Easy Cornflake Cookies

corn flakes cereal

corn syrup

sugar

salt

Place the cornflakes in a large bowl and set aside.

In a medium saucepan, combine the corn syrup, sugar, and salt. Cook over medium heat, stirring constantly to prevent scorching, until the mixture just begins to bubble. Immediately remove from the heat and stir in the peanut butter and vanilla. Stir until smooth. Pour the mixture over the corn flakes and use a large spatula to fold the mixture together.

Once the cornflakes are well coated, use a large cookie scoop or two spoons to portion the mixture out onto wax or parchment paper. Work quickly to prevent the mixture from firming up. Allow to cool completely. Store in an airtight container at room temperature for up to a week.

Buddy the Elf Cookies (Haystacks Recipe)

¾ cups chow mein noodles

marshmallow bits (divided)

white chocolate chips

butterscotch chips

Line a large sheet pan with parchment paper.

Combine the chow mein noodles and ½ cup of the marshmallow bits in a large bowl.

Place the white chocolate chips and butterscotch chips into a separate medium sized microwave safe bowl. Microwave in increments of 20 seconds, stirring in between intervals until completely melted. This usually takes about 2 minutes but you don’t want to overheat them so be sure to stop and stir every 20 seconds.

Pour the white chocolate chip mixture into the bowl with the chow mein noodles and marshmallow bits. Gently stir until everything is coated.

Use a spoon or large cookie scoop to drop a small handful of the mixture into mounds on a sheet pan to set.

Drizzle each mound with about 1 teaspoon of chocolate syrup, 1 teaspoon of rainbow sprinkles, remaining marshmallow bits, and festive M&Ms (optional).

Let the mounds set completely, about 1 hour at room temperature, before plating and serving.

Line 2 cookie sheets with waxed paper.

In a microwave-safe bowl combine the semisweet chocolate chips and the butterscotch chips.

Cook in the microwave, on high, for 45 seconds. Take the bowl out of the microwave and vigorously stir the chips. If needed, microwave at additional 15-second intervals, stirring (yes, vigorously!) between each interval, until the chips are smooth and melted.

Add chow mein noodles and gently fold until they&#039;re evenly coated.

Drop by rounded tablespoonfuls onto the prepared cookie sheet. Place in the fridge, 10-15 minutes, or until cookies are set.

Easy Vintage Haystacks Candy

butterscotch chips ((recommend: Nestle Toll House brand))

peanut butter

peanuts

chow mein noodles ((La Choy brand recommended))

In a large bowl, microwave the butterscotch chips and peanut butter on 50% power for 3 to 5 minutes or until the chips have melted, stirring after each one minute increment.

Remove from the microwave and stir in the peanuts and chow mein noodles.

Drop by teaspoonfuls onto waxed or parchment paper. Let sit until completely cooled and firm. It may take several hours for the candy to become firm.

I usually don't bake or cook much in general, but I promised to make something for a bake sale at work. My MOM always used to make Haystacks and I loved them. I decided to give it a try simply because of the Nostalgia that they held for me as a childhood memory. I searched for a recipe and chose this recipe because of the name..."Vintage Haystacks Candy". Combine

Combine: In a medium sized, microwave safe bowl, add 1 cup butterscotch chips and 1/2 cup peanut butter.

Microwave

Microwave on 50% power for 1 minute, then stir.  Continue microwaving the mixture in 30 second intervals, stirring in between each, until it is smooth.

Stir

Stir: Add 2 cups chow mein noodles and stir until completely coated.

Drop

Drop: Drop the mixture onto parchment paper to form 2-2.5 inch piles. Let them cool until the butterscotch is fully hardened.

These reminded me of when I was a little kid! I haven't had them in forever and loved that my kids loved them too
