, immediately place eggs in bowl of ice water and allow to cool for at least 15 minutes before peeling under cool running water.

To peel, first gently tap hard-boiled eggs all over to thoroughly crack the shell, then remove shell under a thin stream of running water. (The water helps get under the shell and lift it off the egg.)

Peel the eggs and place in the bottom of a clean, quart-sized glass jar.

In a medium saucepan, add the vinegar, water (or beet juice if using), the onion (and jalapeno if using), sugar, and spices. Bring to a boil and cook, uncovered, until the sugar has dissolved and the onions are translucent, about 5 minutes. Remove from heat and let cool a few minutes.

Pour the vinegar onion mixture over the eggs in the jar, covering the eggs completely. If you are making the beet pickled eggs, place some or all of the cooked beets in with the eggs in the jar (this will help to bring color to the eggs, and you will have pickled beets as well.) Secure close the jar's cover. Refrigerate up to a month.
The pickled eggs will be ready to eat after a few days. The longer the eggs sit in the pickling juice, the more the pickling juice will penetrate the eggs.

Instant Pot Easy-Peel Hard Boiled Eggs

"Quick easy recipe for spur of the moment egg salad! Had my craving fullfilled. One of my eggs misbehaved and basically exploded. I blame the eggs, not the recipe. 5-5-5 worked like the secret key I needed and won’t forget"

"In case it wasn't said... the 5-5-5 refers to 5 minutes at pressure, 5 minutes before releasing pressure (if it doesn't naturally release first), and then 5 minutes in an ice bath before peeling. :)"

Prepare the pressure cooker: Place a steamer basket in the bottom of your pressure cooker. Add 1/2 to 1 inches of water (1 to 2 cups) to the pressure cooker (check your pressure cooker manual for minimal liquid amounts). The water level should be just below the steamer basket.

Add all the eggs: Use cold eggs, straight from the fridge. You can cook as many eggs as you like at one time, but be careful of wedging eggs too firmly against one another or stacking eggs on top of each other since these can cause eggs to crack.

Bring the pot up to pressure: Close the lid on the pressure cooker and make sure the steam valve is set to the "sealed" position. Set the pressure to high and set the timer for 4 minutes for electric pressure cookers (3 minutes for stovetop).
The pressure cooker will take 5 to 10 minutes to come to full pressure and then being cooking. Cooking time begins once the cooker has come to pressure.

Let the pressure release naturally for 5 minutes. After cooking is done, let the pressure cooker sit for 5 minutes with the lid on and the steam vent "sealed" to allow steam to begin releasing naturally. (If you're using a stovetop pressure cooker, remove it from heat.)

Quick-release the remaining pressure: After 5 minutes of natural release, flip the steam valve to "venting" and quick-release any remaining pressure.

Cool the eggs. Transfer the eggs to a bowl of cold water to cool (add ice for more rapid cooling, but ice isn't necessarily for making easy-peel eggs). Change out the water as it warms until the eggs are cool, then refrigerate the eggs until needed.

How to make Instant Pot Easy-Peel Hard Boiled Eggs

It's not a party without deviled eggs! Deviled eggs are a classic for all kinds of gatherings, whether it's an Easter brunch or a summer picnic or just because.

Steam the eggs:  (See how to steam hard boiled eggs.) Fill a saucepan with an inch of water and insert a steamer basket. Bring the water to a boil and place the eggs in the steamer basket. (If you don't have a steamer basket, you can just place the eggs directly in about 3/4 inch of water.)
Cover the pan and let the eggs steam from the boiling water for 17 minutes for 12 large eggs, or 15 minutes for 6 large eggs. Reduce cooking time by a couple minutes if using regular size (not large) eggs. Then shock with cold water and peel.
Have a pressure cooker? You can also make easy to peel hard cooked eggs in a pressure cooker.

Prep the eggs: Peel the eggs. Using a sharp knife, slice each egg in half, lengthwise. Gently remove the yolk halves and place in a small mixing bowl. Arrange the egg white halves on a serving platter.

Make the filling: Using a fork, mash up the yolks and add mustard, mayonnaise, onion, tabasco, and a sprinkling of salt and pepper. Add more mayonnaise as necessary to get to the creamy consistency you want.

Pipe or spoon mixture into egg white halves: Pipe through a piping bag (star tip) or simply use a spoon to put the egg yolk mixture into the egg white halves. Sprinkle with paprika.

Add 1 inch of water to a large pot. Place steamer insert inside, cover, and bring to a boil over high heat. Add eggs to steamer basket, cover, and continue cooking, 6 minutes for soft-boiled eggs or 12 minutes for hard-boiled.

Serve immediately if serving hot. If serving cold, immediately place eggs in bowl of ice water and allow to cool for at least 15 minutes before peeling.
