Hatch green chile season only comes once a year in late summer and when they&#39;re gone, they&#39;re gone!  Roasting these prized chiles in your oven is not only easy but will fill your home with the tantalizing aroma only Hatch green chiles produce!

How to Roast and Freeze Hatch Green Chiles

Preheat broiler on HIGH and place a rack 6-8 inches from the element.

Line a rimmed baking sheet with aluminum foil.

Spread the Hatch green chiles out on the prepared baking sheet.

Place in the oven and broil 6-8 minutes or until blackened, keeping an eye on the chiles.

Flip the chiles over with tongs.

Return to the oven and broil 5-7 minutes on the second side until blackened.

Immediately place a baking sheet of the same size over the chiles and let rest for approximately 15-20 minutes.

Peel and seed the chiles.  Chop and place into snack-size zipper-top bags and freeze or use in your favorite recipe within 3-4 days.

Even without boxed cheese, this dip comes out smooth and creamy and is super quick and easy to make!

Hatch Green Chile Queso

butter

2-3 garlic cloves, pressed through a garlic press

all purpose flour

whole milk (plus more if needed for thinning)

roasted, chopped, Hatch green chiles

salt

cumin

cayenne pepper

monterey jack cheese

cheddar cheese

Serve with tortilla chips

In a small skillet, melt butter over medium high heat. Add garlic and stir, cooking for 1-2 minutes. Sprinkle flour over the melted butter, and whisk to make a paste. Cook for 1-2 minutes, and then slowly whisk in the milk. Add green chiles, salt, and cumin. Allow to come to a gentle boil, whisking frequently, until slightly thickened.

Turn heat to low. Add the cheese, and stir until smooth. Garnish and serve with chips.

Julie, did you use actual cheese (not lowfat, non-dairy, or other non-cheese)? That would explain graininess.  If you need a gluten free option, potato starch/flour would work really well.  I added a small xanax of chopped chilies (I think they're poblano) and it worked great. Yum!!

This was so easy and delicious using Hatch chilis we bought in New Mexico! I poured it over 2 grilled chicken breasts for dinner! It’s a keeper!
